Having a hard time preppin breakfast or a snack? Here's a quick idea! Place greek yogurt(or coconut for vegans) or overnight oats in a jar. Add 2 tbsp of your favourite ARA Chia Jam & top with nuts/seeds/coconut shavings, cover & place in the fridge. In all of these trendy #chiaseedpudding posts, no one tells you to have some floss nearby.. so hey, have some floss nearby.. this biz gets all stuck up in there!! But if chia need some motivation to get out of bed on this Monday morning, this is a fun and easy (like takes 4 minutes to make..) breakfast!! Lots of variations too, this is a peanut butter and jelly twist! Recipe below for the chia seed pudding and raspberry chia jelly! Chia seeds are extremely high in anti-oxidants, contain serious amounts of protein and fiber, so eat up! ⤵️ ~Chia Seed Pudding~ - 1 1/4 cup of milk (I used skim milk, can use almond, oat, soy, whatever) - 1/4 cup chia seeds - 1 tsp cinnamon (or more if you like cinnamon) - 2 tsp vanilla extract - 1 tbsp PB2 powdered peanut butter or just your favorite regular nut butter! Combine all ingredients in a jar or bowl, mix well, cover and let it sit for at least 4 hours or up overnight! Aka ready when you wake up! Mix in 1 nut butter in the morning, and to with your favorite fruit! ~Raspberry Chia Seed Jam~ - 2 cups of frozen or fresh raspberries -2 tbsp chia seeds - 1 tbsp lemon juice - 1 tbsp maple syrup (if you want it sweeter) Heat raspberries in sauce pan, stir until berries break down. Remove from heat. Then stir in chia seeds, lemon and maple. Let sit until cools and you got yourself some jam! at Dublin, Ireland

