Hey guys!! My second meal! Ok don’t judge me for two reasons!!! Firstly I don’t believe in eating too much ramen🤷🏻‍♀️💘 and second I know I constantly use the same bowl ok😂😂 I’m a ramen fiend it’s my my favorite comfort food❤️ plus with shiritaki yam noodles, veggies and protein it’s not even bad for you so🤷🏻‍♀️ you can’t stop me!!😈 I poach a chicken thigh in chicken broth and a little water with powdered chicken bullion, pepper, onion powder, chili powder, a little curry powder and whole garlic cloves! If I have them I’ll use the extra chunks of leeks to flavor the ramen then toss them when it’s done. When the thigh is 8-10min away from being done I add whatever amount of cabbage I feel like and whatever other veggies. Tuesday’s breakfast! Well not really considering I got up at 7-8pm and ate a little past midnight 😅😅 but whatever it was freaking good!!!! You gotta try it😩💘 hell I didn’t even make it right and it was bomb! It’s keto biscuits and gravy!! It was supposed to be a sausage gravy but I had some ground beef I needed to use up sooo that’s what I used😅 was still good though I can’t wait to try it with actual pork sausage lol also I’m gonna be honest here I had two servings🙊😅 worth it! Sunday’s food!!😊 this almost looked decent but then my yolk burst when I was plating it😭😭💔rip. I had 4oz chorizo, 1oz cheddar and three sunny eggs over some romaine lettuce😋 good stuff! I would’ve liked to have some radishes with this but my fridge is bare you guys!! Tuesday’s food!!! Leftover ramen for breakfast, no shiritaki noodles but I added kimchi and mixed in one raw egg!!😊 so good! Dinner from yesterday!!! I have been craving spaghetti SO BAD for like a week and I don’t even know why😂😂 but I finally made some tofu shiritaki noodle spaghetti and it was really good!!🤲🏻 I mean for someone who’s literally never made their own meatballs anyway👀😅😅 I looked up recipes but I just kept missing things here and there so I kinda just clumped all the recipes together😂😂 they were a little dry and under seasoned tbh buuuut still low key proud that they weren’t awful and they didn’t fall apart!! I used 1lb of ground beef, one egg, 1/4cup Parmesan, 2tbsp mozzarella, 14g of spicy pork rinds(I only had spicy😅) oregano, pepper, salt, onion powder, parsley & thyme mixed up and separated into 9 balls and baked on a sheet for 17minutes on 400. I totally forgot to add garlic and was super annoyed at myself as soon as I had them in the oven🤦🏻‍♀️ I really like the tofu shiritaki because they are waaaaay less rubbery(in my opinion) what I do is rinse them till the smell goes away then just pop them in a bowl and microwave them for minute increments, and draining the water until there’s little to no water left to be drained. Careful because the bowl and steam is boiling!! This works better for me than just pan frying them from the start, totally drains the water from the noodles faster! Then for my spaghetti I sautéed some minced garlic in olive oil until fragrant and added the noodles let that cook a little longer then added 1/2 a cup of tomato sauce and more seasoning! What I ate while on break part 2!! #1 was keto bread from fatforweightloss.com toasted with half avocado spread and swiss, the other half avocado with a little olive oil and seasoning and round 2 of breakfast meatloaf!! I used the sage sausage mix this time instead of sweet Italian and I personally like this version better😁 the carbs came out the same for me but the protein was lower and fat higher🤷🏻‍♀️ NUTRITION(for entire meal): Net carb 10.5g protein 49.7g fat 126.1g #2 was McDonald’s lol but I’m posting it because the pico guacamole grilled chicken sandwich is really good👀 don’t judge me!! So I guess I’ll just post some of the “highlights” from my month break from social media because I did continue to take pictures of everything for accountability so now I just have all these pictures of food in my phone and nothing to do with them😅 soooo here ya go! I didn’t save the nutritional info for everything so only a couple things will have the carb, protein and fat info sorry guys😅 #1 was Cabbage egg drop soup with hotdogs and bacon!