The last few days are a bit of a manic, crazy blur... I’ve had back to back meetings all day and then training in the evenings, so literally no time to think! Anyway, that’s not an excuse not to post... last few days have been a bit hit and miss on nutrition. Both days I have a buffet style lunch at work (👉🏻 to see an example of what I have had). The buffet was actually pretty good - there were salads and grains, lean protein, frittata etc so as work lunches go, it was not too bad! But it’s hard to track so I just did my best. Then last night after completing my endurance training I was so tired and hungry...we ended up with fish and chips 😋 Anyhoo...back to it. Today I have had a @lindahls_uk coconut yoghurt with granola & honey, some @myproteinuk bbq crisps, a bagel with @pipandnut peanut butter. "Food is not just fun, it's necessary"....read on...... . . . Contrary to popular belief: Cooking is not difficult; Eating healthy is not boring; and food is not your enemy when trying to better your physical condition (I refuse to say diet because diet typically means for a period of time that has both a beginning and an end). . . . Our bodies want and need to be homeostatic [noun: the tendency toward a relatively stable equilibrium between interdependent elements, especially as maintained by physiological processes]. Think about your heart rhythm; your breathing. All relatively stable...when they're not we typically seek a medical intermediary. If that's the case why do so many of us live above or below our "maintenance" calories? Okay, so maybe you're undereducated on your BMI/TDEE - my advice to you 1. Google (the answer is at your fingertips) 2. Raise a hand and ask a subject-matter expert (not a #fitspo person) 3. Consult with a professional (physician or nutritionist). Acceptable reasons to over eat (or under eat) is NOT cooking is hard; healthy is boring; or lack of time. First of all, we make time for things that are important to us - so shift your priorities and perspective. Secondly, I will smack the "I like living on a caloric deficit all year round" right out of you. Your mental health may enjoy it because the attention you get may be feeding some demons you have lurking - but let me tell you, your body does not enjoy it. Poor nutrition is the root cause for so many ailments and diseases. It interrupts our bodies natural ability to produce hormones, regulate our organs, replace old cells, etc. Struggling with hair loss, brittle nails, poor complexion, adverse cycle experiences (sorry guys, it's reality), mood swings, lack of energy? Shrimp and Asparagus Foil Packs with Garlic Lemon Butter Sauce🔥🔥⁠ .⁠ Shrimp and Asparagus are cooked together in individual foil packs in a rich buttery sauce. The bright lemon pairs perfectly here and the garlic adds so much flavor. Cook them on the grill or in the oven.⁠ ~⁠ 1 1/2 lbs large (21/25) shrimp peeled and deveined⁠ 2 Tbsp dry white wine or chicken broth⁠ 4 tsp minced garlic (4 cloves)⁠ 2 tsp lemon zest⁠ Salt and freshly ground black pepper⁠ 6 Tbsp butter diced into small cubes⁠ 1 1/2 Tbsp fresh lemon juice⁠ 2 Tbsp chopped fresh parsley⁠ 1 lb medium thickness asparagus woody ends trimmed⁠ Preheat a grill to medium-high heat (about 400 - 425 degrees). Cut 4 sheets of 14 by 12-inch heavy duty aluminum foil then lay each piece separately on countertop.⁠ Divide shrimp among packs near center then place asparagus to one side of the shrimp (going the long direction of the foil). Pour 1/2 Tbsp white wine over each. Sprinkle over garlic (1 tsp per packet) and lemon zest then season with salt and pepper. ⁠ Divide butter pieces evenly among packets layering them over the shrimp and asparagus.⁠ Wrap packets in and crimp edges together then wrap ends up (don't wrap too tight - keep a little extra space inside for heat to circulate). Dear Body,⁣ ⁣ I hate that I put you through the ringer in the past, used a generic templated meal plan to feed you, neglected to provide you with all the major food groups, squeezed into clothes that did fit, skipped meals, sucked you in, over-trained you, caused you fatigue, poor sleep, additional stress and wanted to shrink + mold you to the point that I failed to listen to what you were trying to tell me.⁣ ⁣ I am no longer a size 2.⁣ I am no longer 127lbs.⁣ I am no longer a size small shirt.⁣ ⁣ But want to know what else I am no longer?⁣ ⁣ Starving.⁣ Restrictive.⁣ Obsessive.⁣ ⁣ I am now a size 4.⁣ I am now 135lbs.⁣ I am now a size medium shirt.⁣ ⁣ It took me gaining a few pounds to FINALLY be thankful for my body. It gave me the FREEDOM and permission I needed for myself to live life guilt free, with no obsession over the scale and food + to live FULLY because I can now put my energy towards seeing all the things you have done for me + do for me, not how small I could get you.⁣ ⁣ Thank you, body. Thank you so fucking much for hanging in there with me while I learnt things the hard way + didn’t treat you like you deserve. Thank you for helping me okay with throwing away old clothes that don’t fit me and not being ashamed in my skin.⁣ ⁣ With you, I can...⁣ ⁣ Squat heavy + deadlift heavy.⁣ Walk around downtown Virginia Beach.⁣ Hike trails + mountains and camp.⁣ Hug my husband extra long + adventure with him.⁣ Give my client’s my FULL self + brain power.⁣ Teach my clients how to properly lift weights.⁣ Enjoy food + eating out without stress.⁣ Look at you + see strength and resilience.⁣ ⁣ You will see my story’s lessons come out in my coaching.⁣ My past makes me extremely aware + present.⁣ This is what makes me unique + different.⁣ I can empathize with experiences + emotions.⁣ I am able to help guide clients through similar situations.⁣ ⁣ Everyone’s story will be different, but this is mine.⁣ I wanted to share it with you + hope it resonates. 🖤

