Scrumptious healthy delicious summer salads. I do love comforting winter ingredients and all the tasty dishes one makes with root vegetables and pulses and all things rich and satisfying.. But What I love about summer... and all summer long... is the fantastic vibrant variety of colours and flavours that we can throw in a bowl and squidge together with just about anything we fancy. AND Call it salad :) I’ve been out for ‘salad’... and unfortunately in the most part.. I’ve been face with either a bowlful of grains with a token ribbon of cucumber (yes that actually happened) or a limp lettuce and cucumber affair with some tinned fruit if they’re feeling generous. I know strictly speaking you’d probably be a tad hacked off if all you got was THIS for lunch! Right? This is just my lunch.. and it suits me. But think poke bowls and Buddha bowls and the components within. Roughly translated it means ‘just enough’ .. Just enough of anything! Why not! It’s also a delicious opportunity to blend together everything YOU like, to make your personal combo dream bowl that you can munch through and enjoy right to that last slurp from the bottom.. yes I slurp all the yummy juices from bowl! What do you take me for... a princess?! 👑🌈🚫 This is my favourite combo... Water melon Ginger Turmeric Tomato Cucumber Nectarine Charentais melon Lemon verbena Mint Chives Basil Sunflower seeds Walnuts Olive oil Freshly cracked black pepper Pinch of gros sel and a splash of Balsamic (please only the good aged stuff) Give it a squidge and a few turns in the bowl. I’m sure I’ve forgotten one or two.. but I promise this is delicious. Last night we hosted our first fully plant-based dinner party for some of our best friends! We are so thankful to have such supportive friends in our lives. We made a roasted cauliflower and arugula salad topped with cranberries and pumpkin seeds. I posted the recipe below! The main course was vegan ricotta stuffed pasta shells by @loveandlemons. This is the second time I’ve made this recipe, and it was a real crowd pleaser! Roasted cauliflower and arugula salad: For the cauliflower: 1 cauliflower head, cut into small florets 1/4 tsp black pepper 1/2 tsp red pepper flakes (optional) 3 tbsp high quality olive oil (first cold pressed) 1/2 tsp salt (or to taste) 1 tbsp nutritional yeast (optional) 1/2 lemon 2 tbsp pumpkin seeds Optional: add 1/2 tsp mango powder (I buy mine from @amazon). It adds a tangy flavor to dishes For the salad: 1 handful of fresh arugula per person Dried cranberries Pumpkin seeds Preheat oven to 425 Cut up the cauliflower into small florets and place in a large bowl. Add olive oil, lemon, and remaining seasonings above. Toss until cauliflower is evenly coated. Bake for 15 minutes. Remove from heat, stir, sprinkle 2 tbsp pumpkin seeds. Broil for 5 minutes on top rack, or until golden. Place fresh arugula in a bowl. Add the cauliflower, 1 tsp olive oil, a sprinkle of lemon juice, 1 tsp balsamic vinegar and toss. Last night dinner was another salad! I had a big bowl of shredded romaine lettuce over from a meal I made for company that needed to be eaten. I topped it with leftovers from that meal. . I love to make ethnic food when entertaining because it’s so easy to serve omnivores a whole food plant based meal and have them not miss the meat. Latin American food has so much flavor and color. If you set up a buffet everyone can fix a burrito bowl to their liking. It’s fun and easy. . Here is what went on my salad - Mango salsa, fresh salsa - both homemade, Refried black beans made from scratch, fresh corn cut from the cob, brown rice, pinto beans, fresh lime juice, green onions and fresh cilantro. Hello, beautiful people, Let's make cheese today!