So many of you messaged that you are missing our food stories, well am missing it too but have been busy at work front plus it was my birthday my parents were here, lots of unplanned road trips happened and now we are struggling to comeback to routine (phew) So sharing today an simple boo's all time favourite food- Ragi paneer appam. #ingredients- 🔹sprouted Ragi powder from @mylittlemoppet_ 🔹semolina 🔹Paneer cubes 🔹Tomato 🔹curd 🔹Coriander leaves 🔹 Salt and pepper for seasoning. 🔹ghee for cooking #method - Soak equal amount of Ragi and semolina in curd. In a grinder jar add paneer tomato coriander leaves and blitz. (No need to make fine paste). Add it to the Ragi mixture. Use water to adjust consistency (Same as idli). Season with salt and pepper. Add ghee to appam pan and heat. Pour in spoonful of batter in each mould. Cover and cook. Σήμερα είναι η τελευταία μέρα που είμαι το "κρυφό ξωτικό" για κάποιον συνάδελφο (όλη την εβδομάδα ανταλλάζαμε συμβολικά δωράκια μεταξύ μας χωρίς να γνωρίζουμε από ποιον προέρχεται) και ήθελα να φτιάξω κάτι 'σπιτίσιο' και υγιεινό για να γεμίσω το τσεπάκι του 🎅, οπότε κατέληξα σε αυτά τα χριστουγεννιάτικα ωμά τρουφάκια με σοκολάτα και χωρίς πρόσθετη ζάχαρη. Είναι πανεύκολα, απλά ρίχνεις στο μίξερ: -100 γρ. χουρμάδες -50 γρ. νιφάδες βρώμης -40 γρ. ταχίνι -30 γρ. κομματιασμένη κουβερτούρα -2 κουτ. σούπας ελαιόλαδο (ή λάδι καρύδας αν προτιμάς) -1 κουτ. σούπας κακάο -1 κουτ. γλ. κονιάκ -ξύσμα από 1/2 πορτοκάλι -κανέλα Και προαιρετικά βέβαια μπορείς να προσθέσεις κάποιο ξηρό καρπό, σταφίδα ή λευκή κουβερτούρα κλπ. Τα ανακατεύεις όλα καλά-καλά και τα πλάθεις σε μπαλάκια (βγαίνουν κάπου 12). Cauliflower Grilled Cheese Servings: 2-3 INGREDIENTS 1 cauliflower Pinch of salt 2 eggs ½ cup vegetarian Parmesan, grated ¼ cup basil, chopped 1 teaspoon garlic powder 1 teaspoon oregano ½ teaspoon red pepper flakes For the middle Cheese of your choice Any additional toppings PREPARATION Grate a cauliflower over a large bowl. Sprinkle a pinch of salt over the grated cauliflower and mix evenly. Leave to sit for 20 minutes. Pour the cauliflower into a clean kitchen towel and wring the water out. In a large bowl, combine the cauliflower, and remaining ingredients, stir until well mixed. Using a spoon transfer two hearty scoops (roughly ¼ cup) of mixture to form each “bread slice” onto a skillet on medium-low heat for about 10 minutes, each side. Add your cheese and any other toppings, allow a couple minutes for cheese to melt. Enjoy! As a follow-up to our last post on vegetable fried rice, here is the promised tasty chicken stew to pair up with the rice and warm you up on a cold winter night. Don’t go by the number of ingredients, when put together all these ingredients are magical. Cooking & preparation time: 30-35 minutes Servings: 4-5 persons Ingredients: 1Kg Chicken with bone/without bone Refined oil/Butter Black peppercorn Bay leaf Cardamom Cinnamon Chopped onion Ginger paste Garlic paste Carrot Beans Potato Green chillies Tomato Slice Turmeric powder Black pepper powder Salt Sugar Water Method: Wash and clean the chicken pieces and drain the water completely. Heat oil in a pan and lightly fry whole black peppercorn, bay leaves, cinnamon, cardamom. Add chopped onion and fry the chopped onion till translucent and add ginger and garlic paste and sauté it. Now add the chicken pieces and all the vegetables, green chillies, turmeric powder, black pepper powder, salt, sugar and mix it well. Add water accordingly and cover and simmer on low heat till the chicken and vegetables are well cooked. GREEN CHICKPEA PANCAKES to brighten up your Friday. These beauties require only 3 ingredients- chickpea (or gram) flour, spinach + water. Chickpea flour is gluten free and is a good source of fibre and protein. You can pick it up in the world food section of most supermarkets. To make the pancakes, whiz 130g of chickpea flour, 2-3 handfuls of spinach and 250ml of water together in a blender until smooth. You could also add a pinch of salt, pepper and smoked paprika or herbs like parsley. Heat a drizzle of oil or (vegan) butter in a small frying pan. Once hot, pour in a quarter of the mix and cook for 2-3 mins on each side. Repeat for the rest of the pancakes. My Mom often used to say, ‘A person who can make perfect fried onions, can make anything!’ This can’t be truer as I started my cooking adventures by first learning how to fry golden brown crispy fried onions. I have learned a few tips and tricks which I would like to share with you all. 1. Slice your onions in a slicer, this way they are all of the same sizes. 