Millets with carrot-beans sambar and potato curry for my lunch. A very simple and quick lunch for my lazy Saturday There is no compromise in the taste with millets as with white rice. With lots of health benefits( high in fibre, protein, Vitamin B), it is a very good alternative. Nothing can beat a home made lunch in this rainy weather 😁 For Millets - Sambar 1) Soaked Millets and toor dal for 15 mins 2) Sauteed onion, garlic. Then added tomatoes and cooked till they are pulpy. Added 2tsp tamrind water at this stage. 3) Added carrots, beans and sauteed for 2 mins. 4) Then added sambar powder, salt and cooked for 2 mins. 5) Added Millets, dal and water; 1:3 Millets to water ratio. 6) Pressure cooked for 3 whistles. And let the steam go off naturally. For potato curry 1) Boiled the potatoes separately. 2) Tempered very little oil (I use non stick pan for fry, so I try to add less oil wherever possible), mustard. 3) Then added long sliced onions. 4) Once cooked added sambar powder, turmeric powder, chilli powder and salt. Dosa and Tomato-Corainder chutney along with grapes for my dinner. Finally home food after a long time πŸ˜… For the chutney I followed this, 1) Tempered oil, mustard, 2 tsp channa dal, curry leaves, 2 kashmiri chillies, curry leaves, pea sized tamrind and hing. 2) Then added 2 big tomatoes, salt and cooked them till they got pulpy. 3) Then added a good bunch of corainder leaves and cooked for a minute. (Adding the corainder leaves at the end gives a different taste to the chutney) 4) Cooled the mix and grinded it. Add water if needed. Starting my day with honey lime tea ! Was introduced to this tea in Singapore and I've been having it regularly. Honey lime tea helps in detoxifying our body, replenishes energy levels, provides good immunity and aids in weight loss. This is how I prepare - 1) Boil water with a tea packet ( I use Lipton tea ) 2) Then mix 1-1.5 tsps of honey, cut and squeeze two limes ( I get limes in Singapore - can use normal lemons as well ) and add the limes as well it in the hot tea water. I'm glad habit of drinking this in the morning has stuck with me. Tomato rice with potato fry for my lunch box. Made this tasty thakkali sadam following @malathy.ajay recipe - In generous oil temper mustard, chana dal, heavy dose of ginger, lots of green chillies(no other spice), curry leaves, asafoetida and onions. When they get Sauted very well, add chopped tomatoes, salt and turmeric and cook in low flame till oil separates. Mix in cooked rice. Add coriander leaves at the end. For potato fry - Tempered very less oil, mustard fried potatoes 5 mins. Chinna vengayam - capsicum sambar with Millets (OPOS), Kathrika fry (Brinjal) for my lunch box. Such a comfort food πŸ˜… Amidst lots of work, made this quick lunch because I started craving for home food. For millets sambar 1) Soaked the millets, toor dal for 30 mins. 2) Fried small onions, capsicum in a pressure cooker. 3) Then pressure cooked them with millets, toordal with 1:3 water ratio for 3 whistles in low flame since I wanted it to be mushy. 4) After letting out the pressure, added tomatoes, tamrind pulp, sambar powder, salt and let it boil for 5-7 mins. 5) Garnished with corainder leaves at the end. Kathrika fry - Tempered oil with mustard. Then added brinjal and fried them. Millets veg briyani ( Varagu briyani ) with onion raita for my lunch. I had been thinking to use millets for a long time and finally started today. I didn't find any compromise in taste unlike the other cereals and it tasted really good. It has long list of health benefits right from being 1) High in fibre, protein 2) Rich in B vitamins - good source of antioxidants 3) Aids in weight loss 4) Helps to decrease high BP 5) Helps to control diabetes For cooking the briyani - I followed the usual briyani recipe with a water ratio of 1:1.5 for millets and cooked in low flame with pressure for 10 minutes. And released the pressure naturally. Quinoa Veg Fried Rice and Tandoori cauliflower for my lunchbox. I have started making it a habit to replace rice with quinoa, atleast once a week. Very good alternative for white rice as it has 15 times less carbs than rice and good amount of fibre as well as proteins. Added 1 : 4 , quinoa : water ratio, and cooked in low flame. The grains were cooked perfectly using this method. It didn't overcook them. Grilled veg hummus sandwich, Along in sides with carrots and hummus. I was thinking to spice up my tuesday by making a different sandwich and thought why not with hummus.