🧀🌿 So easy and so satisfying! Perfect on a crunchy bruschetta with fresh tomatoes or whatever veggies you like✨ This one will be included in my "Meal Prep" Highlights as it is just the most perfect thing to cook for the week ahead! Experiment with adding sundried tomatoes, olives or capers to it if you want. But here is my basic recipe! ⠀ Herbs & Garlic Cashew Cheese -------------------------------------- Part 1 150g of raw cashews (covered with boiling water, set to soak for an hour, strained) 150ml fresh water 2 Tbsp of nutritional yeasts 1,5 Tbsp of lemon juice (to taste) 2 garlic cloves 1 Tbsp of olive oil 1,5 Tbsp of tapioca starch salt, pepper (to taste) ⠀ Part 2 1 Tbsp of chopped fresh basil leaves 1 Tbsp of thyme leaves ⠀ Method: 1. Put all ingredients from Part 1 into a high-speed blender and process for 2-3 minutes until smooth and silky. (Swipe left to see some photos of the next steps) 2. Pour the mixture into the pan, add herbs from Part 2, mix well and bring the pan to medium heat. Stir frequently with a silicone spatula for 3-5 minutes, until the mixture will thicken. Fold the cheese into a ball shape and transfer into a lightly oiled bowl. Cover with a plate, let cool a bit and then put in a fridge overnight. Enjoy in the morning! 💫

Check out the recipe:⠀ ⠀ But first follow @bowldreams for more free recipes!⠀ ⠀ ​Recipe: Bring 3.5 cups water to a boil. Reduce to simmer and add juice 1 lemon and about 15 crimini, baby Bella or white mushrooms (washed and slightly trimmed). Simmer for 3 minutes before draining. Allow to cool.⠀ Prepare salad: 1/2 small cucumber (chopped), about 15 baby tomatoes (halved), 1/2 of 1-15oz can rinsed and drained garbanzo beans (or 1 cup cooked), 1 small bunch kale (chopped), handful fresh watercress (optional).⠀ Dressing: blend on high: 4 tsp apple cider vinegar, 2 tbsp water, juice 1/2 lemon, 2 tbsp tahini, 1 tbsp Dijon mustard, 1 tbsp maple syrup, 2 minced cloves of garlic, about 2 tbsp fresh parsley (optional), salt/pepper to taste. In a large bowl, pour some of the dressing onto the kale and massage until kale has wilted a little. Mix in chopped veggies, marinated mushrooms and remaining dressing. I’ve left for school so I won’t be able to make as many of my own meals, but I still have a few saved up from home! This was a super yummy breakfast that was also filling (mainly because of the almond flour). I’m so glad I made so many extra bagels to freeze because it makes for such a quick and easy breakfast. (Find bagel recipe on earlier post). On this bagel I put @kitehillfoods original cream cheese and some extra @daksspices everything bagel seasoning. This is what I eat when my stomach HATES me 😭 Been feeling the after effects of high FODMAP food over indulgence... FFS, its just not right feeling ill after eating veggies and fruit is it?! If I was swigging vodka straight from the bottle maybe, but apples, butternut squash, ripe bananas, onions and garlic? Here's a message to my gut - you suck 🖕🙄 I always go back to basmati rice when I feel the full effects of my IBS, it seems to be my medicinal food. People avoid white rice because they seem to think it nutritionally empty and devoid of fibre, but for me the lack of fibre is a really good thing 🍚 I cook my rice in my instant pot because it's quick, easy and I always get perfect results. Today I added a turmeric, cinnamon and a cardamom pod to some basmati rice and water then topped it off with some cranberries, pumpkin seeds and a drizzle of maple syrup. This should help settle it a little, although I have some medium fodmap food to eat for lunch, which was yesterdays leftovers.... Tag a friend that would love to eat this Chestnut Mushroom Dumplings in Tangy & Spicy Chili Oil Sauce by ⁣@legallyplantbased RECIPE⁣ Dumplings:⁣ 250g Chestnut mushrooms, finely chopped (or other