I’ve been making quiche weekly with seasonal veggies. I don’t follow a particular recipe but I’ll approximate what I did for this one because so many of you are asking. ________________ Crustless Swiss Chard Quiche (6 months and up) 4 tbsp oil or butter 1 onion, diced 4 cups swiss chard or other leafy green, chopped 2 tomatoes, diced 2 eggs 1 cup cheese ½ cup fresh dill, chopped 1 tsp garlic powder 1 tsp ground pepper Preheat oven to 375F. In a cast iron skillet, melt the butter or add oil and fry up the onion under tender. Add swiss chard and tomatoes and cook about 6 minutes. In a large bowl, combine the cooked veggies with the rest of the ingredients. Grease the quiche dish and add the mixture. Cook for 20 minutes. So I am sure as mom you have all had that moment when you put something on your kids plate but you really didn’t believe there is any chance that they not going to eat it? That happened to me last night. I made vegetarian tacos for dinner and usually I deconstruct most meals we eat for Emily’s dinner with us by decided to put the whole taco on her plate along with some of the elements in the taco. She had helped me make the tacos by putting all the fillings on and we know involving the kids in cooking helps prevent fussy eating. Well low and behold she ate the whole taco with all the beans, tomato ( which he doesn’t like) and raw coleslaw veg in it!! Ems is a good eater but as like most kids struggles with any new or vegetables so I was shocked when she ate the carrot, broccoli and cabbage. So moral of the story and what I always tell the parents of my paients all the time 1. Involving your kids in the cooking process really does help 2. Don’t not offer a child something because you believe they won’t eat it 3. Don’t coax or force them into eating something. Let’s talk about you and you’re crazy busy life that needs an easy, convenient, nutrition packed meal. I did it again, didn’t I? You’re singing in your head -did you catch that song. But seriously, shakes are a great way for individuals like myself, a busy, working mom, to squeeze in a nutritious breakfast effortlessly, well almost effortlessly⠀ .⠀ .⠀ .⠀ Okay, I’m done. Here’s how to build a GREAT shake or smoothie. Whatever you want to call it⠀ .⠀ .⠀ .⠀ First get yourself a blender of some sort. I use the @ninja blender, but there are many options out there⠀ .⠀ GREENS: 🥗 (1 cup or loose handful) kale or spinach. ⠀ PROTEIN: 💪🏼 @shakeology or your protein of choice. Greek yogurt is a great alternative. Check the sugars first! Try plain if you can tolerate it. ⠀ FRUIT: 🍌 (1/2 cup) whatever you choose! I like to use frozen fruit to help make my shake a blended texture. ⠀ HEALTHY FAT: 🥜 (1-2 Tbsp) nut butter, flaxseed or coconut flakes. ⠀ LIQUID: 🥛(1-2 cups) water, milk, coffee or nut mills. Be mindful of added sugars in nut milks and lack of protein⠀ .⠀ .⠀ .⠀ Reminders:⠀ 1. Be mindful of how much you’re adding, as your calories, sugar and volume can add up quickly and before you know it - BAM 💥 you’ve got a 600 calorie smoothie that’s as large as the Empire State Building⠀ 2. 🥄utensils have magical powers • Normally Caleb does really well with his veggies. There are days, however, when all he wants to do is play with or spit them out. It’s hard not to raise my voice and force him to try, and of course, that never goes down well. He always.always seems to thoroughly enjoy getting a reaction out of me • What I believe and have learned is that it's super important to create a safe, positive eating environment! And perhaps even more important than what is served on the plate. Coercing doesn’t work. Making mealtimes fun and exciting does! • 📹: Caleb kept spitting out the parsnips. Frustrating, especially bc I know how much he loves them. But I gently and calmly encouraged him to give them another try. 