A quick batch of huckleberry jam! 1 lbs huckleberries; 1/4 cup cane sugar; 2 tsp fresh lemon juice. Place all in pan or copper jam kettle. Bring to simmer. Stir. Mash with potato masher. Bring to boil and stir-cook until thick, 5 to 7 minutes. Makes 2 cups.
