𝙃𝙊𝙉𝙀𝙔 𝙍𝙊𝘼𝙎𝙏𝙀𝘿 𝙎𝘼𝙇𝙈𝙊𝙉 with Quinoa, Edamame & Samphire. A beautifully simple, healthy dish, packed full of goodness & healthy Omega 3! Here’s the RECIPE: 1 x 250g pouch of pre cooked quinoa Juice of 1/2 lemon 1 tbsp finely chopped fresh dill 150g fresh/frozen edamame beans 70g samphire 2 x honey-roasted salmon fillets 1️⃣Heat the quinoa pouch according to pack instructions (approx 2 mins in a microwave) then tip into a large bowl and fluff up the grains with a fork. Stir in the lemon juice, chopped dill and season well. 2️⃣If the edamame beans are frozen, add to a pan of boiling water, with the samphire then cook for 2-3 minutes, and drain & refresh under cold water. Roughly chop the samphire. Stir the beans and samphire into the quinoa. 3️⃣Flake in the salmon. Top with more dill & serve with lemon wedges for squeezing over. Simple & delicious!!