👩🏻: “Not really enjoying them today? Ooh!! Comparison...the thief of joy. . So many times have I’ve caught myself comparing where I’m at and what I’m doing to other RDs here on IG. I found myself feeling less than more often than I’d like to admit. . My path as a RD took a very different turn than many others. I put my career on hold to raise my babies. . Now that my kids are older and I’m ready to find myself as a RD again...I’ve felt like I’m not up to par. I’ve felt like I needed to change who I am to fit in. . That’s when I know it’s time to take a break from social media. To focus on who I am and why I chose this profession. . Can anyone relate? Since I get asked for breakfast ideas for babies all the time, here is my BLUEBERRY OVERNIGHT OATS recipe just for you (6 months and up). ________________ Because blueberries are round and small and tend to be hard, they’re difficult to grab and a choking hazard for babies. If you make these overnight oats for your baby, squish the blueberries between your index finger and thumb. Offer the overnight oats directly on the baby’s platter or in a bowl that suctions to the platter. Let your baby eat it with his/her hands. It’ll be messy and might be difficult to eat but fun to watch and stimulating for your baby! ________________ Blueberry Overnight Oats Recipe ½ cup milk of your choice (I used almond milk) ½ cup oats 1 tsp maple syrup (optional) ½ tsp vanilla ½ cup blueberries, squished (they’re not squished in this pic) Add all ingredients to a small jar and combine. Place in the fridge for at least 4 hours until the oats are very soft. This recipe can be doubled or tripled. You can add the toppings of your choice right before eating. After capturing the pic, I added chia seeds, hazelnuts and coconut butter to my portion. Kicking off the week with a bang...and a healthy lunch for school! 👊🏼 . . Every Sunday I spend about 30-45 minutes prepping lunch items for the kids to take to school. I feel better knowing that I am sending them with healthy options, even if they bum some Cheetos off a classmate behind my back.🙄 . But my 1st grader loves his bento box so we packed up a healthy lunch for him to start off his school week. . Here are my rules for my kids school lunch packing: . 1) Pack a protein. (Turkey, PB, yogurt, cheese, or nuts) *This bento box has turkey roll ups as well as mozzarella, almonds, walnuts, and roasted chickpeas.* . 2) Pick a veggie: I try to pick veggies I know they like and tell them to eat their vegetable first at lunch. Now whether or not they do that, I dont know but I like to think they listen. *Sugar snap peas are my son’s favorite so that’s what he chose for Monday* . 3) Pick a fruit: Luckily my kiddos love fruit so they pick from their options and I hear no complaints! *Cantaloupe for the win!* . *We also packed some crackers so he could eat his turkey roll ups and cheese kind of like a lunchable. . By continually encouraging kids to choose healthy foods while giving them options, you are setting the nutrition groundwork for them. My kids are not perfect eaters. . Even though they often roll their eyes at my nutrition talk, I know it’s hammering into their subconscious and someday it will all make sense to them. ❤️ at Phoenix, Arizona

Being mindful about the way you talk about food to your kids has a big impact on how they view food and develop a relationship with it.⠀ .⠀ One easy way to start is to avoid using the term “junk food.” And on the flip side, you can also skip calling foods healthy too. The more we label foods as healthy or unhealthy, or good or bad, the more likely they are to feel good or bad about themselves based on their food choices.⠀ .⠀ I don’t want my kids to feel guilt or shame for enjoying a treat. And I know that I don’t have to feel guilt about it either, since I provide them with healthy foods most of the time.⠀ .⠀ Allowing them to enjoy treats sometimes is just part of a normal relationship with food. Being too restrictive is not healthy for them, and that could be a whole long blog post so I won’t get into that whole discussion right now! 😊⠀ .⠀ Where does this land for you? 🍕This weekend was all about stocking the freezer. Both for my house and for a friends’. These frozen English Muffin Pizzas where off to her house for kids lunches or an easy not-fast-food dinner option when needed. . 🍅Open and toast English muffins at 350F for 10min. 🧀Add pizza sauce, any toppings you want and grated mozzarella cheese on top. Pop back in the oven for 10min (or until the cheese has melted a bit). 