Brady and I both have these scrumptious bowls waiting for us for lunch today😋 Yesterday I made a batch of Chickpea Tikka Masala from @miketheironyou with some cilantro lime rice to go on the side. This recipe makes 8 servings which is perfect because we both need lunches for Monday-Thursday. This recipe is so delicious and it’s also VERY budget friendly. Cheesy rosemary bread wreath . 500g strong white bread flour 2 tsp sea salt 350ml lukewarm water 7g sachet yeast 1 tbsp coconut sugar 4 tbsp olive oil 4 sprigs rosemary, chopped 1 @violife_foods EPIC smoked cheddar flavour block, grated 2 tbsp soya milk 2 tbsp aquafaba 3 tbsp pomegranate arils, for topping . EPIC Garlic and chilli dip . 1/2 @violife_foods EPIC garlic & chilli cheddar flavour block, grated 1/2 cup dairy free milk . Make dough by tipping flour and 1 tsp salt into a bowl. In a jug, mix water, yeast, sugar and oil. Add to flour and mix well. Stir through the EPIC grated smoked cheddar flavour block & rosemary. Tip onto floured surface and knead for 10 mins. Place in an oiled bowl and cover. Leave to rise for an hour. Split dough into pieces, around golf ball size. Place in a large cake tin or skillet with a ramekin in the middle to create a ring. Cover & leave to rise for 45 mins. Heat oven to 200•c. Mix soya milk and aquafaba together and brush over the dough. Sprinkle over 1 tsp salt and bake for 30 mins until golden. To prepare, dip warm dairy free milk in a small bowl over a pan of simmering water. Add in grated EPIC garlic & chilli flavour block and stir until thick and creamy. “This Meatless Monday we are going to Sap’s Ver Fine Thai Cuisine is located in the Allandale area of Austin. Tucked in the corner of a busy plaza, this restaurant is known by many in the area. Pictured is the Tofu Pad Sea-ew a savory flat noodle dish cooked with Chinese broccoli. Fried Sap’s rolls, crispy served with sweet dipping sauce. Spinach and Kale Veggie Dumplings served with a soy dressing. Do you ever make your own seitan? If you can eat gluten, seitan can be a great “meat” substitute and is very versatile. I had some left over pie crust from my butter tarts (last post) and decided to try making my own veggie and seitan pot pie! 🥧🥧🥧🥧🥧🥧🥧🥧🥧🥧 ~ Ok let’s start with the seitan here is a simple base recipe that you can springboard from to make many dishes. ~ Seitan ingredients... 2.5 Vital wheat gluten flour 1/3 c nutritional yeast 2 T onion powder 1.5 T garlic powder That’s it! Mix it up good, it will last quite awhile in an airtight container. I just used 1/4 of the mix and I made lots of seitan. ~ When ready to use. Make a well In your seitan mixture and add flavoured water ( I put a veggie bouillon in my water). Add to mixture and combine. Use your hands to knead to a bread dough like texture. Try to pull apart, if too dry add more water. Will have an elastic texture when done. Next I cut mine into chuncks and braised/simmered in veggie flavoured water for 30 minutes to soften and add more flavour. Next I cut my chunks into small dice for my pie. It’s easier than it sounds. I also sliced some thin and made a sandwich with seitan and mustard/mayo - totally delicious. BTW 100 grams of seitan has 22 grams of protein. 🥳🥳 ~ Stay tuned and I’ll show you the end result.
