EARLY APRIL HARVEST • There have been some exciting developments on the allotment recently. My neighbour has kindly given up 2 of her beds so I’m now planning my new flower and fruit beds! Whilst I’ve no flowers yet I’ve improvised and put these sprout flowers in water and they’re looking great! The rest I think, for now, I’ll leave for the bees... • I think we’re now also entering the hungry gap so have got a little creative. More brussel sprout leaves, a baby red cabbage I’d forgotten about and some stinging nettles! I’ve read edible weeds have more nutrients than conventional shop bought greens so looking forward to making some nutritious nettle scones! • Have you been foraging, either on or off your allotment? It’s Thursday and it’s raining here in So-Cal and I’m just sitting here dreaming of warm summer days and endless tomato harvests! @freckledcalifornian posted her tomato growing tips on her blog yesterday and now all I want is a countertop full of homegrown tomatoes! There is this weird time in gardening around this time of year when the weather is trying to turn and your garden is slowly making its move over to spring/summer but you just aren’t quite there yet...when you are kinda just ready for all the greens to be replaced with bright colored tomatoes, zucchini you have to give away because you again grew one too many plants, and juicy corn that has flavor unlike any store bought corn! Today's reason to be happy! (And why allotments are so important) Look at all the beautiful fresh veggies we've got for our tea tonight (and Easter roast) Plenty of purple sprouting broccoli, asparagus & chard plus a load of herbs! With delivery slots like gold dust, if we didn't have the allotment we would be braving the shops for veggies. Which with my lungs we are trying to avoid as much as possible. Plus if we don't go now, what am I going to feed our kids later in the year and throughout the winter?!

Our smoked turkey recipe is live! While perfect is subjective, we haven’t found a better way to smoke a turkey breast. Cold smoking + sous vide is a method we use a lot. Burning wood to cook food is about it as traditional as it gets, using a sous vide to dial in the temperature ensures that you never mess it up. We are counting down the hours to opening morning this weekend, we love getting after fired up birds, but also we are just about out of last years turkeys. Because, contrary to popular belief, following a low-carb/keto diet does NOT mean NO carbs! Carb intake depends very much on your personal carb tolerance, which in turn depends on how efficient you are at burning fats (part practise, part genes). . @leapwildfish wild salmon. I don’t recommend farmed as it contains nasties (chemical pollutant and antibiotic residues) and has a poor omega-6:3 ratio (fish feed is high in grains and plant oils, which makes it high in pro-inflammatory omega-6s). . An all-organic green salad of white cabbage, avocado, Batavia lettuce and spring onions.🥗 The last two from @rootsfruitsandflowers, whose resplendent produce section this week cheerily signalled spring really is here!🤸‍♀💃 . Dressed in a trad vinaigrette ft extra virgin olive oil, gut healthy apple cider vinegar, Dijon mustard, salt, pepper, and a touch of @clearspringuk ume plum vinegar. A Story on the Slow Food Movement Slow Living as a concept evolved from the "Slow Food Movement". It all started in Italy in Rome, when despite a huge opposition from the locals and politicians alike, McDonald's that was seen as a symbol of "Americanisation of Italy" set its first shop. Thousands stood opposing the outlet , one of them being Carlo Petrini who distributed free pasta to the people in a move against the foreign burgers. Later Petrini went on to become the founder of the "Slow Food Movement" that stressed on eating local food with a view to preserve cultural and local heritage. Today more than 100 countries are a part of this movement. Closer home in India, one item in summers that has long been a part of our culinary traditions, is the raw mango. Mince it into a salad, dice it into pickles or my most