You know your digestive health is good shape when you can eat a bowl like this and not have to worry about pain or bloating. I know I keep going on about gut health 🙄, but until you’ve suffered, you won’t understand how much you take a well-functioning gut for granted. That said, bowls like this will always be my favourite! They allow me to get a variety of essential macro & micronutrients in one sitting, and they are very filling. Win-win, right?😜 ~ Legumes are the most common plant-food that people tend to have issues with. If you are a newbie to them, I'll highly recommend starting with split lentils, particularly the red and yellow ones. They are the easiest to digest, and they cook in the shortest amount of time. I'll suggest cooking them until they are very tender and almost mushy. ~ In this bowl, I have wild & white rice, lentil curry, 🥦 & 🥑. To make the lentil curry, you’ll need: 🌿1 medium shallot, finely chopped 🌿2 garlic cloves, finely minced 🌿100g red lentils, rinsed and drained 🌿1 tablespoon tomato puree (paste) 🌿1 teaspoon ground coriander 🌿1 teaspoon Madras curry powered 🌿1 teaspoon ground ginger 🌿1 teaspoon Garam masala 🌿1 vegetable stock cube 🌿½ teaspoon ground turmeric 🌿3 tablespoons coconut milk 🌿1 birds eye chilli (use regular chilli for less heat) 🌿2 tablespoons freshly chopped coriander ~ ✨Heat a tablespoon of oil in a medium saucepan over medium heat. Add the spices and chopped shallots fry for 1-2 minutes until fragrant. ✨Add the tomato paste and garlic and continue to cook for a minute then add the lentils, chilli, stock cube, coconut milk and around 250ml of water. ✨Stir thoroughly to combine, then turn the heat down to simmer and cook for 15-20 minutes or until the lentils are tender. ✨Stir in the coriander, then take the pan off the heat and serve alongside rice or naan bread and any additional veggies of your choice. Already thinking about my leftovers! Yesterday, I filled my belly with white jasmine rice topped with curried veggies. 😛 1️⃣with some olive oil, sauté 1/2 a yellow onion, 1/2 yellow pepper, 3 cloves of garlic, and 1 can of chickpeas (pour out all the water beforehand) 2️⃣ grab a can of coconut milk and DO NOT shake it up. Pour only the top layer of white coconut cream onto the veggies. 3️⃣Add 1-3 tablespoons of green curry paste. Everyone’s spices level is a bit different. Surprisingly, 3 worked for me. 4️⃣ Add two shakes of yellow curry powder. 5️⃣Mix it all together and when it’s warm and ready, throw in some green onions. 6️⃣Serve over a bed of jasmine rice and top with some fennel seeds. 7️⃣ENJOY! 🌱 #eatmoreplants #veganrecipes #veganeats #vegan #vegetarian #vegetarianrecipes #8020 #8020rule #flexitarian

RECETTE DU MARBRÉ 🌿 Hello ! On se retrouve aujourd'hui avec une recette sucrée. Une recette qui a tendance à rappeler notre enfance, le gâteau marbré 🌿 Ingrédients : 200g de chocolat, 3 œufs, 70g de sucre roux, 10cl de crème de soja, extrait de vanille, 100g de farine, 4 cas de poudre de noisettes, 2 cac de levure, une pincée de sel. Recette : faire fondre le chocolat dans un récipient d'un côté. De l'autre mélanger tous les ingrédients . Diviser en deux la préparation puis mettre le chocolat dans une des deux. Turkey Stuffed Bell Peppers⠀ Ingredients⠀ *½ cup brown rice, cooked, or riced cauliflower ("caulirice")⠀ *½ lb lean ground turkey⠀ *2 red bell peppers, cap cut off and seeded⠀ *½ red onion, diced⠀ *4 cloves garlic, diced⠀ *2 Tbsp olive oil⠀ *1 fresh tomato, diced⠀ *2-3 tsp dried basil⠀ *½ tsp dried oregano⠀ *1 jalapeno, diced⠀ *¼ cup parmesan cheese, shredded⠀ *¼ cup Colby jack cheese, shredded⠀ *Olive oil spray ⠀ ⠀ Directions⠀ *Cook brown rice/caulirice as directed⠀ *Preheat oven to 375degrees⠀ *Cut tops off of bell peppers and remove seeds/whites⠀ *Spray oven safe baking dish with olive oil and place cleaned peppers in it⠀ *Heat olive oil in large skillet on medium heat; add onion and garlic and saute until fragrant⠀ *Add the ground turkey to the skillet and brown⠀ *After ground turkey is browned, add tomatoe, oregano and basil, and jalapeno⠀ *Mix well and cook for about 5 minutes⠀ *Add cooked rice/caulirice and parmesan, mix well and blend together⠀ *Once cooked through, begin stuffing each bell pepper with the cooked mixture. Pack tightly in bell peppers.⠀ *Place baking dish (with packed bell peppers) in oven for about 30 minutes⠀ *Remove from oven, sprinkle Colby jack cheese on top, and place back in oven for about 5 minutes until cheese is melted.⠀ *These stuffed bell peppers are so delicious and are great on their own – I honestly ate mine with a bit of sriracha sauce added on!
