Hi from Portland! Currently on vacation here and loving every moment 😍 it’s so beautiful! Tbh I haven’t been eating “healthy” - as in I ate a sausage egg n cheese and a donut in addition to all of my other food yesterday. But you know what? I am enjoying the heck out of it. y’all voted that ya want the recipe so here it is!!!! ✨choc chip pb bars. ✨you guys these are so freaking good. whipped em up yesterday and served them last night and they were gone by this morning. 😋 friends approved. you will love- promise. 🤞💕made some more because I’m headed up to maine today and am gunna meet my boyfriends family. i of course want them to like me so naturally i am bringing baked goods hahah. 😂🤗 anyways, here’s the recipe: ingredients- 2 and 1/4 c almond flour, 1.5 c nut butter of choice (I used a blend of @wild_friends chocolate coconut pb + @traderjoes salted pb + @maranathanutbutters almond buttah ) 1 tsp vanilla, dash of cinnamon, 2-4 tbs grade a maple syrup (depending on how sweet u want it to be) + dash of non dairy milk as needed + chocolate chips (I used @enjoylifefoods the first time I made em and today used a crushed up @tazachocolate choc bar.) place all of the ingredients into a food processor or high powered blender and blend / pulse until it is all incorporated and batter like. add non dairy milk as needed to thin the batter or more almond flour to thicken if needed. you want the dough to be fudgey consistency. once all thoroughly incorporated, place into a bread tin lined w parchment paper. place into freezer for an hour or so. after an hour, cut into bars or squares. ENJOY 💋🤩 at Boston, Massachusetts

Omg you guys this homemade mango salsa tho 😍😍😍 yesterday was one of the best days!! Moulin Rouge was AMAZING (I love @aarontveit 💕) + got to hang w Julia and then my boyfriend and I cooked and baked up a storm after! 💯 We made homemade mango salsa (recipe: 3 mangoes + 2 small tomatoes + 1 red bell pepper + half a red onion + cilantro + juice of one lime + avocado) and served it atop @traderjoes salmon burgers, butter lettuce + a side of @sietefoods lime chips (obvi). it was SO GOOD. then we made a pb choc chip cookie dough dip inspired by @chocolatecoveredkatie and dipped GF graham crackers into it. yummmm!!!! definitely a fun time. oh also my appt doesn’t have chairs or a table yet so swipe to see our fine dining set up on da floor 😂💖happy thursday! headed to home to go to Boulder tmrw and I’m so excited !! 🤩🤗 at Boston, Massachusetts

LIMITING BELIEFS ⚡️ It’s not just about the labels we put on ourselves, but it's also about how we continue to live our lives limiting ourselves to what we BELIEVE to be true. 👇🏻 (You guessed it, I’m about to get real here). I got my first job at 13 because I knew my parents couldn't afford to give me what my school friends had. Today I work two to three jobs to pay for life choices I can’t afford right now. Some people call this driven, others irresponsible with money— but there's a bigger factor at play here. For me, the truth is, I'm terrified of money. I've always been scared of what it does to people. I've seen what it has done to my family and I never wanted to be like that. So I worked and worked and worked. I grew up in a divorced family that has always struggled with it and I’ve carried that toxicity with me since the first time I saw them fight... But for years as I’ve spent my money, because they struggled, my belief is that I too will always struggle. 👇🏻 So this is where the magic happened. I came to the realization (one of those Aha! moments) that my struggle with money is MY limiting belief! Now that I've recognized it and I’ve identified the root of its story, I can honestly say I feel more capable of changing it because I DO deserve financially stability. I DO deserve to take care of my family. And I DO deserve to sleep at night and not worry. 👏🏻 So today or sometime soon, I hope you can recognize what your limiting beliefs are too! Everyone’s will be different. It could be financial stability or it could be love. It could be the fear of failure or the fear of being judged. ✋🏻 So I’m asking you to ASK YOURSELF: “What are my limiting beliefs? Where do the beliefs and the story come from?! What can I say and what can I do to change it?” AND REPEAT AFTER ME: “I know this is my BELIEF but this is NOT my TRUTH. 🙏🏻 This is not my truth because this is why...” at Winnipeg, Manitoba

Vegetable and ricotta tart with cabbage and fennel salad. - I improvised this for lunch and it was so delicious! Pastry is one of the things I would never have allowed myself to have when I was caught up in diet culture which is silly really, it isn’t really so different nutritionally to a lot of the foods I would have allowed. Olive oil in a salad would have been out too! Finding freedom around food has definitely been a plus for getting a better variety of tasty foods, not feeling deprived and reducing stress and guilt around eating (and related periods of overeating). - This recipe is fresh and tasty, it has loads of veg and a good balance of carbs, protein and fat. - I used ready made puff pastry and cut into squares - I think it’s about 10cm by 10cm. Line a baking tray with paper and put the pastry on top. - Cook courgette, mushroom and leeks in a frying pan. Meanwhile mix ricotta with wholegrain mustard and a little parmesan. Pile the ricotta mixture onto the pastry, leaving about 1.5cm free around the edges. Top with the cooked vegetables and bake at about 220 degrees Celsius for 15 mins. - While it was baking I toasted a few pinenuts in the pan and made the side salad which is just chopped red cabbage and fennel tossed with olive oil and balsamic vinegar. - Serve the tarts topped with pinenuts alongside the salad. #healthyeating #sundaylunch #sunday #homecooking #pastry #foodguilt #selfcaresunday #haes #nondiet #dietitianeats #mentalhealth #balancenotclean #moderationnotdeprivation #dietitiansofinstagram #foodie #vegetarian #saladrecipe #easyrecipes

No food group is the enemy! Our brains and bodies need a mix of all foods in order to function properly.
