Slow Cooker Oatmeal. A super easy meal prep that will give you a nice bowl of comforting oatmeal every morning. You MUST use Steel Cut Oats in this recipe or you will end up with a soupy mess๐Ÿ’š. . . . . Ingredients:. 2 cups uncooked Steel cut oats (regular oats will NOT work) 2 cups chopped apples (optional) 5 cups Coconut or Almond milk 1 cup water 1 tablespoon pure vanilla extract 2_3 tablespoons cinnamon 1/2 teaspoon nutmeg 1/4 teaspoon allspice (optional). . . Directions:. . . Combine oats and seasonings in a bowl and mix well and then add to the slow cooker Next add the apples. Mix the remaining ingredients in a bowl and then pour into slow cooker Set the slow cooker on medium and allow to cook for 3-4 hours. . . If your slow cooker doesn't have a medium setting use low and increase the cooking time until oats are soft. . IMPORTANT*. DO not stir this recipe as it is cooking. Just allow it to cook undisturbed. IF you want to slice it like I did, wait until it has cooled enough to hold together otherwise you can just scoop it out with a spoon . Tofu & Veggies with Spicy Italian Dressing. . . For those that asked, this is the Tofu recipe from my IG story over the weekend๐Ÿ˜Š. . . . I think this tastes even better the second day. I also make a lot so I have lunches/dinners for a few days. . . . You can choose your favorite veggies to, anything goes. . . . . Here's what I used: Cherry Tomatoes Artichoke Hearts Green Onions Green Beans Green Olives Broccoli Carrots Tofu. . . Directions: Steam veggies that need it, chop everything how you like, mix together, add favorite vegan dressing (I used homemade Spicy Italian). . . Cut Tofu into cubes, cook them in a hot skillet with a little Italian dressing and cook to desired firmness. Allow to cool. Gently mix everything together and serve by itself, on top of pasta, rice, quinoa or potatoes. #ahimsadiet

Day 26 of the #exhaustedtoempowhered challenge with @kacie_guidedbygrace. "Try that new healthy meal you've been wanting to try cooking". I was in New Jersey today performing with my band and didn't get home until 8pm so today wasn't the day to try cooking anything new. Just a fast meal of veggie burgers, roasted potatoes, chickpea salad with lima beans, carrots, and crasins, and a regular salad with mesclun greens, radishes, carrots, and almonds. I eat healthy 98%of the time. I've been vegan for two years. Yes I'm healthy. Yes I get enough protein for how much I exercise. I've suffered from endometriosis since I was 11. Being vegan has "cured" me 98% from symptoms. Even before we were vegan we always eat healthy in my house. Meals were always homemade from scratch. Family ate dinner together every night. No packaged or processed food in my house. We make our bread, pasta, sauces, dressings, kombacha, cider, kim che, sauerkraut, among other things from scratch. We make green shakes everyday. Most of our vegetables come from our garden which takes up most of our backyard. What we don't grow we get from local farmers at the farmers market. We also "hunt" for wild mushrooms in the woods. Oven Roasted Beets & Carrots. An easy veggie meal prep idea and so yummy. Ingredients: 3 pounds of beets, peeled & chopped 2 pounds of carrots, peeled & chopped 1 teaspoon each salt & pepper A few tablespoons your preferred oil 3 tablespoons fresh chopped rosemary (optional) Directions: Preheat oven to 400F Place chopped beets & carrots in a bowl and drizzle with coconut oil and mix to coat evenly Add seasonings and mix to coat evenly Pour onto a large baking pan lined with parchment paper Bake until tender about 30-40 minutes Thanks to @wholefoodshamptonroads for these beautiful ingredientsโค #ahimsadiet at Whole Foods Market

Tofu 'Egg-less' Salad Ingredients: 1 block Firm Tofu 2-3 tablespoons Vegan Mayo 2-3 tablespoons Dijon mustard 1/4 teaspoon apple cider vinegar 1/2 teaspoon paprika 1/2 teaspoon turmeric powder 1 tablespoon fresh or dried dill A few leaves of flat leaf parsley Red onion chopped (as much as you like) Celery chopped (as much as you like) Salt & pepper to taste Cayenne pepper powder (If you like spicy) Directions: Drain tofu and mash in bowl with fork Mix in remaining ingredients.