Recycling at its best. These two pieces were originally one. Forged from an old agricultural " neep" knife that had seen better days. Two rustic kitchen knives. Honey Garlic Steak Bites 🥩😍 Eat or Pass? 😋🤤😍 📷: @cookingclassy 👌 Check out @organicallyca for daily recipes 🍏 ---- Ingredients 🍱: 1.5 lbs sirloin steak, fat trimmed, diced into cubes just under 1-inch 1/3 cup low-sodium soy sauce 3 Tbsp honey 3 garlic cloves, minced (1 Tbsp) 2 Tbsp olive oil or vegetable oil Green onions or sesame seeds, for garnish (optional) ----DIRECTIONS Place steak pieces in a gallon size resealable bag. In a mixing bowl whisk together soy sauce, honey and garlic. Pour over steak, seal bag while pressing out excess air then rub marinade over steak. Transfer to refrigerator and let marinate 1 - 2 hours. Heat 1 Tbsp oil in a heavy non-stick skillet over medium-high heat. Remove half the steak from marinade, transfer to skillet (spaced apart) and let sear until golden brown, about 1 minute then flip to opposite side. Let continue to cook to desired doneness, about 1 minute longer (internal safe temperature is 145 degrees). Transfer to a plate and repeat with remaining steak. MONTHLY MEAL PLAN IN OUR BIO⠀ .⠀ Follow us (@simplyfitsociety) for more⠀ .⠀ By @real.foodie⠀ .⠀ THAI-STYLE RED CURRY WITH ROAST CHICKEN + BROCCOLI:⠀ Leftovers from your roast? Make a Thai style curry! For this I used some leftover roast chicken and some mini roast potatoes! 🖤⠀ -⠀ Save this down for later 😋⠀ -⠀ Tag a friend that needs to make this for you! 🤤⠀ INGREDIENTS⠀ 1 can coconut milk⠀ 2 tbsp natural yoghurt⠀ 2-3 tbsp Thai red curry paste⠀ 1 piece ginger (thumb size – minced)⠀ 1 garlic clove (minced)⠀ 2 shallots (sliced)⠀ 1/2 chicken stock cube⠀ 2 cubes frozen spinach⠀ Handful frozen edamame beans⠀ Leftover roast chicken (I used 2 legs)⠀ 12 mini potatoes (I used leftover roasted whole mini potatoes)⠀ 150g tenderstem broccoli⠀ 20g coriander – roughly chopped (reserve some for garnish)⠀ 10g basil leaves – roughly chopped (reserve some for garnish)⠀ Salt and pepper to taste⠀ (serves 2-3 people with leftovers)⠀ ——⠀ METHOD⠀ 1 – fry shallots until soft, then add the ginger and garlic. Stir around for 20 seconds or so, then mix in the Thai red curry paste (the stuff I used was actually rather spicy, so taste as you go and adjust to your spice levels!), stir everything around for up to a min to cook out the spices.⠀ •⠀ 2 – pour in the coconut milk and add the frozen spinach, bring to a low boil. Crumble in your chicken stock cube. Once the spinach has thawed turn the heat right down and add the the tenderstem broccoli, submerge in the sauce. Cook for 3-4mins.⠀ •⠀ 3 – add in the frozen edamame beans, the leftover cooked potatoes and roast chicken. Warm everything through for a few mins then adjust spice and seasoning (I stirred in some natural yoghurt at this stage, because it was a little spicy for me haha!). Stir in herbs, salt and pepper. Garish with extra basil and coriander and serve with naan or rice (or both!).⠀ •⠀ Note: if using raw ingredients (instead of leftovers) add the potatoes during step one, and the chicken at the end of step two – simmer until potatoes are tender (but not too soft) and chicken is cooked through.

Low-carb, high protein, easy chicken stuffed zucchini boats😍💪🏼 . By @feelgoodfoodie ⠀⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS 3 zucchinis Cooking spray 3/4 lb. chicken breast cut into cubes 1 Tbsp olive oil 1/4 tsp Italian seasoning 1/4 tsp garlic powder 1/4 tsp salt 1/4 tsp ground black pepper 3/4 cup pasta sauce 1/4 cup grated parmesan cheese 1/4 cup shredded mozzarella cheese INSTRUCTIONS Preheat oven to 400°F. To prepare the zucchini, cut the zucchini in half lengthwise, then use a spoon or melon baller to scoop the center flesh and seeds from the zucchini. Repeat for the remaining zucchini. Place the zucchini in a baking dish or cookie sheet cut-side up and lightly coat with cooking spray. Place in the pre-heated oven for 15 minutes until the zucchini cooks slightly and becomes tender. Meanwhile, to prepare the chicken, heat the olive oil in a large non-stick skillet over medium-high heat. Add the chicken along with the seasoning, salt and pepper. Cook for 8-10 minutes until the chicken is cooked through. Add the pasta sauce and cook for an additional 2 minutes, stirring occasionally. Scoop the chicken mixture into the zucchini boats. Top the chicken with parmesan cheese and mozzarella cheese. Return the zucchini boats to the oven for 5 more minutes, or until the cheese is melted.
