Treat of the week 🍞Raspberry and Hazelnut Banana Bread. VEGAN, GLUTEN and REFINED SUGAR FREE 🌱 ~ 🍌🍞Banana bread is becoming one of my favourite snacks or ready-to-go breakfasts when I have to rush to work and need a nutritious and quick fix. You can actually slice it and keep it in the freezer so it is ready to be warmed up and eaten whenever! Here is the recipe 👩‍🍳 ~ 💪🏻What you need: 💪🏻 ~ ♥ 4 very ripe bananas; ♥ 1 cup of gluten-free oats (finely grounded); ♥ 2 1/2 cups of chopped roasted hazelnuts; ♥ 1/2 cup of sunflower seeds; ♥ 3 tablespoons of chia seeds; ♥ 3 cups of fresh raspberries; ♥ 4 tablespoons of date syrup; ♥ Half a glass of almond milk; ♥ A cup of still water👌🏻 ~ 👩‍🍳Start by preheating the oven to 150C. Place the chia seeds in a bowl with a cup of still water and leave it until a gel forms. This will keep all ingredients together instead of using eggs. Peel and mash the ripe bananas with a fork or alternatively blend them with a dash of almond milk in a blender until smooth. Add the remaining ingredients and the chia seed gel, previously prepared, leaving the cup of almond milk aside for the moment. Mix well and now add the almond milk little by little until the mixture is sticky but still firm enough to slightly hold its shape. Place the mixture into a loaf tin and bake it for about an hour in the oven at 150C. Let it cool down and now enjoy it! •MY CHRISTMAS INSPIRED PORRIDGE BOWL 🎄• I’m not going to lie - when my alarm went off at 5.45am after getting in at 2.30am 🥂🍷🍸💃, food was not really on my mind 😵. I thought I’d just make a bowl of plain stodgy porridge or eat a piece of toast. But my lifestyle is now so ingrained in me, that I just couldn’t do it. Although in the short term I’m sure a bowl of cereal or piece of toast would have satisfied me, I knew by mid morning I’d be craving something else 🍫🍪. .. So instead I decided to make Christmas inspired quinoa oats with chunks of honey roasted parsnips, spiced with cinnamon and nutmeg, with a dollop of almond butter and topped with some dried cranberries and some frozen raspberries. I’d never really thought about adding parsnips to a porridge before but actually why not? They are naturally sweet, they are full of fibre and have plenty of vitamins and minerals in them. .. So if you’ve never done it, why don’t you add some root vegetables to your oats, you might be pleasantly surprised! 💚

PO KONG IS ABSOLUTELY AMAZING, I have tried Sun Bo Kong yet, which is literally right across the street, but for now Po Kong is my favourite vegetarian dim sum place!!! It’s delicious and authentic and A+ • I have been feeling quite productive for the past three days. I went to the gym on Monday and instead of going too heavy, and ego-lifting, I deloaded a significant amount to work on my form, it sucks but also it feels good that I’m doing something properly. Afterwards, I obviously sat for hours to study again! Yesterday I had my English exam. I answered more short questions than I needed to so I had wrote my entire essay portion of the exam in 44 minutes and my conclusion in 1 minute (yep, I was stress writing). After the exam I just went to a coffee shop to study from when I got there until I finished a good amount of notes. ( I manage to sneak a 20 min power walk in because I went the wrong wrong way). Today, I had a two hour training session for a new work (not workout lol) and then I went to visit my friend at her work, while settling in to study there until it closed as well! I literally just got home and gobbled too much food really fast, but I had so much food before, I question myself with the things I do sometimes. Tomorrow is the last day I have time to study, I’m still 5 lectures behind but I think I’ll be able to pull through! at PO KONG vegetarian restaurant

Tonight’s dinner salad is a mix of spinach and arugula topped with cucumber, shredded purple cabbage, marinated artichoke hearts, yellow pear tomatoes from my garden, red onion, Spanish olives, and sliced strawberries! 😋 made the dressing myself by blending: raspberries, blackberries, Trader Joe’s sunflower seed spread, ACV, balsamic vinegar, hemp hearts, fresh squeezed orange juice, poppy seeds, and enough water to get the consistency I was looking for. Chocolate & Dulce de Leche Fudge by @happyhealthblog⠀🍫 RECIPE⠀ Chocolate & Dulce de Leche Fudge⠀ 1/2 cup condensed coconut milk⠀ 2/3 cups cacao butter⠀ 1/4 cup coconut butter (creamed coconut)⠀ 1 tbsp peanut butter⠀ 1 tbsp almond butter⠀ 1/2 cup raw cacao powder⠀ 1/2 tsp vanilla extract⠀ salt⠀ .⠀ Tahini swirl⠀ 3 tbsp tahini⠀ 3 tbsp coconut butter⠀ 3 tbsp cacao butter⠀ 2 tsp agave syrup⠀ 1/2 tsp vanilla extract⠀ Time: 25 minutes. Yields: 16 generous fudge bites⠀ .⠀ DIRECTIONS ⠀ Use two saucepans, add all the ingredients to the two different blends in each saucepan.⠀ Melt all the ingredients in the saucepans on low heat until it's liquid.⠀ Pour the chocolate mixture into a mold with baking paper.⠀ Pour the tahini mixture in uneven spots over the chocolate layer and take a toothpick or chopstick to make swirls.⠀ Put the fudge mixture it in the freezer for 20-30 minutes or until the fudge solidifies.⠀ You're all done! Cut smaller pieces with a sharp knife and enjoy! Store it in the freezer for longer shelf life. It will last in the fridge for about 1 week. #letcookvegan

"Creamy" mushroom and pea risotto. You don't need butter or actual cream! It gets creamy with the cooking technique when using arborio rice. Love this dish oh so very much. It's filling and such a clean meal too with simple ingredients that are inexpensive. Orange Creamsicle Chia Pudding 😁 was so yummy! Here's how I made it: 1/2 cup coconut milk (can sub any non-dairy milk) 2 oranges - peeled 1 tsp vanilla 1 tbsp maple syrup (you could also use honey) Blend ingredients in a high powered blender. Then add in: 2 tbsp chia seeds Mix together. Raw Mini Christmas Puddings (RECIPE) These use all the same spices in a traditional Christmas pudding, so you get all the Christmasy flavours, as well as all the nourishment. And they’re so cute 😊 Recipe below . Raw Mini Christmas Puddings . Ingredients Pudding 60g sunflower seeds 60g hemp seeds 60g flax seeds 200g medjool dates (pitted) 50g sun dried apricots 50g sun dried figs 10g fresh finger, grated 1 cup activated buckwheat or sprouted buckwheat 1/2 tsp vanilla powder 1/2 tsp nutmeg 1/2 tsp ginger powder 1 tsp cinnamon 1 Tbsp (organic) orange zest 1/4 cup orange juice . Christmas Custard 70g coconut cream 35g raw cacao butter . METHOD Use a blender to blend all the seeds and buckwheat into a flour. Then add all the ingredients for the pudding and mix into a batter. Press into your mini pudding shaped molds, press down quite firmly so that the top has no air pockets or holes. Place into freezer to set. Melt the cacao butter in a bowl in a 40C/105F dehydrator, or in a small bowl inside a low gentle steaming pot, with the lid off (you can use a cooking thermometer to keep an eye on the temp). Mix all custard ingredients together well. Take puddings out of their molds and lay them up the right way on a large plate or tray you can fit back into the freezer. Spoon a little of the custard over the top of each pudding. Garnish with goji berries. Keep in a sealed container in the freezer until ready to use.