Hellooooo Healthy Homemade Raw Protein Bars I make these ALL the time and they are never the same because pretty much ANYTHING GOES, as long as you have the consistency right you can add or omit whichever ingredients you like. Ingredients: 4 bananas mashed (I threw mine in the blender) you could use pumpkin puree or cooked sweet potatoes 2/3 cup protein powder (I used mocha) OR sub with 2/3 cup oat flour (just grind dry oatmeal in a blender) 3/4 cup Pumpkin Seeds 1/2 cup Brazil Nuts, chopped 1/4 cup Chia Seeds 1/4 cup Hemp Hearts 1/2 cup Shredded Coconut 1/2 cup Sunflower Seeds 1/2 cup Chocolate Chips @enjoylife 2.5 cups Old Fashioned Oats OR enough to make it thick enough to either roll out flat or toll into truffles. I don't use exact measurements on everything, I just add until they look/taste good. Directions: Add bananas and protein powder to blender and mix until no lumps remain. Pour mixture into large mixing bowl and start adding remaining ingredients mixing with a large spoon. Line a flat baking pan with parchment paper or foil (DO NOT SKIP THIS STEP or bars will stick) place in freezer until hardened. Remove from freezer and allow to.dlightly melt enough to cut with a knife. I used Brazil Nuts to add natural Selenium which is very important for proper Thyroid functioning. Optional: To melt chocolate, just add some chocolate chips with a touch of coconut oil to thin out the chocolate a little. Just drizzle on ๐Ÿ˜Š

Trying to get as many colors as I can into each meal now that I'm only eating one a day! I've decided to do a little experiment with intermittent fasting as a way to control stress and anxiety surrounding eating, as well as trim excess weight while maintaining lean muscle mass. Disclaimer: I am not doing this because I believe I am fat and need to lose weight. I have finally come to a place where I know that no matter what I look like, I have value as a human. I'm doing this mostly because I've put sport climbing on the back burner this past year and as a result, have lost a significant amount of upper body and grip strength and am climbing several grades lower than I was at my peak. I also want to advance my yoga and running practices and am on a mission to find a diet that suits my lifestyle. There isn't a ton of solid scientific evidence to support this, but there's not a ton of sound scientific evidence to support any type of diet over another (apart from the obvious high sugar/processed foods/etc being bad, fruits and veggies being good). So I'm doing some irl experimenting and learning to listen to what my unique body needs. I'll let you all know what I discover! Oven baked Tempeh 1 block Tempeh Favorite seasonings (I used dried Italian seasoning blend this time) Salt & Pepper (if seasoning blend is natural salt free) 2 tablespoons favorite oil Preheat oven to 350F Line baking pan with parchment paper Cut Tempeh into 1 inch squares Coat with oil and seasoning Place Tempeh on pan in single layer Bake for 15 minutes and then flip Tempeh to other side and bake for 10-15 minutes or until slightly brown. *****************************************If you have time I think Tempeh is better if you lightly steam it for about 5 min before baking BUT it is not necessary ๐Ÿ˜˜ #ahimsadiet #teamconsciousmuscle

Korean BBQ Tofu & Broccoli I just CANNOT get enough of this. I eat this several times a week. Vegan dinner in under 30 minutes. 100% better than any take out from a restaurant thanks to @organicvillefoods Korean BBQ sauce. Ingredients: Tofu, I use Super Firm Fresh broccoli @organicvillefoods Korean BBQ or your favorite flavor A little of your favorite oil. Directions: Steam broccoli florets. Open tofu and drain water and cut into cubes. Heat a touch of oil in a large skillet and add tofu cubes. Cook tofu to your preferred consistency. Add broccoli florets. Add enough @organicvillefoods sauce to evenly coat tofu & broccoli. Serve over rice or eat as is. #ahimsadiet

Ingredients: 18 fresh Medjool dates 1 teaspoons of vanilla extract 1/2 teaspoon of sea salt (I used pink sea salt) 1 tablespoon Coconut Oil 3 tablespoons almond butter (I used @justins Vanilla Almond Butter) 1 tablespoon maple syrup Espresso Sea Salt OR sprinkles(optional) Chocolate Coating Ingredients: 3/4 cup vegan chocolate chips 1 teaspoon coconut oil Directions: Bring about 5 cups of water to boil then remove from heat and place dates into water to soak for about 10 minutes. Drain water and when dates have cooled enough to touch remove the pits from the dates. Place dates in blender and process until completely smooth and then add all of the ingredients (except for chocolate coating) and blend until smooth and creamy. Scrape out the caramel and place in a container in the freezer for several hours until slightly firm Once the caramel is firm then melt chocolate chips and coconut oil together. Scoop out caramel into your preferred size and dip into chocolate mixture to coat evenly and then place on a plate lined with parchment paper and sprinkle with a little espresso sea salt or candy sprinkles and then place into freezer long enough to allow the chocolate coating to harden. Store any leftovers in the refrigerator or freezer in a covered container. #ahimsadiet at Whole Foods Market