I am literally obsessed with loaf cakes and make a banana cake all too often. I am also unable to make just a bowl of cornflakes for brekkie so always looking for fun alternatives. Today I kind of transferred my protein pancake recipe into a loaf cake and got 4 nice slices from it (ate one warm before i could plate this up 🤣)The actual loaf has 35g protein and only 4g fat! I know what you guys are thinking. Like...does she eat anything else besides yogurt?! 🤣. What can I say, it's a daily part of my eating routine these days, I've really missed it!! Plus, it has great gut health benefits and helps WITH BLOATING. More on that later though, after I finish my "experiment". . Today I've got a 1/2 cup of @fage 2% plain Greek yogurt (3.5NC), aking with my homemade blueberry #chiaseedjam (recipe posted a few days ago), 1T almond butter, and a scattering of @knowfoods chocolate chips. For reference, a 1/2 of yogurt is quite a bit. It's at least as much as what they put in the individual containers of yogurt, and I usually only have 1/3 cup. This was a very satisfying brunch and was only 188 calories total. But let's talk carbs, what everyone cares about when it comes to yogurt, haahaaa. The nutrition label on the yogurt container DOESN'T ACCOUNT for the carbs that gets "digested" by the live bacteria during the fermentation process, of turning milk into yogurt. So while the Fage 2% says 7 carbs per cup, it's actually less than that. If you are still unsure, but really want yogurt back in your life, here's my advice. 1) Google and do some research, draw your own conclusions. 2) Many thrive on keto eating more than 20NC a day, that's not a firm limit! I consume 30-40NC a day and still lose weight. See, this is why I could never IF. Usually I don't eat breakfast and am ok to wait until 10:30 or 11 to eat (I wake up around 630), but today i woke up HUNGRY. So i went for my morning walk, came home and made coffee, and decided to just make food and ate at about 830. There was no way I would have WANTED to wait until 1030, because I was starting to feel crabby, LOL. And when I'm hungry I just get so distracted by it, and it's hard to focus on working, etc. I know SO MANY of you thrive on IF and just love it, but for me, it just feels like torture! I start obsessing over food and keep checking the time to see when I can start #eatingallthethings. Mentally, it just wasn't working for me! I wish it did though, because I know there are many health benefits involved. Anyways, some quick soft scrambled eggs with bell peppers and cheese, a little bacon, and my yogurt ❤❤. I topped it with my SF blueberry #chiaseedjam (the BEST sf jam I've had, ever!), hazelnuts, almonds, lily's chocolate chips, and some powdered stevia. Today I opted for the full-fat, plain Greek yogurt by @chobani. P.S. someone mentioned not wanting to try making the chia seed jam beside they don't like chia seeds. So, to me, this is different then say, chia pudding. You use far less in the jam, and since it gets heated and then cooled, they honestly just taste like the seeds in strawberry jam. 450 calories, 8NC, 33g fat, 31g protein. Made with pancake mix, my homemade strawberry chia seed jam, and @ripplefoods unsweetened vanilla. Quick and simple while you’re little one is down for a nap, or attached to you like Poppy was. 🤤✨ #ripplefoods . Strawberry Chia Seed Baked Donuts: makes 6 donuts * 1 cup quick pancake/waffle mix * 1 egg * 3/4 cup @ripplefoods unsweetened vanilla * 1 tablespoon melted butter * 1/4 teaspoon baking powder * Dash of sea salt * Cinnamon * 1-2 tablespoons homemade strawberry chia seed jam (recipe 10 photos back!) Toppings: * 1/4 cup coconut yogurt mixed with 1 tablespoon vanilla protein powder * Cashew butter * Strawberry chia seed jam * Cinnamon Directions: 1. Preheat oven to 425°F. Spray donut pan with nonstick cooking spray and set aside. 2. Combine dry ingredients in a medium size bowl then add wet ingredients. 3. Fill a large ziplock baggie with donut batter, trim a small hole in the corner of baggie, and fill donut pan with batter. 4. Bake for 7-9 minutes or until golden brown. 5. 🍓Sugar-free Chia Berry Jam🍇 I made some chia jam at that weekend with some strawberries that were on the way out, and added in some frozen raspberries. I used the following basic recipe: 🍓2 cups berries (I used raspberries & strawberries) 🍇2 tbs chia seeds 🍯2 tbs sweetener, optional, to suit your taste buds (e.g. honey, rice malt syrup, maple syrup, stevia etc) 🍇Dash of vanilla 🌊Splash of water Heat the ingredients in a saucepan for around 10mins until the mixture thickens. Use a masher to squash down the berries. Remove from heat and allow to cool. Then transfer to a jar and place in the fridge to set. Not only great on toast, but also delicious on porridge, overnight oats, cake, yogurt, granola etc..... Light Dinner. We were running errands all afternoon and had a late lunch around 3pm. So not super hungry, but wanted something to tide me over for the rest of the evening so I don't end up eating a full meal at 11pm😅. . Don't let the small bowl fool you, this was so filling and satisfying! I couldn't decide on yogurt or cottage cheese, so I had both 😅. I mixed in a little sweetener then topped with macadamia nuts, @knowfoods chocolate chips, and a little of my blueberry #chiaseedjam. So, so good!! Definitely doing this again. This all came to 288 calories, 7NC, 21g fat, 16g protein. If you miss yogurt or cottage cheese, go get some!! This was 1/4 cup full fat, plain @chobani greek yogurt mixed with 1/3 cup full fat @publix large curd cottage cheese. I do love a stack of pancakes... but honestly I'd rather have a spread of them... with a generous drizzle of peanut butter 😜 I like eating mini pancakes one by one because it's as if I'm eating more & I'm taking my time to savour the taste. Even when I make them into a stack, I literally just end up taking a piece down, spread enough pb + banana + berry-mango chia seed jam (for this case) on it, cut it, eat all of it, and then go onto the next piece. Just made this before bed time - Raspberry Chia seed jam, so simple I used just 4 ingredients - half a bag of frozen raspberries, a tbs of lemon juice, gently heated the raspberries and lemon juice to bubbling point in a pan and then stirred in 2 tbs of chia seeds and 2 tbs of The Vegan Protein Company Inulin Powder until it dissolved. Then I turned the heat off and transferred the jam to a jar where the chia seeds will continue to expand and ‘set’ the jam. The Inulin is made from ground chicory root and is very high in fibre and acts as a prebiotic feeding the healthy bacteria in our gut, our Inulin Powder is naturally sweet tasting but very low in calories so makes a great completely natural substitute for sugar. Perfect timing too, as I just ran out of SF jam and had a lot of blueberries in the fridge to use up!. . You can of course use a different fruit, the process is still the same. If you want to stretch if further and have it be less carbs, use a little more water and chia seeds. Here's what I did for today. 275g fresh blueberries 1 cup of water 2 packets of @truelemon CRYSTALIZED LEMON (<1 carb a packet) ---> OR <--- 2 wedges of fresh lemon juice 2.5T chia seeds Sweetener to taste Combine fruit, water and lemon into a pot, bring to a simmer and cook, uncovered, for about 7 minutes. Fruit should be broken down and look pretty thick. Add in the chia seed and stir well, simmer for 1 more minute. Take it off the heat, sweeten as desired, then pour into a mason jar. Cover the top with saran wrap, making it sure it is TOUCHING the jam. This will help prevent it from developing a "skin" as it cools. Um, if you don't have any @truelemon packets in cooking arsenal, you're missing out!! I don't always have fresh lemons or limes on hand (they make lemon, lime, grapefruit, and orange), so this is a great way to still incorporate that "fresh squeezed" flavor. I've used it in curries, to make lemonade, apple pie filling, and today I'm going to make blueberry chia seed jam! We have all these wonderful berries in the fridge that I don't want going to waste, plus I've been meaning to start making my own SF jam. FYI - if you want look for these at your grocery store, they are USUALLY near the SF sweeteners. Just BE CAREFUL and read the label, you want the one that is just "crystalized lemon" (or whatever flavor you're getting). It should have <1 carb per packet. Strawberry Chia Seed Jam: * 1 bag frozen strawberries * 2 tablespoon maple syrup * 2 tablespoons chia seeds Directions: * Place frozen strawberries in a medium size pot, cover, and turn heat on high. * Add maple syrup and chia seeds once the strawberries start to defrost. * Continue heat on high as the strawberries start to boil. Starting the day with toast topped with my homemade blueberry chia jam which I made on Friday. It's a really good way of using up blueberries and controlling the sweetness. It's so simple to make too. The chia seeds are a natural source of omega 3, protein and fibre. 😃 I don't use a recipe as I make it so much now that I just eyeball the recipe. But it's basically 1 small pack of blueberries added to around 2tbsp water, bring to a boil and then continue to cook on a medium heat until the blueberries soften. I then mash the blueberries and add in @thegroovyfoodcompany agave nectar (around 2tbsp) and 2 tbsp @aldiuk chia seeds. Then I leave it to cook for 10 mins on a low heat. Once cooked, leave to cool and add to a glass jar and pop in the fridge to thicken. You can also add lemon juice to the mix if you wish. #homemadejam #purenourishbylatoya