😍 I used a little too much water and not enough broth or this would have been perfect😋 it was flavored really nicely by the bacon! one can of chicken broth, one can water, 1tbsp butter, 1tbsp sesame oil & 5oz cabbage boiled with one piece of chopped bacon until the cabbage and bacon are cooked through then two hotdogs sliced, cook a couple more minutes then stir in two beaten eggs! I topped with 1oz mixed cheese and a tablespoon of olive oil😁 I ate this in two servings, it was super filling and I’m definitely making it again😋 NUTRITION(for entire soup recipe): Net carb 10.5g protein 35g fat 79g #2 was half a tube of ground chorizo with melted swiss, two eggs and a serving of supreme green bean casserole from low carb maven!! This was my morning today, it snowed all yesterday but I’m currently going to sleep in the afternoon and waking up around 9-11pm so I missed most of it. I normally wouldn’t waste so many carbs on a drink but I just absolutely had to sit on my porch with some hot chocolate💘🌬❄️ I used coconut milk so at least this had healthy fats and was super filling and satisfying. I’ll just lay off carbs for today🤷🏻‍♀️ it was worth it😋 I’ve been needing a little self care lately. I finally badgered my boyfriend into buying local eggs from healthy chicken keepers instead of gross store eggs i just couldn’t stand them anymore🤢😷 so I’m happy about that, that’ll help keep the rest of today low in carbs😊 I’m hoping to find some duck eggs around here too because I’ve never had them!! I went to an Asian market to get my tofu shiritaki noodles over the weekend and found some quail eggs(I’ve also never had those!) so now I really want to make carbonara but I can’t decide what noodles to use! I feel like with the shiritaki the sauce will just slide right off so I was thinking I’d give spaghetti squash a try? Maybe zoodles? I’m not sure🤷🏻‍♀️ also I can find lardons anywhere!! Dinner from Sunday! The cheesy bacon hotdogs were so good I had them again😅 two bacon dogs and 5oz of baked cabbage😁 really yummy I’m definitely addicted to those hotdogs.... so I didn’t post yesterday mainly because I fasted for 40hrs lol but my day was terrible. I woke up to my roommate and friend since elementary school sneaking out of our apartment with all of her belongings. So that stung. She hasn’t had a job for the past month and even when she did she didn’t buy her own food, she used our laundry money card to do laundry(like 4$ for one load) we didn’t ask her to pay her share of the internet or electricity bills ever, and despite asking she never put in the paperwork application to officially live with us and that could have gotten us in trouble had she been caught. We were super lenient and understanding, we let her be like 20-30 days late on rent every single time. And she never got up early so it was obvious she waited for my boyfriend to go to work and when I’d normally be asleep to pack all of her things and leave. She had only applied to one place the entire time she was unemployed and she waited till just a week ago to even do that. She had a mountain of excuses when I caught her and claimed she was going to tell me but it was all bullshit🤷🏻‍♀️ So sorry for the totally personal rant I’m just salty and sad about it tbh people are so shitty... don’t let people walk all over you, even friends. Boyfriend wanted little Cesar’s so I got their cruddy hot wings🤷🏻‍♀️ I tried to make them better by melting 2tbsp of butter and 1oz of mozzarella on them plus one avocado on the side! First meal of the day! Plus three Brussels sprouts I was cooking for my boyfriend lol. So I tried to make Ruled.me’s tuna melt avocado bites😅 I failed hahaha I tried rolling them into balls but they kept falling apart so I went with making 6 patties instead of 12 balls. I did everything the same except I used spicy pork rinds I put through the blender instead of almond powder and I let the mix sit in the fridge for 30minutes to chill🤷🏻‍♀️ I was hoping letting them sit in a fridge would help them stick together better but alas it was ineffective😅 maybe it’s because my tuna was canned with oil instead of water? First meal of the day! Keto ramen!! I used yam shiritaki noodles☺️ I really liked these yam noodles, they’re pretty close to aldente noodles in my opinion and they take on flavor really well, I think they’re stickier than the other shiritaki noodles😁 I only ate the egg, chicken thigh, cabbage and about half of the noodles and broth! then for my second meal I reheated the broth & noodles, boiled some cabbage in the broth, boiled a chicken thigh and another