Back by popular demand: my #Vegan #MealDiary 🍴☺️ In case you’re curious 👉🏼 as far as my nutrient intake goes, I try to eat as close to this ratio as possible: 50% carbs/30% fats/20% protein but my fats are sometimes a tad higher which I don’t worry about too much (I love avocado 🤤) Also, my post workout protein shake is not pictured (I do a scoop of @vega_team Vanila Sport Protein w/ 12oz of coconut water after every training session!) You are going to LOVE this non traditional twist on a favorite classic red beans and rice because it is so delicious and easy! Throw the ingredients into the crockpot, and dinner practically prepares itself. This recipe is loaded with veggies that cook down to a melt-in-your-mouth tender and packed with flavor. INGREDIENTS: 1 pound dried red beans 1 large onion , diced 2 medium carrots , diced 3 celery stalks , diced 1 green bell pepper, diced 5 garlic cloves , minced (about one tablespoon) 1 bunch kale , rinsed and torn, with stems removed 2-3 chipotle peppers, chopped 1 Tbsp smoked paprika 1 tablespoon hot sauce 1 tsp dried thyme 1 tsp dried oregano 1 tsp chili powder 1/2 tsp red pepper flakes 1-2 bay leaves Salt / Pepper , to taste 1 pounds ¼ chicken andouille sausage cut into thin slices (optional) 5 cups cooked brown rice Micogreens or green onions , for garnish INSTRUCTIONS: Rinse the kidney beans and drain. Add all the ingredients (except the rice) to the crockpot. Set the crockpot to low and cook for either 6 hours on high or 10 hours on low (total). Optional: When there is one hour remaining, use a potato masher to go in and mash up some of the beans, then let it cook the remaining hour. Cook the rice in a separate pot, according to package directions. Serve with 1 cup rice in each serving. Decided to do a few days of Intermittent fasting because I feel a cold coming on. I’m doing a 16 hour fast, with an 8-hour feeding window from 12:00PM to 8:00PM.
