My second successful creation using @instantpotofficial & breakfast on repeat this week- apple cinnamon oatmeal! The recipe I followed was from @cozypeachkitchen and it called for steel cut oats (which I’ve never had before btw), non-dairy milk (I used coconut), brown sugar (which was optional and I used coconut sugar), apples, cinnamon, and nutmeg. I typically added some more apples before warming it up, and some jelly and/or PB when I felt like it. I gotta say, I am definitely a fan of steel cut oats now!..and of how easy this was to make, that’s obviously the best part haha🤷🏻‍♀️in other news, it is finally the weekend and I am looking forward to curling up on the couch tonight and relaxing before I have to deal with my car tomorrow 😩 Happy Friday! 🌿 at Richmond, Virginia

This morn I've used @burgenbreadau soy n lin 1x poppys fresh egg - stired with fork- bread soaked & fried in pan both sides until just golden - Swiss cheese & shallots - Oven until cheese has melted. chocolate cake for breakfast is always an option. I was originally going to have avocado toast but uhhh no, chocolate wins. This recipe is super healthy while still tasting amazing! . . ▪Chocolate Baked Oats▪ •1/2 cup of oats •3/4 of a mashed banana •1/8 cup of non-dairy milk •1 tablespoon of cocoa powder •1/4 teaspoon of baking powder •1 tablespoon of nut butter . Preheat your ogen to 200°C. Mix all of the ingredients together in a bowl, transfer to a lined baking dish/ramekin (I just spread non-dairy butter in it- Nuttelex) and bake for 20-25 minutes! So simple! I also topped with with coconut before baking so it was nice and toasted! Enjoy!

TGIF! I worked for nearly 12hrs today and when I got home I went to my kitchen straight away...I just tossed everything I know can be cook in less than 5mins so what I have in my frying pan is Squid tentacles sautéed in shallots using olive oil, nori sheets and beaten eggs! PS: Too hungry to take a photo when my food was cook x had to dig in 🥰👈

Having a very productive day today, for the first time in forever. I actually managed to roll out of bed before the boys this morning. Enjoyed my iced coffee before it was all watery, and made these little muffins for Jack. Oatmeal, applesauce, homemade muffins! #ENGLISHMUFFIN Se imaginan despertarse y comer unos pancitos recién hechos tipo Mac Donald's. Aquí les dejo la receta pues INGREDIENTES 4 tazas de harina para panadería 1 sobresito de levadura 1 taza de leche tibia 2 cucharadas de azúcar 1 cucharadita de sal 3 cucharadas de margarina o mantequilla suave 1 huevo PREPARACIÓN En la leche tibia poner el sobrecito de levadura con el azúcar, revolver u poco con un tenedor. Por mientras poner la harina y la sal en un recipiente profundo o encima de una superficie limpia. Hacer un hueco y poner el huevo y la leche con la levadura poco a poco al mismo tiempo que se va revolviendo e incorporando a la harina ir amasando hasta tener una masa suave y lisa, ir poniendo la margarina ir amasando hasta que la margarina quede bien incorporada. Estirar la masa hasta que quede del 1 centímetro de grosor, cortar con un cortador de galletas redondo o con lo que tengan, dejar reposar por una media hora. En un sartén antiadherente a fuego bajo colocar los muffins y dorar por ambos lados. Cortar a la mitad. Pan-frying toast in grass fed butter rather than toasting then spreading with butter is a game changer...I just love the buttery crispy edges, like when you make pancakes, obvs my fave part...this is an easy go-to when I’m working from home...All I do is melt butter in a pan over medium low heat, drop in the slice of bread once melted, flip once one side gets crispy, and pour in some eggs. Who likes leftovers? I am a big fan and love the challenge of figuring out what creative ways to use them in my next meal! For breakfast this morning I grabbed my leftover spaghetti squash, the remaining green bell pepper and a couple scallions on their way out to whip up spaghetti squash hash browns! All I did was squeeze out the excess liquid from the squash and mix it with the bell pepper, scallions, an egg 🍳and black pepper and a tiny amount of salt. I cooked it up in avocado oil, 5 minutes on each side, and it was served with a few chunks of leftover sweet potato 🥔 sprinkled with cinnamon. Friday deserves some SUPER thick chocolate overnight oats🤤 Yesterday night I found myself at 11 pm having a one-man Christmas show in my kitchen while prepping these oats. It’s safe to say I have NAILED “All I Want for Christmas is You”😎 which is all one should aspire to do during the holidays. Plus these amazing oats resulted from it, so maybe I should dance (ahem, *perform*) more often while making stuff🤷🏼‍♀️ Happy Friday guys, and I hope you have an amazing day! * Thick Chocolate Cranberry (Protein) Overnight Oats: Stir together 1/2 cup oats, 1 tbsp cacao powder, 1 tbsp ground flax seeds, 1 optional tbsp @vitalproteins collagen, 1/2 cup almond milk, 1/2 mashed banana, and 1/4 cup frozen cranberries and leave in fridge overnight. In the morning, stir again and top! I used more cranberries, @purely_elizabeth walnut probiotic granola, pumpkin seeds, almond butter, and slivered almonds and it was actually a dream!🤤

