As it is getting warmer here, I have switched up my typical breakfast. I have started having over night oats in the morning as opposed to hot oatmeal. I pretty much just add all my usual ingredients, but instead of heating it over the stove, I put it in the fridge overnight. Toppings today included fresh fruit, coconut yogurt, and some mixed nuts and seeds! WHO LOVES A GOOD SMOOTHIE? 🧃❤️⁣ ⁣ As days are getting hotter, you might want to change your usual breakfast porridge for something a bit more fresh and easier to digest. We tried 3 different smoothie options and they where a real treat. ⁣ ⁣ 🧃Morning Fibre and Strength smoothie.⁣ ⁣ Classic smoothie with strawberries, blueberries, frozen raspberries, half a banana🍌 and milk, blended together with oats and linseeds. High in fibre and vitamins.⁣ Tip: blend half of linseeds, mix in other half after it's done and let it sit for a bit. It will vote linseed with a jelly like layer and create really nice texture.⁣ Linseeds are great for scrubbing your digestive system clean when whole, but once blended you can absorb amino acids that they contain.⁣ ⁣ 🧃Black cherry sour smoothie for serious fitness enthusiasts.⁣ ⁣ Recipe inspired from alcoholic cocktail - whisky sour.⁣ Packed with protein and antioxidants. Blend frozen cherries 🍒, couple strawberries 🍓 for sweetness, handful of basil leaves, green tea and too very fresh egg whites to create a smooth texture. Drink immediately because it tends to separate. Can be served with few cubes of ice.⁣ Tip: most smoothie recipes include milk as a liquid ingredient, try swapping for different teas, coffees, plant based milks, coconut water, kefir, kombucha to up the micronutrient game.⁣ Some might feel squeamish about fresh egg whites, even though it adds amazing fluffiness to this drink and a bit of dry flavour, you might want to swap it for plant based protein. What I loved about this message was the connection between a farmer and someone eating the food that I grow. This is what our food system can and should be, this type of food system cultivates equitable access and food security. 🌈 The most gorgeous medal! I completed 100 miles in May for my personal challenge 🌈 I’ve been trying hard to keep the momentum with my running while in lockdown. Missing family, a ‘normal’ life routine and just the freedom to go places is tough at times. Don’t get me wrong I’m so thankful we are healthy and safe but home schooling two small humans and making sure they are happy and stimulated 24/7 is enough to drive me to GIN 🤣. Artichoke, these are very simple, trimmed and cooked in pressure cooker. If you have disposable gloves for trimming would be ideal, if not, it’s ok, just be careful with the pointy leaf. With a large knife cut the thorns on top; about 2cm, then with a kitchen scissor cut the rest of the leaves how I did, then rinse in warm water with lots of salt and lemon juice, there is dirt in between the leafs. Also cut the stem and make a cross cut to enable cooking... Enjoy with your favourite dressing. - BEET & BEAN VEGAN BURGER - 🍔🧆🥒 Hello les croquets ! C’est reparti pour un burger ! Mais cette fois-ci il sera vegan ! Nous vous proposons un burger avec un steak végétal fait à partir de betteraves et de haricots rouges. Franchement, on a été surpris tellement c’est bon !😍 [🇬🇧English version in comments] Comment faire les steaks : - Faire cuire 170g de betteraves jusqu’à ce qu’elles soient tendres. - Mixer grossièrement les betteraves et 250g de haricots rouges. - Émincer une échalote de taille moyenne et hacher une gousse d’ail. - Ajouter dans le mixeur, l’oignons et l’ail, 20g de chapelure, du sel, 2 cuillères à café de moutarde de Dijon puis mixer à nouveau. - Ajouter 7g de levure, puis petit à petit 70g de farine et mixer une dernière fois. (si vous sentez que la pâte est encore trop souple pour un steak, rajoutez de la farine) - Faire chauffer à feu moyen une poêle avec un filet d’huile d’olive.. - A la cuillère, former un burger et directement le poser dans la poêle. - Retourner les burgers régulièrement jusqu’à ce qu’ils soient cuits. Une fois vos délicieux steak vegan prêts, vous pouvez composer votre burger avec les ingrédients de votre choix. Chez nous c’était cheddar, champignons, tomates cerises et courgette. Si tenes que preparar una mesa dulce, esta es una excelente y saludable idea! Torta de calabaza y chocolate con mousse de chocolate por arriba (la receta de la mousse esta unos posteos mas abajo 😉y es opcional usarla). La receta de la torta no es complicada, y consta de mezclar en un bowl: pure de calabaza 170grs, 50gr de caco amargo, 160 gr de harina de almendras, 3 cucharadas de azúcar mascabo (pueden ser 4 o 5 también), dos cucharaditas de polvo de hornear, una cucharadita de esencia de vainilla, media cucharadita de pumpkin spice (lo podes reemplazar por canela si no tenes) y tres huevos. Mezclas todos y lo pones en un molde cuadrado cubierto de papel manteca y lo cocinas en horno medio (170C) por 30 minutos hasta que este cocido. 🥗 GRILLED AND MARINATED VEGETABLE SALAD🥗 From time to time, a good little salad is nothing better😻. * INGREDIENTS🥬🍋: - Red pepper🌶 - Green pepper - Zucchini🥒 - Onion🧅 - Garlic🧄 - Lamb’s lettuce🥬 - Mozzarella or Burrata or Feta🧀 - Balsamic vinegar - Olive oil - Thyme - Basil🍃 * RECIPE🥗🥣: 1️⃣ Roughly cut your vegetables, mix them with 2 tablespoons of olive oil, a little thyme and basil powder, salt, pepper, garlic powder and 2 cloves of chopped garlic. Then, grill everything in the oven at 180 degrees🔥 for 15min ⏰ on each side. 2️⃣ Once well grilled, leave to cool🧊 in a container🥣 then add 3 tablespoons of balsamic vinegar with a little lemon juice🍋 if desired. 2️⃣ In a plate🍽, arrange your lamb's lettuce (or other lettuce)🥬 and your vegetables which have marinated in the sauce🌶🥒🧅.
