When it comes to chinese food, Lo Mein is one of my all-time favorite dishes 🤤 it tastes INSANE, is the easiest thing to cook in the world and it’s pretty much super healthy (well... at least in my world 😅✌️😜). I usually make it with snow peas and fresh spinach leaves but I couldn’t find any in the market 😭 so i switch it up a bit and the result was D-I-V-I-N-E 😍 🤤

INGREDIENTS
•250g. dry ramen noodles

•2 tbsp sesame oil
•3 fresh onions (separate the white part from the green one)
•2 garlic cloves
•2 tsp fresh ginger (minced)
•1 chili (minced)
•2 handful of fresh mushrooms
•1 red pepper
•1 yellow pepper
•3-4 carrots
•1 broccoli

SAUCE
•1/2 cup soy sauce (mild)
•1 tsp sugar •1 tbsp sesame oil

•1 tbsp sesame seeds
METHOD
1. Cook the noodles as described on the package. Dry and set aside.
2. Combine all the ingredients of the sauce in a jar and set aside.
3. Chop the vegetables in tiny slices and set aside.
4. Heat a wok over high heat. Add the oil, the ginger, the white part pf the onions, the chili and saute for 1-2 minutes.
5. Add the vegetables and cook 5 minutes, then stir in the noodles and the sauce and cook for another 3-4 minutes (the vegetables should still be crunchy!).
6. Top with the green part of the onions and the sesame seeds.
7. Enjoy ❤️
