Black people are the only culture that every single other race can financially caplitaize on. We are the inspiration to most! Yes, we are trend starters, artist and entertainers. But that is more innate in our existence. More over than credited for we are scientists, activist, teachers, lawyers, inventors, bankers, gardeners, entrepreneurs, chefs, congress representatives, mentors/advisors, dietitians, garbage disposers, plumbers, aviators, nail technicians, estheticians, doctors, investors, physiologists, directors, warriors, professors, men and woman of honor, resilient, hardworking, patient, proud, tough, parents, grandparents, ancestors, friends, spouses, romantics, beautiful, magical, amazing! And we are LOVE, even to our own detriment. Now I can't let Black History Month pass with out honoring the most amazing Black Woman that I've had the pleasure of knowing. My Grandmother. Not only was she the most generous person I'd ever met. But she was the personification of class and wit. Could look at a stack of money and tell you the exact number, could encourage you and teach you a lesson at the same time, the most devoted mother to her children and anyone who needed it. My Grandmother, like many of the other ancestors we never got to ask all our questions to, guide and protect us everyday if we let them. So, whether you identify as Black, African American, Brown, Pickaninny, Indigounous, Muur/Moor, Afro Latino/a/x or what have you, just know that WE are that we ARE! ✊🏽💪🏽🤙🏽🌼🌻🍃☀️ I wish you a Month filled with Black joy, Self appreciation, The color yellow (and all the other colors we look damn good in), Peace, Real History not in textbooks, Pride, Financial literacy & Prosperity, and Legacy Building. The holiday shopping season has begun. We’ve all been inundated with Black Friday promotions. It’s easier now than ever before to buy and consume! From your couch. Delivered to your door.⁣⁣ ⁣⁣ The fact of the matter is that all these things come from somewhere. And nearly all do harm to our planet–when they are manufactured, transported to us, and ”thrown away.”⁣⁣ ⁣⁣ This is a problem. The pace of climate change continues to increase. Globally, we continue to fall short of the emissions goals we’ve created for ourselves. We consume too much stuff, without enough thought as to where it comes from and where it ends up.⁣⁣ ⁣⁣ As producers and consumers we *must* do better. The health and safety of humans and creatures on earth demands it. ⁣⁣ ⁣ To that end, Bread Alone is announcing (today, right now!) our commitment to becoming Climate Neutral Certified. This means we will reduce our carbon footprint where we can, and offset the rest. ⁣⁣ ⁣⁣ We’ve already taken a big first step with our 196kW solar array. 🌞 But the reality is that we must do much more, and much faster. Over the coming months we are completing a comprehensive carbon footprint audit for our business. We will create an action plan for immediate reductions, and we will offset the rest. ⁣⁣ ⁣⁣ Each year going forward, we will reduce where we can, and offset the rest. ⁣⁣⁣⁣ From One Leader to Another⁣⁣⁣⁣ ✊🏼 ⁣⁣⁣⁣ Bread Alone is delighted to share the news that Nels Leader has accepted the position of CEO. Nels is Founder Daniel Leader’s eldest son.⁣⁣⁣⁣ ⁣⁣⁣⁣ Nels grew up in the bakery, playing on flour bags and making change for customers. His first official job, at 12, was the Saturday clean-up shift, an early introduction to the gritty work of changing the world, one loaf at a time. After receiving his BA from Colby College, some years of consulting work, and then an MBA from NYU’s Stern School of Business, Nels decided to return to the family business 8 years ago. ⁣⁣⁣⁣ ⁣⁣ Since joining, Nels has worked with owners Dan and Sharon Burns-Leader to construct Bread Alone’s state-of-the-art organic production bakery outside Kingston, NY, and has helped build the incredible team to over 200 employees. Every day, this team mixes, forms, bakes, and distributes more than 15,000 loaves of organic bread, and serves thousands of customers through four retail locations.⁣⁣⁣⁣ ⁣⁣ Sharon, Dan, and Nels have also deepened Bread Alone's commitment to people and planet, using the business as their platform for change. This past spring, they officially commissioned a 196kW solar array on the roof of the bakery, and made a commitment to reach 100% renewable energy across the business no later than 2030.⁣⁣⁣⁣ 🌎 ⁣⁣⁣⁣ The trajectory of Bread Alone has been as organic as its breads. In fact, there wasn’t an exact plan when Dan founded Bread Alone in 1983. He said in his first book, “Sometimes you have to lose your mind, to come to your senses.” Dan visited organic farms and experienced the beauty of the land and of the farmers who nurtured it. Representative of the cyclical nature of the year, challah bread during the High Holidays is traditionally circular in shape. Our challah rounds (baked both with and without raisins) are made with locally-raised eggs and organic wheat, then baked by the sun. ☀️

I love my sun oven! I made this last minute banana bread and popped it in the sun oven while I drove to pick up my kids from school. I didn't have to worry it would burn while I was out and we came home to a perfect after school snack! A note from a sweet customer: ⁣ “My wife has a wheat allergy. I have been successfully making a spelt bread for her using yeast, but considering some recent flareups, she asked if I could make sourdough spelt instead. I gave it some considerable thought and effort, but the results weren't good. I thought perhaps my problem was my starter, and that I might be able to ask for help from your Lake Katrine bakery nearby and ask for some starter (like asking the neighbor for a cup of sugar). Your staff were all friendly, engaged, professional, and helpful, and I ended up talking with Angelo, who gave me some starter and talked with me for a few minutes about making bread. What an engaged and engaging young man, enormously knowledgeable, sharp and ever so helpful! And he told me you do indeed make sourdough spelt bread, so I bought a loaf. My wife was delighted, as she had been paying $16 for gummy health-food-store gluten-free bread. Your bread was so much better and $6 instead of $16." ⁣⁣❤️ ⁣⁣ Spelt (a high protein ancient grain) has a lower gluten content than wheat. Using sourdough breaks down that gluten even further, and helps produce a bread that is gentler on sensitive guts. Bonus: it’s mighty delicious. 🍞