Started my morning off with these veganized ‘egg cups’ which I used to make so often when I was vegetarian. I’ve been working to find a way to make them vegan using tofu. These turned out pretty well, but there’s a few other tweaks I’d like to try before putting them up on the blog. I do love a chia pudding. It satisfies my love of thick, gloopy food (think rice pudding 😋😂). It’s an easy, nutritious breakfast. Blend 1 banana, handful of blueberries, 1 tbsp ground flaxseeds with 200ml plant based milk. Pour this into a bowl and mix in 2 to 3 tbsp of chia seeds. Mix well and leave in the fridge for 10 minutes. Today I added date syrup, vanilla pea protein powder and matcha powder. For crunch I topped it with white mulberry crumble. Home baked granola 🍯🥥🥣 So easy to make and so tasty with a beautiful golden crunch! You can use your favorite nuts, fruits and seeds but here’s what I used- 3 cups rolled oats 1 cup shaved almonds 1 cup flakey coconut 1 cup chia and linseed mix 1/2 cup coconut oil 1/2 cup runny honey 1tsp cinnamon A good pinch of rock salt 1/2 cup banana chips 1/2 cup tropical dried fruits Preheat your oven to 160 bake, and line a tray with baking paper. Melt your coconut oil in a bowl in the microwave and then add the honey, salt and cinnamon, stirring to combine. Put your oats, almonds, coconut, and chia mix in a large bowl and pour over your syrup mix. Stir well to coat evenly. Pour your mix over your lined tray and use a heavy object to tamp and compress. Bake for 10 minutes to begin. Give it a stir and add the banana chips before returning to the oven. Cook for another 10+ minutes until lovely and golden. It will feel soft but will harden as it dries. Add your chopped dried fruit, compress again and leave to cool. Store in an airtight container and enjoy! Happy Friday 🧡. I don’t know about you but I’m very pleased the weekend is nearly here. I think a lot of us begin to feel tired and and a bit run down at this time of the year 😴. . Another cold morning today and i’m up early for a meeting, so having a warm protein packed breakfast. This is my banana chia porridge. It sounds a little different but trust me, it’s delicious. I’m going to be on the go this morning and if I have extra protein, I definitely feel the benefit and it keeps my energy going for a lot longer. . Pineapple smoothie bowls just what I needed to help with my sore throat. OVERNIGHT OATS IN A JAR!⠀ This is an EASY and YUMMY early morning breakfast so you can sleep in a little and get that suggested 7-9hours a night!😴⠀ .⠀ So before you go to bed tonight...⠀ 1-Choose a jar size. Fill 1⁄3 of the jar with gluten free oats and add just enough nut milk to over the oats. Add 1⁄2 tsp of maple sugar and stir.⠀ 2-Next layer 1 Tbsp of nut butter on top of oats, followed by 1 1⁄2 tbsp of berries🍇🍓 and fill the rest of the jar with CHIA SEED PUDDING MIX*⠀ 3-Top everything off with options of shaved coconut, dark chocolate chips, or/and more berries!⠀ *CHIA SEED PUDDING👇⠀ 4Tbsp (or a little tiny bit less) of chia seeds to 200ml of coconut milk. 1tsp of maple syrup. the first pancake always turns out trash. But this time they were all perfect (extremely shocked)! I've tweaked up the recipe a little bit and I think they're a lot better! . . ▪Gingerbread Pancakes▪ •1/2 cup of oats •1/2 of a mashed banana •1/8 cup of non-dairy milk •1/2 teaspoon ground cinnamon •1/4 teaspoon ground cloves •1/4 teaspoon of ground aniseed (has a liquorice scent, optional) •1/4 teaspoon ground nutmeg •1/4 teaspoon of ground ginger •1/2 a flax egg (1/2 tablespoon of ground flaxseed with 1.5 tablespoons of water, prepared the night before) . Combine all of the ingredients into a bowl. Grease your pan and add two tablespoons worth of batter into the pan. You'll have to use a spoon to spread the batter in the pan. Cook until the sides start browning. Flip and cook the other side. You'll get about 4 pancakes out of it. Once done, add whatever toppings you desire! This recipe definetly has a bit of spice to it, so if you aren't a fan of cloves, maybe ditch the cloves and stick with cinnamon. Enjoy!