favourite of them all, squish it into a fresh juice (also called as Aam Panna/Panha). Here, in the picture, the raw mango was steamed, pulped and juiced. Added saffron strands and freshly pounded cardamom and sugar. A special appearance in the picture made by more than 100 year old, mortar & pestle that I inherited from my grandmother, in which the cardamom/sugar were pounded. Also, a pinch of black salt. There are various ways of turning this into a delightful drink. This is just one way. Stay tuned for more. • Yellow pumpkin curry. Mango. Double beans. • Cooking, while living in a tiny town like auroville is all about using what's local, native to the region, seasonal, and available. The farms are abundant. Everything's fresh and colourful and FULL of life 🌈 this makes me so happy. We've been spending these quarantine days eating super local and cooking almost every meal! When there's not much planned, I get very intuitive and a bit random with my cooking and use whatever I can find. 😂 This is something I thoroughly enjoy. ✨🌻 • This time, I made a curry by boiling and mashing up yellow pumpkin as the base, adding in tomatoes, onion, lots of ginger, black pepper and lime. Oh and of course these super yummy double beans my mum had slipped into my bag months ago! Added a suuuper touch. Serving this up with brown rice and a banganapalle mango 🥭 was perfect because it added that layer of sweet and fresh. 🌿🌼 • Have you been upto any "random" cooking lately? This experience made me think a lot about animal lives and what sustainable lifestyle would be like.🌱  昨年11月、イタリアの北西部、パルマ県のボルゴ・バル・ディ・ターロという地域で、農家民泊アグリツーリズモを営む農家でボランティアをしてきました🐄🐂🐖 いろいろあった旅の中でも濃いめの2週間。 #Workaway というボランティアマッチングサービスを利用しました🤝  ーアグリツーリズモって? 農村に宿泊し田舎体験をする旅のこと。 採れたての食材を使った料理を楽しめて、畑仕事や家畜の世話などを体験できる宿もあります👨‍🌾 日本にも実は結構あります。のんびりと自然や動物と触れ合いたいという都会の人や年配の方に人気で、星野リゾートも去年アグリツーリズモをコンセプトとした宿をオープンしたみいです。  ーはじめての自給自足 ボランティア先は、ほぼ100%に近い自給自足生活。野菜や果物、穀物は、すべて畑で作っています。そして、大切に育てた家畜を、年に一度屠殺し、そのお肉を冷凍して、少しずつ食べているのだとか。すでにかわいいなあと思いはじめていた牛たちを目の前に、なんだか複雑な気持ちになっていたら、 「これが一番ピースだと思うんだよね。」 とお母さん。 確かに、放し飼いの牛たちはストレスもなく幸せそうで、余計なコストもエネルギーもかかっていない。食べてみると、元気な赤身という感じで、少量でも満足できる味でした。   ーある日のゲストの晩ごはん  ゲストが泊まりに来ている日は大忙しです🙌 いつもの畑仕事に加えて、部屋の掃除や料理の準備。 料理と提供のお手伝いをさせてもらいました🐙  ○前菜: ・熟成豚のプロシュートをカリカリに焼いたもの ・そば粉のミニパンケーキ くるみのペースト添え ・玉ねぎのカラメル煮 ○ステーキとサラダ:昨年屠殺した牛と季節の野菜で。 ○付け合せ:芽キャベツを茹でて、にんにくと炒めたもの ○ニョッキ:手作りニョッキにたんぽぽの葉のジェノベーゼを絡めたもの ○デザート:ゲストの目の前でフランベするいちじくのキャラメリゼ  これに天然酵母の雑穀パン、オリーブオイル、ワインがたっぷり🍷🤍  特別なものは使わず、地のものだけで作った料理。 ちゃっかりつまみ食いさせてもらったら どれも、ほんと美味しかった。 小さい時に実家(うちも農家)で食べた野菜を思い出しました。 材料や味付けはぜんぜん違うのに、ふしぎ👀 野菜も果物も、食べ頃を収穫しているからかな。   ー滞在中のわたしの1日 ゲストの過ごし方とは違うけれど、こんな感じ。  7:30AM  起床・朝ごはん 8:00AM サフランのつぼみ摘み。めしべを取り出す作業 9:30AM りんごジュースづくりのため、りんごの傷や虫食いを除く作業。(他の日はマルシェ販売用のジャムやパンづくりなど) 11:30AM お昼ごはんの準備とキッチンの掃除 1:00PM  みんなでお昼ごはん 2:00PM  片付けが終わったらあとは自由時間  5:00PM 鶏小屋に行き、卵があれば優しく取り出して、鶏がみんな揃っているか確かめる。少なければ探す。放し飼いだけど、夕方になるとだいたいみんな小屋に入ってくれていました🐤 7:00PM 夕食(だいたい、お母さんかお父さんが作ってくれたパスタかリゾット) 9:00PM シャワー(限られた水量なので5分で入る) 10:00PM 就寝  シンプルな生活。でも、毎日が新鮮でした。  つづく  たこしほ / takoshiho 🐙  #fujifilm #xt10 #worldtraveler #SDGs #travelforfood #eatlocal #eatseasonal #sustainable #foodtravel #travel #foodie #foodphotography #foodstagram #instafood #foodgram #travelphotography #healthy #foodculture #streetfood #foodblogger #takoshiho #たこしほ世界食探訪 #italy #parma #sustainability #sustainableliving

Today's post is all about resource management. In my backyard garden, I have few plants and trees with the help of which I feed my family and donot rely much on buying from outside in this time. We have Papaya , Moringa, Jackfruit, Banana Tree, Curry Leaves along with Bael and Gauva which feeds us during different part of the year. Besides, we have planted tomato, brinjal, green chili, Annapurna leaves, malabar spinach . Due to harsh heat, my tomato plants are all withered and leaving behind some ripe and unripe tomatoes. I knew I had to make something out of rhis which can be preserved and still have multiple uses , so I kep the ripe red tomatoes for gravy and made this Tangy Green Tomato Pickle which is simple to make and can be made by anyone. You can use the same method to pickle your red tomatoes also , however look for a little firm tomatoes for that crunchyness. 