🌶Transfer to a cooling rack. Once cool place in freezer for 8 hours. When I dip you dip we dip. Football season is among us, which means yet another reason to eat good food and lots of it . . . Don’t get me wrong, I’m the first to indulge in a delicious platter of wings, tub of ice cream or crock pot of (insert delicious food here). BUT, I also am the first to make sure there’s always a veggie available to help balance things out . . . I’m a big believer in - work smarter, not harder. If it’s not in your fridge, on your counter or in your cupboards, you can’t eat it - duh. So put some veggies in your fridge and freezer (if you’re really on a roll, cut them up so they’re ready to go), canned veggies in your cupboard for a great back up and fruit on your counter that’s easy to access. If it’s there, in front of you and easy to eat, you’ll eat it. Just trust me on this one - there’s a lot of research out there on behavioral science and eating habits - more to come in a future post . . . So when we talk about raw veggies at a football party, there’s gotta be dip right? Ranch will definitely suffice, but if you want to step up your game, like you’re hoping your fantasy team will do this season, try this awesome and convenient veggie dip -2 cups plain Greek yogurt -1 packer ranch seasoning Nutritionally, this dip has (per 2 Tbsp) 20 calories, 0 g fat, 146 mg Na, minimal carbs and sugar, and 3 g protein. Where as your typical ranch, which is still fine to have, is 146 calories, 16 g fat, 328 mg Na, and basically zero carbs sugars and protein (per 2 Tbsp), but who’s counting . . . Sometimes life is about making simple, small swaps. With this simple swap you’ll always win, but your fantasy team on the other hand, I can’t guarantee that . . . You COULD have: Cauliflower “🍚”; Cauliflower “ 🍕 “; Cauliflower “🥔 tots”; And if any of the above suit you, carry on with your bad self. Personally they all taste like punishment so I opt for what’s pictured: actual cauliflower, undisguised, and absolutely crave worthy after a quick roast in a spritz of olive oil and salt and pepper. ✅ If my FOUR YEAR OLD eats this like 🍭, surely your grown ass can give it a spin, too. 425 convection setting for 25 minutes, PS. . . . . . I’m glad to see this micro movement amongst RDs on the ‘gram calling out the need for more authenticity and less worry about offending each other. My dishes have never been too complicated or staged (just my 📱X and a laptop cover), but occasionally I hold back on what I really want to say about them. Case in point: try eating your vegetables in their simplest form and stop complicating the matter. I think the need for every dish to be photo-ready, endless recipe challenges, and essentially a pissing match to see who’s dish is prettier than yours has steered us away from enjoying the basics that didn’t need much adornment. Get some @annieshomegrown Mac n cheese now! Your kids will most likely love it and love you for buying it. If you can’t tell already, in this house, we love Mac n cheese and we’re not afraid to show it . . . In this dinner meal, our Mac n cheese is organic. Hey that’s great and all, but please be aware that you can eat healthy WITHOUT eating organic. If you can afford organic, eat it soon enough without going bad and can find everything you want to eat in an organic variety, I say go for it, but if you can’t manage organic for one of these reason, totally okay. I’ve never been an organic-or-bust kind of gal, but rather a buy-it-when-you-can-and-when-it’s-convenient kind of gal. Once again, #thebestwaytomomisthewayyoumom . . . Also note, just because a product is organic, does not mean it’s calories, fats, carbs, sugars, etc are any healthier or lower than the non-organic option. It’s simply been grown a bit differently. With that said, organic junk food is still junk food (please no negative comments regarding non organic foods. That’s not supported in this space because all foods can fit in a healthy lifestyle) . . . Basically, eat what you want, when you want, how much you want and hopefully there’s some variety in there somewhere because restrictions, exclusions and food