2. Slice them as thinly as possible in order to get that crispiness. 3. You can add a pinch of salt to the oil for the onions to get crispy and not soggy. 4. After frying dish these out on a paper towel so the remaining oil is absorbed. 5.Mix oil and Ghee to get a good aroma in these. (Save the oil and ghee you fried in for cooking Biryani/pulao). 6. Store these in airtight containers in the freezer for increasing their longevity and for keeping them fresh and crispy whenever you want to use these. . Buongiorno speciale ♥️ budino di albumi stratificato banana 🍌 con cioccolato extra fondente e granella di nocciole 🤩😋 buonissimo! Procedimento: Unire 130ml di albume a 130ml di latte vegetale (io farro Isola Bio) o acqua ed aggiungere una punta di agave ed i semi di chia. Mescolare e versare in pentolino antiaderente a fiamma bassissima finché non si è addensa. Togliere da fuoco e versare un po’ alla volta alternando con le rondelle di banana 🍌. Riporre in frigo per la notte. ✔️latte vegetale di farro isola bio: latte vegetale dal gusto delicato e piacevole. Sprinkle a pinch of salt over the grated cauliflower and mix evenly. Leave to sit for 20 minutes. Pour the cauliflower into a clean kitchen towel and wring the water out. In a large bowl, combine the cauliflower, and remaining ingredients, stir until well mixed. Using a spoon transfer two hearty scoops (roughly ¼ cup) of mixture to form each “bread slice” onto a skillet on medium-low heat for about 10 minutes, each side. Add your cheese and any other toppings, allow a couple minutes for cheese to melt. Enjoy! This tomato-bean-stew is from another planet 🌍 It fit well together with my homemade falafel 🥙. Stew recipe: 1. Roast two handfuls cherry tomatoes and one chopped red bell pepper for 35 min on 200^C. 2. In a large pan heat a bit olive oil and fry one chopped onion until it turns slightly brown and 4 gloves of garlic. 3. Add 5 roughly chopped large tomatoes and a can of tomato purée+the chopped baked pepper and 3 cans of beans (chickpeas, white beans,...). 4. Bring it to a simmer and cook for 25 min. 5. 🌟Rollo de tortilla, espinacas y salmón ahumado 🌟 . Estos rollitos se pueden servir en cenas informales, aperitivos o para aprovechar lonchas de salmón ahumado que te queden. . ✨RECETA: . Ingredientes para dos rollos: • 250 gr de salmón ahumado @ahumadosdominguez • 2 planchas de pan de molde sin corteza • Hojas de espinacas baby • 4 pepinillos en vinagre • 3 huevos @liderou_callis • Mayonesa • huevo hilado . Preparación: Batir los huevos con un poco de sal y verter sobre una plancha forrada con papel de horno. . Introducir en el horno a 180°C previamente precalentado y dejar que cuaje hasta que quede una plancha de tortilla. Dejar enfriar. . Picar los pepinillos y mezclar con un puñado de hojas de espinaca baby. . Separar las lonchas de salmón y cortar del tamaño de la plancha del pan de molde. . Untar las planchas de pan con mayonesa y cortar la tortilla en rectángulos un poco más pequeños que las planchas. . Colocar la tortilla sobre el pan y cubrir con las lonchas de salmón. Repartir por encima la mezcla de espinacas y envolver el pan sobre el relleno formando un rollo. . Untar con mayonesa la superficie de los rollos y decorar con huevo hilado y con tiras de salmón en forma de rosa. . Happy Wednesday Instaworld!! It may be grey outside but our hearts are colourful right?! I'm in a good mood because I woke up and it wasn't raining. Yay! Every morning without cold rain is a good morning. I practised my gratitude before jumping out of bed. Ok jumping may be a bit of an overstatement here. I crawled out of bed but at least in a positive mood. Practicing gratitude before getting up is definitely part of my morning ritual now to get me on some good vibes for the day! 🙌 I felt like something warm and comforting for breakfast so I decided to have baked carrot cake oatmeal with cream cheese frosting. Nomnomnom • • *RECIPE baked carrot cake oatmeal*🥕 □1 small grated carrot □30g of oats □10g of Protein powder (I used @theproteinworks vegan vanilla) □ small handful of chopped walnuts □ 1 egg white □ 1/2 tbs of sweetener of choice, more if you like it sweeter □ carrot cake spices- I used cinnamon, ginger, a bit of clove and allspice □1 tsp baking powder □1/2 tsp baking soda or a splash of apple cider vinegar □ milk of choice (I used @alpro almond milk) •Preheat oven! Mix all ingredients together, add milk slowly until it's a wet consistency. Pour into oven save bowl. Leave in the oven for about ten minutes at 200- 220 degrees. Cream cheese frosting: Mix 1 tbsp of cream cheese with some maple syrup or honey. Pour over warm oatmeal.
