It's butternut squash season! 💊 The easiest vegetable to sneak in to all your family's meals! Here I've got a 50/50 Butternut/Tomato sauce for fusilli pasta, all herbed-out with sage, marjoram, bay and savory for extra antioxidant adaptogenic awesomeness. I've only used half of a giant butternut for this sauce. I'll freeze half the pot. As for the rest of the cooked butternut, purée it, stick it in a freezer bag, then just crack off a piece when you want to add some nutritional oomph to another lazy meal. ... Brown rice buddhabowls with oil-free roast chilli pumpkin, crunchy chickpeas, broccoli and a spicy peanut and ginger sauce 🌼 My tip to tasty brown rice is to rinse and soak it for at least 12 hours before cooking in stock- I make my own stock from vegetable offcuts that I keep in the freezer, dulse flakes and filtered water. DAY 4 OF WEEK 11 on my WFPBNO Journey (Oct. 8, 2017)- Dessert Pizza & yes, it's WFPBNO/Vegan. I took a ready made crust that was compliant with our lifestyle, baked it at 425 degrees for 8-10 mins. I then took it out if the oven. I’m not a vegetarian nor a vegan BUT I do eat a #plantbased diet! 🌱 * What that means is I try to limit meat & other animal products...and when I do eat them I buy the highest quality I can find.✅ But the majority of my food does not come from animals. Each time I eat I ask myself what do I have that is living & that is where I start! Potatoes with spinach and topped with homemade mushroom gravy. I just boiled onions, mushrooms and vegetable broth for about 10 min. Husband is outside all day meeting clients so I thought I would make some yummy soup for him to come home to. This leek and potato soup is so warm and comforting. My secret to always adding greens is filling the whole bottom of my bowl with spinach. Every meal I make I usually will put it on top of a bed of spinach. This soup mixed with a whole ton of spinach was especially good. Whats your favorite way to modify your meals? at Woodbury, Minnesota