shaming do us no good . . . Confused about what you should eat for dinner? You probably notice that most of my meals have on average three to four food groups: protein, grains (whole grains), veggies and healthy fats (sometimes invisible) . . . If you think about it too much, you’ll make it much more complicated than it needs to be. Now, I’m not suggesting eating chicken, rice and veggies every night, but when considering how to build a balanced meal, think about what food groups you will incorporate is helpful: proteins (animal and vegetarian sources), carbs (whole grains and vegetables) and healthy fats (oils and butters) . . . One last thing, don’t forget to consider your portions. Remember the saying “your eyes were bigger than your stomach?” Think about this when you fill you plate with food. You can always go back for more if you’re truly hungry or try starting with a smaller plate . . . We had Tex-Mex Black Bean Pizza 🍕 for dinner and prepped an easy deconstructed version for Grayson. He wasn't feeling this, but of course loved the Barbie-sized pizza bites I painstakingly built...each finished with a bit of cilantro. This is #momlife. RECIPE (makes 8 mini-pizzas or a whole lot of baby-sized pizza bites) 2 tbsp olive oil 1 onion, diced 1 red pepper, diced 1 green pepper, diced 2 garlic cloves, minced 1 tbsp oregano 1 tsp chili powder 1 tsp cumin 1 tsp paprika (Optional) 1/2 tsp ancho chili powder 1 cup tomato sauce (we used marinara because that's what we had in the pantry) 1 can black beans, no salt, rinsed 4 English muffins or thin buns, 8 halves 2 cups marble cheddar cheese, grated 1/2 cup sour cream 1 lime, juiced Cilantro to taste 1. Preheat oven to 400 degrees F. 2. Saute onion in olive oil to desired texture (my husband doesn't like crunchy onions so I cook until they are translucent and soft). 3. Add garlic and peppers and cook for a few more minutes (you still want the peppers to have some crunch). 4. Add spices and stir to coat the veggies. Stir in sauce and cook for another minute. 5. Spread sauce mixture on each half of the muffins/buns. Top with black beans and cheese and bake for 10-15 minutes. 6. Mix sour cream with lime juice and drizzle on the finished pizza. Top with cilantro and enjoy! * 🔥 tip- use leftover sauce mixture and beans to make some nachos for a snack! This will require more 🧀 #yourewelcome at Hamilton, Ontario

🍚Dinner (grandma’s love 💖 ) 🔸Korean seaweed soup (miyeok guk) with rice 🔸 roasted beets • 🇰🇷 It is the custom in Korea to eat this soup for the first few weeks after birth to help with recovery and breastmilk production, as it’s rich in iodine and iron. It’s also eaten on birthdays. My mom had brought high-quality dried seaweed all the way from Korea (so precious! I’m going to freeze the rest as there’s just so so much 😍😍) and made this HUGE pot of love. Guess what we’ll be eating for the next several days! 🤗 • 📹: This was Caleb’s first time having seaweed, and I was curious as to see how he’d handle its slightly chewy, slippery texture. Well, he loved it! My mom was mesmerized!!” 😍😍 . There were some long strands so I quickly sliced with scissors. What do road trip eats look like for your family? We're in the middle of a multi-day driving fest, and the nutrition is... sporadic. . . It can be stressful trying to balance easy, fun foods with nutrient-dense choices even at home. On the road, even more so because there's less in our direct control in terms of what's available. . . So what do we do? Well, I pack snacks with a bit of nutrition (we love @larabar (loving the fruit+greens lately), @gogosqueez and whole grain crackers and cereals for a few simple options. At restaurants, sometimes the kids order off the kids menu (they ALWAYS choose a grilled cheese or quesadilla) other times I make them share my entree that includes veggies. . . We bring our vitamins and probiotics for added support, and hope for the best. And we talk about enjoying our food AND giving our bodies what they need to fight off germs, because getting sick on vacation is no fun. . . “What do I pack for lunch if my kid won’t eat a sandwich?” ⁣⁣⁣⁣ ⁣⁣⁣⁣ My answer is usually anything that will have you