Clint Davies was only 35 when he was diagnosed with type 2 diabetes in 1986. His mother had died a year earlier as a result of diabetes-related complications. Despite the shock, Davies drew two key lessons from the experience of losing his mother and learning his own health was at risk. First, he started to talk openly about diabetes with his family, friends, co-workers and fellow volunteer firefighters in Estevan, SK. Second, he gave back to his community. As a volunteer firefighter responding to about 75 calls a year, Davies already recognized the importance and urgency of helping others. A friend from work, who had been living with diabetes since he was a boy, encouraged him to pitch in at the local branch of Diabetes Canada in 1987. "I became secretary of the Estevan branch and have been involved ever since,” Davies says. “I’ve met many people over the years volunteering, and have learned a lot." Clint has gone the extra mile and become not only a community role model but a Canadian role model. Wild rice & apple stuffed acorn squash #recipe The sweetness of the apple complements the delicate flavours of squash. Ingredients: 1/4 cup (60 mL) wild rice, rinsed* 2 small acorn squash, halved and cored 1 tbsp (15 mL) plus 2 tsp (10 mL) canola oil 1/2 cup (125 mL) finely chopped onion 2 garlic cloves, finely chopped 2 celery stalks, diced 1 large red apple, unpeeled and diced 1 tbsp (15 mL) fresh thyme Instructions: 1. In glass or metal bowl, cover wild rice with 1 cup (500 mL) boiling water. Let sit covered for 1 hour until kernels pop, and then drain water. 2. Preheat oven to 400⁰F (200⁰C). Brush inside of each squash half with 1/2 tsp (2 mL) canola oil. 3. Place squash, flat side down, on parchment-lined baking sheet. 4. Bake for 30 minutes or until squash is tender. 5. Five minutes before squash finish cooking, prepare stuffing. In nonstick skillet, sauté onion, garlic and celery in remaining canola oil over medium-high heat for about 3 minutes. Add apple; cook for 2 minutes. Add rice and thyme; mix well. 6. Remove squash from oven and stuff with wild rice blend. Serve. Notes: *For convenience, use leftover rice or canned wild rice and omit the 1st step. Have left overs for lunch the next day! On Saturday I had the pleasure of sitting on a panel with some amazing #type1diabetes heroes who are advocates of living active lifestyles with #diabetes. . You all know @KalebDahlgren 🏒 Kaleb received Diabetes Canada’s 2019 Kurt Kroesen National Inspiration Award, which recognizes an individual or family who has overcome great odds to manage their diabetes and who continue to live a fulfilling, active, and inspiring life. Kaleb had started playing hockey at age three, before his diagnosis, and has continued to play at elite levels since then. That meant learning how to change his diabetes care to meet the physical demands of competition and training, which can cause blood sugar levels to fluctuate more dramatically. By working with an endocrinologist, he also figured out an effective formula for food and insulin during and after games. When he was 10, a top team let him go because of his diabetes, but Kaleb did not give up.