egg☺️ my broth is just a can of chicken broth, one can of water and two packets of ramen seasoning, a tablespoon and a half of butter, sesame oil, chili oil, peanut oil and chili powder💘 so freaking good! Unfortunately I’ve only found the yam shiritaki noodles at this Asian market like 40 minuets away😭 noooooo I’ll have to stock up next time. So today was really weird meal wise👀 yesterday I didn’t meet my protein count so today I was craving rotisserie chicken like all day lol so obviously that’s what I got for dinner(breakfast?) at like 7:30pm and I literally ate my entire protein count in one sitting😳😬 then for my second meal I was just craving a salad with dressing! So this is yesterday’s meal lol I haven’t even slept yet and it’s almost 8:30am😭😭 I’m so tired but I just can’t sleep send help🤕 I woke up at 4pm yesterday and I didn’t even get to eat until 12am last night because I was so busy yesterday! it sucked I was so hungry I was nauseous as hell, I hate it when that happens🙃 the only other thing I ate was 16pieces of pepperoni, 1oz cheddar, two tablespoons of sour cream and like maybe a cup of chopped Romain lettuce all mixed together👀 it was a desperation meal tbh but surprisingly not bad🤷🏻‍♀️ for my first meal yesterday I had a tuna zoodle casserole! Lunch today! Dinner! Buttery zoodles and chicken😋 I just had to have zoodles again💘 so yummy💖 I dried them with paper towels and let them air dry for like 30 minuets but they’re still watery😅 oh well they taste bomb they’re just not quite as photogenic. I baked another bone in chicken thigh in the oven with garlic salt, garlic powder, onion powder and a little cayenne while I attempted to dry out the zoodles👀 then when it was done I just cooked the zoodles in a pan with garlic salt, garlic powder, pepper and two tablespoons of butter and added the roughly chopped chicken thigh at the last second☺️ really easy and yummy💕 I love that you barely have to cook zoodles, they’re done in like 5 minuets! Super late lunch!!(I at at 3:30pm) No breakfast today! I did snack on a couple of pepperonis earlier🤷🏻‍♀️ I didn’t mean to eat so late but I had a craving for a cheese, chicken and avocado quesadilla👀 so I had to wait forever for the chicken to defrost😅 I could have just used the microwave but I swear thawing meat that way effects the taste👀 I baked a bone in chicken thigh with sesame and peanut oil, no seasoning! Dinner! I finally got to try the veggie spiralizer I got for Christmas!!😍 I made zoodles!! Dinner!🤤 tofu shirataki noodle ramen💘 I thought of this at the last minute when I was trying to figure out what to do with my leftover pork shoulder and oh my goooooood yesss😩 so good. I oven roasted one bunch of radishes sliced and seasoned with garlic salt, pepper, chili powder and onion powder. Then I sautéed 40g of yellow onion in butter and sesame oil and added a heaping tablespoon of chopped ginger and two teaspoons of minced garlic once the onions were nearly done. Then I seared 4oz of pork shoulder with a couple shiitake mushrooms, in the remaining butter seasoned with garlic salt, onion powder and chili powder. I added the pork, mushrooms, radishes, onions and garlic to two cups of canned chicken broth and cut a stalk of celery and one leek into big chunks and tossed them in. I added one tablespoon of sesame oil and one and a half tablespoon of chili oil then let simmer while I prepared the tofu noodles. I just rinsed them then pan fried out the moisture and added a teaspoon of sesame oil, chili oil and a little peanut oil at the end. I’m baaaaack!! Sorry for just kinda disappearing 😬 it wasn’t intentional at alllll so what happened was a long time childhood friend flew over here from Idaho to visit and we were just having a good time(I was still doing keto) so I forgot to post for one day but I had still been taking pictures so I was just going to post everything at once the next day. Then my friend really really wanted to drink mimosas with me and it had to be specifically mimosas because he’s extra as fuck😅 I agreed because life is short and I hadn’t seen him in an entire year and only had a week to see him before he’d be gone for another year. So whatever no big deal I’d drink the mimosas and get back on track but then that day after drinking the mimosas we had a huge falling out and he basically lost me and another childhood friend because he chose to be shitty. That's the last time I read on my phone before I finally fell asleep! Wth was up with that?? Insomnia is so weird👀 so now I'm probably gonna be up all night😭 RIP my sleep schedule. I swear nothing I post ever looks good 😂 I promise it tastes better than it looks! I just don't have the plating skills lol also I really need to get better about eating more veggies and greens, I keep saying it but I need to work harder and actually do it!