“I don’t have time to eat healthy” - everyone In my professional and personal life I have heard this 1,000 times. And well you know I don’t believe that we need to be eating 100% healthy 100% of the time. I think that time is a silly excuse to not nourish your body. This bowl of oatmeal took about 4 minutes to pull together. That salad I posted yesterday took about 10 minutes. This is definitely less time than it would take to make a pitstop for fast food, and honestly pretty dang close to the amount of time it would take to toast a pop tart. I understand that sometimes access to food is limited and that you cannot always plan ahead, but you can start by waking up 10 minutes early to fry yourself some eggs, toast some whole wheat bread, or microwave some oatmeal for breakfast. Don’t feel guilty if you cannot make it work every day, we are all human, but try our some of these quick ideas this week and see if you can make them part of your routine. You may be surprised at how easy it is and start trying some quick hacks for your other meals.

HAPPY FRIDAY JR.! 🐥⁣ ⁣ Made a super easy, healthy egg bake this morning and wanted to share the recipe with you guys! (I adapted it from tasteofhome.com)⁣ ⁣ Ingredients:⁣ •1 small red onion⁣ •1 medium red bell pepper⁣ •1 medium green bell pepper⁣ •1 cup mushrooms⁣ •1 tbsp olive oil⁣ •1 cup of cheese (I used cheddar and feta)⁣ •12 eggs⁣ •1 12-oz can evaporated milk⁣ •1/2 cup flour⁣ •1 tsp baking powder⁣ •salt/pepper/any other seasonings you’d like⁣ ⁣ Directions:⁣ 1. Preheat oven to 350 degrees F, and spray a baking dish with non-stick spray.⁣ ⁣ 2. Dice all of your veggies and throw everything (except mushrooms) into a skillet that’s been coated with olive oil. Cook until just before soft, and still crispy, about 4-5 minutes. Add mushrooms, and cook another 2-3 minutes. Don’t overcook your veggies! ⁣ ⁣ 3. Whisk together the eggs, evaporated milk, flour, baking powder, and seasonings. Pour into baking dish. Stir in veggies and cheese until evenly spread out in the pan.⁣ ⁣ 4. Bake in oven for 30-40 minutes, or until set. Geleia de morango com chia 400 gramas de morango Suco de 1 limão 1 maçã pequena 2 colheres de chia Lave e pique os morangos em cubos pequenos, rale a maçã no ralador fino, adicione o suco de limão e a chia. Deixe a mistura descansar por cerca de 20 minutos. Em uma panela, acrescente o mix em fogo baixo e mexa até que ganhe consistência de geleia. Deixe esfriar e envase. *Fica azedinha, pois eu gosto assim. I͟o͟g͟u͟r͟t͟e͟ G͟r͟e͟g͟o͟ C͟a͟s͟e͟i͟r͟o͟ ✒ 1/2 pote iogurte natural (desnatado ou integral ) temperatura ambiente . 1 litro de leite (eu uso tipo A da Letti) ☉Aqueça o leite até o ponto de fervura, desligue e deixe esfriar até conseguir colocar seu dedo dentro por 10 segundos sem queimar(+-45 graus pra quem tem termômetro) Acrescente o iogurte natural no leite aquecido e com a ajuda de uma colher, misture bem. Transfira para um recipiente de vidro que tenha tampa, enrole em um pano de prato e deixe dentro do forno por no mínimo 8 horas. No dia seguinte(eu gosto de fazer a noite)separe uma tigela grande, um coador que encaixe na tigela, forre o coador com um pano fino e limpo, despeje a mistura e sem mexer ou misturar deixe coando na geladeira por mais ou menos 3 horas. Transfira o iogurte que ficou no peneira para um recipiente com tampa e guarde na geladeira , essa mistura dura até 10 dias . Você pode misturar com frutas na hora de servir, fazer smoothies, preparar pratos salgados , bolos e molhos.
