Yummy mini GF quiches that I’ve made to take to a Christmas party this afternoon 🤩❤️ These are a miniature version of my pumpkin, leek & spinach quiche I shared recently. I just put the mix into a well greased muffin tin instead of a quiche dish 👌 Recipe from my FB page: Ingredients: 3 free range eggs (room temp) 1 1/2 cups milk 3/4 cup good quality, full fat, grated cheese 1/2 cup gluten free self raising flour 1/2 leek, finely diced 2 cloves garlic, crushed 1 cup pumpkin, 2cm diced and roasted 2 handfuls of baby spinach, roughly chopped Method: Preheat oven to 200°C and grease a quiche dish with olive or coconut oil. Sauté the leek and garlic in a little oil or butter until soft. In a large bowl whisk your eggs, milk & flour together and then mix in your cheese, leek/garlic mix and spinach. Season with salt and pepper. Pour into your greased quiche dish or muffin tray. Evenly spread/drop your roasted pumpkin pieces into the quiche mix and press the pieces down so that some of the egg mix covers them. Cook for 45 minutes until the egg is set and the top is lovely and golden or approx 20mins if they are mini quiches. Delicious hand cut, oven baked chips 🙌 My 4 year old wanted chips with his tea so I grabbed a couple spuds cut them into chips (skin on), par cooked in my microwave steamer, tossed through some olive oil, Himalayan salt and smoked paprika. Then baked in a 200°C oven until golden and crunchy, approx 15-20 minutes. Yummo!!
