It's been 6 weeks since I started taking my magic beans and I am blown away by how great I am feeling. I have 3 kids with sensory issues, work full time, exercise daily and was struggling to keep up. I was in bed by 8 pm and needed a sleep on the weekend to function. I am awake through the night at least once and awake by 5 am. I am now feeling full of energy and don't crash in the evenings and I have not had a nap on the weekends for over a month. My mood has improved and despite life being ridiculously hectic I am firing on all cylinders. I will be honest I was very skeptical about what eating whole fruit/veg/berries could do but I was tired and run down and needing some help. The proof is in the eating and the results. TASTY TUESDAY This week we are going with another breakfast/snack suggestion! These oatmeal breakfast cookies are literally the easiest cookies you will ever make! All you need are 3 easy ingredients and 15 minutes later youโ€™ll have a delicious warm and healthy breakfast snack to go. 5 minutes of prep and 15 minutes to cook! Makes 12 Cookies. Directions: 1. Preheat oven to 175โ„ƒ. 2. Mash bananas in a medium bowl with fork. 3. Add 1 Cup Quick Oats and stir well. 4. Add 1 tsp Cinnamon and stir. 5. Place rounded tablespoons onto greased baking sheet 6. Bake for 15-20 minutes. 7. Enjoy! TASTY TUESDAY This week we are continuing with the desserts! An easy, no fuss, individually portioned Oatmeal Apple Crumble! 30 minutes or less and makes two servings. This recipe is super easy to double up though! Instant oatmeal can be a lifesaver on busy mornings, but itโ€™s also great when you want to throw together a quick dessert! With just two more ingredients, this pantry staple is transformed into a hot, comforting fruit crumble. Directions: 1. Cut the butter into small pieces straight from the fridge, then use your fingers to incorporate the butter into the instant oatmeal, smushing them together until everything sticks together. 2. Use the mixture to top two (1-cup) servings of chopped fresh fruit of your choice. 3. Bake in a 190C oven until well browned, approx. 15 to 20 minutes. 4. Let them sit for 5 minutes to cool slightly and then enjoy! Hints & Tips: โ— You can use any flavour of instant oatmeal. If youโ€™ve only got a plain variety, add a couple teaspoons of sugar and a dash of cinnamon. โ— You can use any fruit you choose, however, weโ€™d suggest apples or pears in the winter or stone fruits come summertime. โ— Watch the crumbles closely as they bake โ€” they can go from golden brown to burned in minutes. โ— Top with your favourite fruit and a dollop of whipped cream, or for a healthier alternative Greek yoghurt.