250 gms Green Tomato, quartered 1 tbsp mustard powder 4 to 6 green chili, slit, 2 to 3 garlic pods Salt 1/2 tsp turmeric powder 1/4 cup mustard oil 1 tsp fenugreek seeds Few curry leaves Wash and pat dry the tomatoes. In a clean sterilized glass jar, add the chopped tomatoes, add salt , turmeric powder, mustard powder, green chili, Garlic pods and mix. Now heat a pan and add mustard seeds , fenugreek seeds and curry leaves and allow the fenugreek seeds to brown a bit and switch off the heat. Let it cool and then pour this over the tomato spice mix and mix everything well. Now cover and keep in the sunlight for the next 3 to 4 days and your pickle is ready to eat. As the heat wave strengthens it's stranglehold over the rocky terrains of Western Odisha, a familiar scene starts to unfold in most homes. The mornings are privy to numerous tantrums as children and sometimes even unwilling adults are forced to down an earthy liquid or swallow the porridge equivalent ( I prefer the second option) . All in the name of keeping the gut and subsequently the head cool. I am of course referring to the 'Mandiya' (or finger millet) sherbet or porridge is very popular during the summer months. A tradition which has been prevalent in Western Odisha much before the foodgrain was accorded the superfood status. In the frame - Mandiya jau cooked with a pinch of salt and very little sugar. It can be eaten with curd and jaggery/raw sugar. Or made into a savory preparation with curd, onions and green chili. Mandia jau is an excellent infant food down south. Full circle farm - my first home delivery. Purchased my mystery veggie box n was delighted to find mushrooms, kale, corn, eggplant, cucumbers, carrot, pumpkin, cherry tomatoes, mixed salad greens, lemons for $35; this along with sweet potatoes, bacon, chicken marylands, eye fillet and pork ribs. Soda bread dolce • non so come non mi sia venuto in mente prima, c’è stato un periodo in cui il soda bread era una specie di ossessione, lo facevo spessissimo, poi pian pianino, l’ho messo da parte e me ne sono quasi dimenticata. Non so se anche a voi capita ma a me succede spessissimo, da ricetta tormentone, finisce nel dimenticatoio. L’altro giorno però, rispondendo ad un commento su FB mi è tornato in mente e ho pensato che potesse essere il momento migliore per rispolverarlo. È una ricetta irlandese, nata in periodo di guerra quando nelle case non c’era molto a disposizione, si usavano gli avanzi delle farine (quelle che c’erano), si prendeva il latticello (il liquido di “scarto” della produzione del burro) si aggiungeva del bicarbonato, si incideva una croce sopra e si metteva a cuocere in una pentola di ghisa. Tutto qui, niente impasto, niente lievitazione. È un pane povero che però io trovo incredibile! Per festeggiare questa “riscoperta” ho deciso di farlo nella versione dolce (se volete fare quella classica basta togliere lo zucchero, la frutta secca e il cioccolato), ottimo da mangiare a colazione leggermente tostato. Voi avete delle “ricette tormentone” che poi vi siete dimenticati improvvisamente?! • • Ingredienti: - 400 gr di farina (potete usare quelle che volete e mixarle, io uso sempre i fondini rimasti in dispensa) - 400 gr di latticello (per farlo a casa mixate 300 gr di yogurt al naturale con 100 gr di latte e il succo di mezzo limone) - 9 gr sale - 10 gr lievito istantaneo per piadine e torte salate (o 8 gr di bicarbonato di sodio) - 1 manciata di goccie di cioccolato - 1 manciata di uvetta - 1 manciata di mandorle - 1 cucchiaio di zucchero di canna Procedimento: - create il latticello mischiando yogurt, latte e succo di limone - in una ciotola mettete le farine, il sale, le mandorle tagliate a pezzi, le gocce di cioccolato, l’uvetta, lo zucchero e il lievito. Mischiate - aggiungete il latticello homemade e mescolate, dovrete ottenere una palla appiccicosa - mettete in una teglia, appiattite leggermente, incidete una croce profonda nel centro e ricoprite con un po’ di farina - fate cuocere in forno caldo a 200 C per 30 minuti Buona giornata!