Easy homemade granola You don't have to use the same ingredients I did. Just start with the first three ingredients as a base and add your favorites. Have fun with this recipe, make it your own. Ingredients: 3 cups old fashion oats 3 tablespoons maple syrup 2 tablespoons coconut oil or melted nut butter 1/2 cup sunflower seeds 1/2 cup Brazil nuts, crushed (natural selenium source) 1/2 cup dried cherries 1/2 teaspoon sea salt 1/2 cup coconut flakes Preheat the oven to 300F. Mix together all ingredients in a bowl and mix well, I used a wooden spoon coated with coconut oil Pour onto a baking pan lined with parchment paper or a silicon mat. Bake for 10-15 minutes Allow to cool completely before storing. I store mine in glass mason jars. #TeamConsciousMuscle

Meal 4 today........Tofu Maca Protein Pudding because I am a creature of habit and I LOVE this protein packed meal. Ingredients: 1 block silken Tofu 1/3 cup protein powder (I use Mocha flavor Vega One Sport Performance) 2 teaspoons each of chia seeds, ground flax seed, hemp hearts (these are all optional) 1 tablespoon cacao powder (optional) 1 tablespoons maca powder (optional) Directions: Place everything in blender and combine. Top with your favorites I used hemp hearts, Brazil nuts and 1 cup granola from @purely_elizabeth NOTES: 1) Adding chia seeds will make this a thicker pudding consistency. 2) Adding a banana is yummy too. 3) You can add maple syrup if it is not sweet enough for you. #ahimsadiet #teamconsciousmuscle #imstarving

Coffee Infused Protein Power Bites When you love coffee or want a little kick from your snack, this is the perfect recipe. 4 bananas mashed (I threw mine in the blender) you could use pumpkin puree or cooked sweet potatoes 2/3 cup protein powder (I used mocha) OR sub with 2/3 cup oat flour (just grind dry oatmeal in a blender) 1-2 tablespoons instant espresso (optional) 3/4 cup Pumpkin Seeds 1/2 cup Walnuts 1/4 cup Chia Seeds 1/4 cup Hemp Hearts 1/2 cup Shredded Coconut 1/2 cup Chocolate Chips @enjoylife 2.5 cups Old Fashioned Oats ( enough to make it thick enough to roll into balls) I don't use exact measurements on everything, I just add until they look/taste good. You can also omit or add your preferred mix ins. Just roll into desired size, place in freezer for about 20 minutes. Optional: Remove and coat in melted chocolate and sprinkle with shredded coconut. To melt chocolate to coat, just add some chocolate chips with a touch of coconut oil to thin out the chocolate a little. Dip in chocolate and sprinkle on some shredded coconut or favorite topping and place back in freezer for a few minutes to harden the coating.

Avocado Fries Warm avocado is quite posdibly my new favorite food, they turned out so creamy, crispy and yummy. Ingredients: 1 large avocado 1 cup shredded unsweetened coconut OR Panko breadcrumbs Salt & Pepper to taste Directions: Preheat oven to 400F. Line cookie sheet with parchment paper. Fill a small bowl with water Place shredded coconut ir panko breadcrumbs in another bowl. Slice avocado in half and remove pit. Carefully remove skin and cut each half into four pieces. Dip each piece of avocado in the water. Tgeb, dip each piece of avocado in coconut to coat evenly with shredded coconut. Place each piece of avocado on parchment paper and bake for 20 minutes or until slightly crispy. #ahimsadiet

Avocado Fudgsicles A delicious yummy healthy treat that everyone will enjoy. If you don't have popsicle molds just use silicone or paper muffin forms. Ingredients: 3-4 Avocados 2 Tablespoons Cacao powder (you can use more or less depending on how chocolatey you like) 1-2 Tablespoons Maple Syrup 1 cup vegan chocolate chips 1 tablespoon coconut oil Shredded Coconut & crushed Brazil Nuts for garnishing (or your faves) Spoon out avocado and mix in 2 tablespoons cacao powder and 1 tablespoons maple syrup and blend until smooth Pour into popsicle molds and freeze for 3-4 hours Once frozen, then melt chocolate chips and coconut oil in one bowl. Remove ice cream pops from freezer molds and coat with chocolate mixture. The coconut oil will harden almost instantly upon coming in contact with the cold ice cream. Sprinkle on coconut or chopped brazil nuts or favorite topping Enjoy right away or store in covered container in freezer.

Strawberry Protein Truffles 1/2 cup vanilla protein powder 2 tablespoons oat flour ( just grind dry oatmeal in a blender) 2-3 tablespoons finely shredded coconut 1/4 cup mashed fresh strawberries or favorite fruit For coating: 2/3 cup coconut butter, softened (can be found at Whole Foods or Amazon) 1 teaspoon coconut oil, melted Mix together all ingredients in a bowl and combine with a fork (much easier than a blender) Roll mixture into six balls and place in refrigerator for 15-20 minutes to harden. If mixture seems too dry add a little more mashed strawberries. Mix together coconut butter and coconut oil and coat each truffle.
