It doesn’t get much easier than this 3 ingredient banana muffin recipe!!! . If you have a pack of @birchbenders paleo pancake mix on hand, I’m sure you have all the ingredients to make these delicious muffins! Just be careful, last time I made this into a loaf and almost ate the entire thing!🤣 Who agrees there is nothing better than warm muffins or bread fresh out of the oven with a crusty top?! You just don’t get that consistency the next day! . Okay, here is the recipe! -1.5 cups Birch Benders Paleo Pancake mix (I’m sure it works fine with their other mixes or even @kodiakcakes mix too) -1/4 cup melted coconut oil -2 large bananas or 300g Masked bananas and mix with oil. Add pancake mix and stir to combine. Bake at 350 for 18-20 minutes. 10g carbs, 3g fiber, 9g fat, 4g protein . Will you try them?

Earlier in the week I made a tomato chili sauce that I served with kidney beans. I set some of the sauce aside as I wanted to experiment with a chili tomato soup. Into the blender it went and then into jars. Baked Chicken Meatballs in Pesto Pasta 🍗🍝😍 .⠀ Credit @themodernproper⠀ .⠀ ⠀ ----⠀ Ingredients 🍱:⠀ 2 lbs ground chicken⠀ 1 cup breadcrumbs⠀ 2 large eggs, beaten⠀ 1 tbsp dried fennel seed⠀ 1 cup finely grated parmesan cheese⠀ 4 garlic cloves, minced⠀ 2 tsp salt⠀ 1 lb Bucatini (or your favorite pasta)⠀ Roasted Broccoli Pesto⠀ -⠀ DIRECTIONS 👩‍🍳:⠀ Preheat oven to 450°F.⠀ In the same bowl, use your hands to combine the ground chicken, salt, eggs, fennel, grated parmesan cheese, garlic and bread crumbs. Using your hands form uniform meatballs about 2 tbsp each** and arrange on a baking sheet.⠀ Roast meatballs for 15 min on center rack. Turn heat up to 500°F and brush meatballs with olive oil. Cook for another 5 minutes.⠀ Toss pasta with broccoli pesto along with some olive oil and top with chicken meatballs. Serve with freshly shaved parmesan. Healthy BROWNIE CUPCAKES w/ collagen! These are so simple to make and truly delicious! with 5g of collagen per serving and you can tweak the nut butter according to what you have. Make them to have this week - any time of the day - because chocolate is life! 😍 Make sure to give this post some love and tag me to reshare your creations! You can choose whether to top with chocolate chips or finish later with a healthy frosting. - Ingredients 1/4 cup coconut flour 1/4 cup pecan butter 1/3 cup raw honey 2 pasture-raised eggs 1/4 cup cocoa powder 4 scoops @vitalproteins collagen peptides 1 tsp baking soda 1/4 tsp salt - Directions Mix ingredients in a food processor (blender would work, too). I use the mini processor by kitchen aid on the puree setting- it’s amazing! (linked in my bio under product links, kitchen tools). Transfer to lined and sprayed muffin tin- makes 8. Bake at 350F for 15 min. Remove from tin, let cool at room temp. Store in a sealed container. 🍫👌🏻

do I meal prep every week? YES am I a good cook? YES do I enjoy meal prep? NOT REALLY do I love having energy (food is fuel!)? YES do I love doing meal prep dishes?