💪🏻 no breakfast today and for lunch I had a big cup of beef bone broth with a tablespoon of butter😋 idk if that counts as a water/broth fast or what lol I wasn't really trying I just wanted some broth🤷🏻‍♀️ accidental fast woot!😂 not a big fast just 14hr 40min(I use an app to track how many hours since I last ate) but I'll take it😅 it does kinda suck trying to get all my macros in at dinner tbh I always end up being short then getting the urge to snack later in the night since I'm usually up until at least 1am.... just another thing on the list of things that I need to work on! Dinner! Dinner! I keep telling myself I need to eat more veggies and greens so I had myself 6 cups of spinach sautéed in 3tbsp of butter for dinner lol😅 this was another case of "I'm low on ingredients and need to use up whatever is in the fridge" sorry I'm boring 😂 spinach is good though!! Lunch! Lol if you can't tell, I really need to go shopping😂 I've been pretty low on ingredients the past week or so! It's Christmas time and we're on a pretty tight budget so I'm trying to just use up everything we have around before we go shopping😅 we don't even have any cheese or mayonnaise! No breakfast and no lunch today, kinda early dinner. Whoops totally slipped my mind to post last nights dinner!!🤦🏻‍♀️ I had 3 cups of spinach, two boiled eggs, a chopped pickle spear, 1oz of cheddar, the last 1/4 cup of dressing and 5 pieces of bacon!😁 No breakfast today, I drank a can of chicken broth for lunch and ate my first meal at 4pm. Brunch today😊 what I call a "pizza bowl" lol my boyfriend was eating a pizza pocket and it started making me wish I had one👀 this hit the spot!😋 1/2 cup rao's marinara sauce with a little garlic salt, 1/2 a tablespoon of butter, 16 pepperonis and 1oz Parmesan! Sorry for no posts yesterday!! It was my birthday and I was busy😊 ugh I feel old.... everyone keeps making fun of me for saying so but I do! I actually spent most of the day cleaning and organizing my apartment lol I didn't have any plans till 3 when my dad came for a visit for about a hour and a half then at 5 I had a couple friends over😊I thought about making a keto cake but I probably would have been the only person to eat any lol. I did manage to take pictures of what I ate yesterday so I figured I'll just post them now🤷🏻‍♀️ no breakfast, for lunch I had a hot spinach tuna dip with pork rinds! Not very pretty but hey as long as it tastes good lmao had an early birthday lunch and day out with a friend today. we went to Burger King because she wanted to try those spicy mac n' cheetoes things. Honestly I really liked the normal ones back before I did keto and I was a huge fan of spicy cheetoes so i had to resist temptation👀🤤 I ended up getting the bacon king jr. with no bun then I just got packets of mayo and mustard to add myself😁 I'm really grateful to food places that have a nutrition calculator on their website because it makes my life a thousand times easier😌 I like McDonald's calculator better but at least Burger King has one!! It was actually super crazy, I just remember! While we were in the drive through paying, some guy stormed into the Burger King and knocked over all the cups and started screaming about how he was going to "kick your ass" to the manager and yelling that his fries weren't fresh and he wanted new fries😳 the manager ended up calling the cops because the guy wouldn't leave! He did leave once the manager was talking to the operator but jeeze I guess he just really wanted those fries... he was leaning over the counter in the managers face and everything talking about his rights like??? Tomorrow is my birthday so a friend treated me to a sugar free strawberry Italian soda with heavy cream😋💝 so yummy! Lunch today!🤤 I woke up late and also starving lol also I realized I left a bad of shrimp in the fridge instead of the freezer😬 so I had to use them up today.