stressing less and your kid eating more. If they don’t like bread would they eat crackers? Or pasta? ⁣⁣ ⁣ ⁣ 💥Meals don’t always have to be perfect and “fit” in to an exact bento styled lunch box. Our bodies don’t know if the cheese was eaten with bread or crackers and they definitely don’t know if it was cut in to pretty shapes and organized perfectly. We have been having lots of fun making warm breakfast sandwiches in our new @hamiltonbeachca Dual Breakfast Sandwich Maker over the past few weeks. Tonight we had an extra busy schedule and I decided to make “breakfast for supper” with a side of quick and easy veggies. It was such a huge hit that I couldn’t resist sharing. To make these two sandwiches you will need: 4 @ozerybakery blueberry breakfast rounds 1 Apple 4-6 thin slices of Swiss Cheese (or #dairyfree cheese alternative) Place two breakfast rounds in the bottom of the @hamiltonbeachca dual breakfast sandwich maker then add layers of cheese and thinly sliced apples and another breakfast round on top. Cook for 5 minutes for the perfect melted apple and cheese sandwich. Serve with your family’s favourite sides for any meal of the day! Had an abundance of bananas in the house this week, so turning them into our family favorite: Banana Bread! 🍞🍌 We make a plant-based dairy-free & egg-free version at our house - it's so easy to make and I've even brought it to gatherings and no one realised the difference! 🌱 (Tip: To make a 1 egg substitute: use 1 tablespoon ground flaxseed mixed with 3 tablespoons of water, then let sit for 5-10 minutes before whisking it and using it in place of the egg. It’s compact, super lightweight, and really easy to clean! (sharing the link in story) I also used @bumkinsbaby reusable snack bag to store the @kiddobloom spoon 👍 • I normally pack foods that are easy to eat with hands (baked goods, sandwiches, etc.) bc using utensils can get a bit messy a lot of times 😅. However, not only did he eat with very minimal mess (it certainly helped that the curry is thick) but he paced himself really well! 👏👏 We were at the restaurant for about an hour! Let us eat carbs today and everyday to properly fuel our bodies. People for some reason seem to think that I don't eat carbs. I know thats the fad. But, folks I dont do this to be thin. I do this to be fit.💪 I do this because I want to be at my kids' weddings dancing my heart out someday, I want to do handstands with my son, I want to chase my kids happily around our house, I want to run up the stairs to tuck my kids in- without knee pain. I want to have more energy than my kids have so that I am up before and to bed after smiling and enjoying them, not counting moments until bedtime so I can crash on the couch. I want to live a long healthy life and motivate my family to do the same. A huge benefit I didn't realize would come from living healthy was resolving some serious anxiety issues. I'm human, I am vain and I don't want to be overweight. But, I have not nor have I ever had any clinical issues that would necessitate a low carb diet. I do however, have a very high risk for heart disease genetic 😐 and even when I was heavy routine labs would tell you I was healthy, but we are truly always learning more about nutrition,metabolism and disease states.Genetics are a bigger factor than my basic labs will ever show. My dad always said his cholesterol was good, but that didn't stop multiple heart attacks. ‼️Raw apples are a choking hazard for beginner babies ‼️Make my brand new APPLE CRISP recipe to obtain the perfect texture for your baby. ________________ Apple crisp (6 months and up) 5 apples, peeled and sliced 1 tsp cinnamon ½ cup melted butter 1 cup quick oats 1 tbsp maple syrup (optional) Preheat oven to 350F. In a large oven-safe bowl, add the apples and cinnamon. In another large bowl, combine the melted butter, quick oats and maple syrup. Add the oat mixture on top of the apples. Turmeric Coconut Curry with couscous . This incredibly easy one pot wonder was inspired by @honeysucklebeez’s golden milk latte overnight oats! ❤️ After watching her youtube video, I thought of how I can use turmeric + black pepper + coconut milk in a savory dish.