Had the most lovely breakfast this morning in the garden, had to share! High protein vegan 🌱 GF banana & walnut bread spread with @meridianfoods PB & homemade blueberry chia seed jam (recipe below 👇) . . . For the blueberry chia seed jam: 1 cup frozen blueberries 1/2 a cup water 2 tbsp chia seeds 1-2 tsp maple syrup/coconut sugar Add all ingredients to a saucepan. Simmer for 5 minutes stirring continuously (mash all the blueberries) then turn off the heat and leave to stand for 10 minutes ✨

The peanut butter seemed so sad and lonely on my toast, so I had to whip up some blueberry chia seed jam to keep it company. And let me tell you, it is GOOD company 🙌🏼 It’s only two ingredients, has no added sugar, takes about 5 minutes to make, and is much more nutritious than store bought jam. Blueberries are rich in anthocyanin, which gives them their antioxidant properties. Chia seeds add protein, fiber, and are a good source of omega-3s. It’s a win-win! . . . What you’ll need👉🏼 •1 c blueberries •2 T @mammachia chia seeds •water . . What you’ll do👉🏼 add the blueberries to a small sauce pan over medium heat. Once they start to soften, begin to mash the berries. I suggest leaving a fair amount of them whole. Then stir in the chia seeds and turn the heat down to low. One tablespoon at a time, add in some water, stirring frequently. Keep adding water until the consistency is thick, but not too thick. Remember the chia seeds will soak up the liquid and expand as it sits. I added about 6 tablespoons total. Remove from heat and store in the fridge over night. You can use this on toast, on a pb&j, mixed in yogurt, or any way you like. Enjoy 😋

Insta perfect? Maybe not... but tasty as hell? Oh yeah. Vegan stuffed French toast anyone? Ingredients:
French Toast:
1 Banana
1 tbsp Maple Syrup
200ml Plant Based Milk
1 tbsp Cornflour
Pinch Vanilla Powder
Pinch Cinnamon
4 slices Gluten Free Bread
Filling:
1 Banana
1/2 jar Cham
3 tbsp Peanut Butter
Oil for frying (we used coconut)
Method:
Mash the banana for the french toast and then combine with the maple syrup and milk.
Once combined, whisk in the cornflour, vanilla and cinnamon. This is your wet mixture.
Time to make the sandwich! On one slice spread the peanut butter and on the other spread the CHAM. Slice your banana and add banana slices before sticking together. (We suggest spreading both sides of the bread to help it stick together!)
Take a plate and pour half the wet mixture onto it. Place your sandwich on top to allow the wet mixture to soak in. Pour the rest of the mixture on the top layer. Allow to soak for ten minutes.
Melt a little oil in a frying pan on a medium-high heat. Cook your sandwich for ten minutes (5 minutes either side), before serving up and enjoying!