Not only is our Baker’s Muffin a delicious treat, it’s also one of our many solutions for reducing food waste here at the bakery. Total win-win. 🙌🏼 We start by taking the leftover bits of dough that didn’t make it into our carefully shaped pastries. Those pieces are pressed together, rolled out, then gently tossed in sugar and spice. Just before they’re baked, we top them a healthy dose of natural cane sugar for a little extra crunch. 😍

Our 24-hour aged rye sourdough is made by hand and baked by the ☀️. Using organic whole rye flour from Small Valley Milling in PA, this simple but deeply flavorful bread is one of our *favorites* here at the bakery.

A recent White Paper released by @gmofreeusa_official found glyphosate residue in 39 of 44 restaurant food samples. The research highlights a reality of too much of the food that we eat: it’s covered with herbicides and pesticides!⁣ ⁣ Why does this matter? Though the scientific community has released mixed results on the safety of glyphosate, some research has concluded that glyphosate probably causes cancer. In matters like this, we choose to err on the side of caution. ⁣ ⁣ Conventionally-grown, non-organic wheat is often sprayed with glyphosate immediately before harvest, resulting in high levels of residue, especially on whole grain products that contain the exterior bran of the grain. The result? What many believe to be a nutritious food may contain potentially dangerous levels of herbicide residue. ⁣ ⁣ Bottom line: A reliable way to avoid glyphosate residue in your food is to CHOOSE ORGANIC. The wheat that is used in our breads is tested by our milling partners to ensure that, consistent with its Organic Certification, it has not been sprayed with glyphosate. 🌾 ⁣ Because our health, your health, and the health of our planet are absolutely vital. ✌🏽

Each Earth Day here at the bakery, we re-commit to renewable energy. These commitments are critical. We must de-carbonize our economy to avoid the worst effects of climate change. We remain committed to 100% renewable energy by 2030, and plan to get there even sooner. This means more solar energy, adoption of battery-electric delivery vehicles, and energy-efficiency retrofits to our buildings. ⁣⁣ ⁣⁣ We must also change long-practiced habits that will be tough to break. ⁣⁣ ⁣⁣ Each day, we ship 10,000+ loaves wrapped in single-use, LPDE plastic bags, which end up in landfills. This problem is tricky. There’s no readily available alternative that offers the same function and convenience, but we’re pleased to announce our work with Clear View Bags to design one that’s 100% compostable. With the first set of compostable bags in our hands, we’ll be working over the coming months to test them.⁣⁣ ⁣⁣ In order for the bags to end up in compost bins and not landfills, we must break another bad habit: throwing away our food. ⁣⁣ ⁣⁣ 30-40% of our collective food is wasted. Rotting food in landfills releases methane, a powerful greenhouse gas. If food waste was its own country, it would be the 3rd largest greenhouse gas emitter behind China and the U.S. Think of all the resources that go into producing food, and imagine that over 30% of it is simply wasted.⁣⁣ ⁣⁣ At the bakery, we compost food scraps and leftover bread, but many loaves we provide to grocers end up in landfills. In the business, we call this ‘shrink,’ and expect that 5-25% of product that goes on shelves won’t sell and will end up in a dumpster.⁣⁣ ⁣⁣ This isn’t sustainable. Over the next year, we’ll embrace the challenge presented by this problem. We’ll work with grocers and with you, our customers, on solutions. ⁣⁣ ⁣⁣ 🌍⁣⁣✌🏽 ⁣⁣ Caring for the Earth requires our collective work. Some changes are big, bold, and easily prescribed, like building a solar array. Others, like eliminating single-use plastic bags and reducing bread ‘shrink,’ require new thinking and changes to entrenched habits.⁣⁣ ⁣⁣ We’re more committed than ever to embrace the challenge of feeding communities responsibly and in support of our planet.

Last night the International Panel on Climate Change @IPCC published the best available science on #GlobalWarming. The message is clear: The planet is warming and the consequences are terrifying. We must act much faster. We must act in ways that are unprecedented. Here at the bakery we are more motivated than ever to take action. Set aside any feeling that the task is too large. It is not. The tools and technology necessary to take on the climate crisis are available. We all have the ability to affect change. So let’s get to work! 💪 Here’s a summary of some of our recent work at the bakery, and our plans for the future: In the past year we have: Installed 664 solar panels on our roof that generate 196kW of solar power! Installed electric car charging stations at our Boiceville and Kingston locations. Implemented company-wide composting. Redirected the majority of our bread waste stream (shout out to @toastaleusa 🍻) We are currently planning: An additional 150kW of solar power for our parking lot. LED lighting retrofit for our production bakery. Carbon offset program for our deliveries. Comprehensive plan for carbon-neutral operations across all locations! Next week we’ll get into some details on our solar project, and our efforts to get to 100% renewable energy for the business. ✌🏼❤️☀️