So I'm back to work today and having this before my over an hour commute but actually you know what...I haven't really got #postholidayblues today. . I think because my animal rescue volunteering was so different to anything I've ever done before, I genuinely feel like I've been away for like a month or something. Because I worked hard there and there was a kind of stable routine and timetable there, I felt like I didn't have to think and I could be truly #mindful and just 'be'. I honestly didn't think about work once and feel like it's really helped me recharge even though it wasn't a traditional relaxing holiday. There was something really satisying about physical work and in a way it's really put things in perspective so going to try and stress less about minor things. Well I say that now, let's see what happens an hour after I'm back in the office. . Anyway made #chiaseedjam for the first time and honestly can't believe I didn't do it sooner. This isn't a traditional version but a cheat's 3 minute version as I have to go to work 🤣. . Basically I just micrwaved a bowl of #homegrown #raspberries for 20 secs and then mashed with a tsp of @thegoodstufforganic #baobabpowder and 3 tbsps of Nature's Heart #chiaseeds and left for 10mins to absorb the juices and thicken up. Absolutely gorgeous spread on #glutenfreetoast . Didn't add any sweetener as the raspberry flavour is so intense but you could add a bit of coconut sugar or maple syrup.

In a saucepan heat water and fruit over medium-high heat. Mash fruit until it has the consistency you like. 2. Add remaining ingredients, stir to combine and heat for another 2-3 minutes. 3. Let cool. The longer it cools, the more the chia seeds have time to get to their gel like consistency.

Slow (early) Sundays ✨ Banana pancakes packed with oats & flax to support my milk flow & served with strawberry chia seed jam!. Chia Seed Jam: 2 cups fresh or frozen strawberries 2 tbsp of lemon juice Optional: lemon zest (I used a bit) 2 tbsp of sweetner (honey or maple syrup) 2-3 tbsp of chia seeds How to make: Add the fruit to a sauce pan, heat over medium heat until the fruit becomes syrupy (approx. 5-10mins). Mash the fruit with the back of a fork or potato masher until your desired consistency. Add in and mix the lemon and sweetener. Once mixed, remove from heat and add in chia seeds. Mix again and let stand for 10 minutes until the jam thickens. If you’d like thicker add more chia seeds, starting with a tea spoon at a time (I typically add more, especially with juicier fruits). If you’d like a smoother jam, add to a blender or use an immersion blender to get rid of the clumps. Transfer jam to a jar and once completely chilled place in fridge. Jam is something that is generally a no go for women with gestational diabetes as it causes rapid, high blood sugar levels. Let's look at why it causes a problem: Fruit is high in fructose (natural sugars in fruit). It is then cooked, meaning it is broken down and digested much faster than fruit in it's raw form, therefore turns into glucose in the bloodstream much faster and then it also has lots of sugar added to it when being cooked. Diabetic and low or no added sugar jams and preserves may be tolerated by some, but once again are high in carbs due to the amount of cooked fruit in them and many cause gastric upset due to the types of sweeteners added to them. The next problem with jam is what it's usually eaten with; carbs! We tend to spread it on bread or toast, add it to cereals like porridge or spread on scones or cakes. All of these things are high in carbs and so it's just sugar added to more sugar. This raw chia seed jam may not be tolerated by all, as it's still mashed fruit. However, if you are looking for a sweet blob of jam to add to your peanut butter on toast, yoghurt, or one of our well paired cake or pancake recipes, then this jam may be the answer you're looking for and is worth a try if you tolerate berries well. This jam can be made with any berries or rhubarb, so get out there and get picking! Berries are lower GI than many fruits and so are more tolerable. Strawberries, raspberries, blackberries, blackcurrants, red currants, cherries and gooseberries will all work well. I made mixed berry jam in the jar and strawberry jam in the ramekin. The second part that makes this jam more tolerable is the chia seeds! Chia seeds are powerful little seeds. They are packed with omega-3 fatty acids, protein, fibre and antioxidants, therefore they help pair the fruit. These funny little seeds also plump up and become gelatinous in liquid (similar to tapioca in texture), meaning they are great for puddings and to create a natural gelling agent in this jam.