button mushroom)⁣ 250g Napa cabbage, finely shredded⁣ 3 scallions, finely chopped⁣ 1/4 cup cilantro, finely chopped⁣ 2 garlic cloves, minced⁣ 1 tbsp grated ginger⁣ 1 1/2 tbsp light soy sauce⁣ 1/2 tsp chili flakes⁣ salt to taste⁣ 3 tsp sesame oil⁣ 30 dumpling wrappers ⁣ Sauce:⁣ 1 1/2 tbsp black Chinese vinegar ⁣ 2 tbsp light soy sauce ⁣ 1-2 tsp dried chili flakes⁣ 1 tsp coconut sugar⁣ 1 tsp grated ginger⁣ 1 scallion, finely chopped⁣ 1 1/2 tbsp rapeseed oil⁣ ⁣ Garnish:⁣ Sesame seeds and scallions ⁣ ⁣ DUMPLINGS:⁣ Heat 1 tsp sesame oil in a pan and fry garlic, ginger, scallions and Napa cabbage on medium heat until the cabbage is soft and all liquid has evaporated. Place in a bowl and set aside.⁣ Heat 2 tsp sesame oil in the pan and cook mushrooms on medium heat until slightly golden. Stir in with the cabbage and the remaining ingredients and let cool slightly.⁣ Wet the edges of the wrapper with water and place a bit less than 1 tbsp of filling in center and fold in half-moon shape. Then, bring the two ends together and press firmly.⁣ Cook dumplings in batches in boiling water covered until they float to the top. Place dumplings on a plate ⁣ SAUCE:⁣ Heat the oil in a pan then remove pan from heat. Add all remaining ingredients and mix well. Spazzolino è un cane pastore che per anni ha trattato tutti noi, umani,canidi e felini, come delle pecore. Finalmente aveva il suo personalissimo e speciale gregge! . Quando è arrivato Turlo, l'agnellino di 3 mesi, ora un montone di quasi 3 anni, non gli è sembrato vero. . Una pecora da raggruppare e dirigere tutta per lui! . Tag a friend that would love to eat this Creamy spinach pasta by @alexafuelednaturally Ingredients: 1 box pasta 1/2 Can white besns (I used great northern beans) 1 cup cashew milk 2 tbsp nutritional yeast 2 cups spinach , chopped 1/4 cup raw cashews (optional...) 1 tsp garlic powder 1/2 tsp salt 1/4 tsp pepper Chili pepper flakes (optional Cook pasta according to directions on package. Combine the remainder ingredients (except spinach) in a blender and blend until smooth. Add more cashew milk if needed. In a pan heat 1 tsp avocado oil and add chopped spinach, season with salt and pepper. This should wilt down in only 30 seconds! Once pasta is cooked drain add to cooked spinach and add in the sauce. Spazzolino.... Gli abbiamo dato questo nome perché dopo averlo recuperato al canile era ancora pieno di nodi. . Era dentro da sole 2 settimane ma dato che era stato investito aveva ancora una coscia aperta e che faticava a rimarginarsi nella ferita. . Quindi non avevano potuto lavarlo e tosarlo. . Era un cane sicuramente abbandonato in un campo dove tenevano le pecore o forse, come era stato ipotizzato dai veterinari che lo avevano recuperato, era caduto da un pick up dei pastori. . Lo hanno recuperato che correva a perdifiato dietro a delle macchine su una strada a rapida percorrenza. . Era disperato e si capiva che stava rincorrendo qualcuno o qualcosa. Il suo gregge, il suo padrone, il suo gruppo. . Nonostante la coscia aperta correva a perdifiato. Ci hanno messo un bel po' per recuperarlo. . Lo abbiamo preso con noi dopo 2 settimane di canile e si presume 2 anni di catena e di zero vita in casa e mai un bagno o una spazzolata. . Lo ha lavato Paolo e ha tagliato tutti i nodi, ma non essendo un tosatore e nemmeno Edward mani di forbice. ..beh è uscito fuori come uno spazzolino usurato. . Era buffo e tenero e imbarazzante al tempo stesso... There is nothing quite like a smoothie! It has been a lazy day of indulgence including breakfast and coffee out, hours of Sea Change watching and a smoothie for a late lunch. We will have hummus for dinner. Woke up this morning feeling a little like I have been hit by a 18 wheeler truck so decided that the day was going to be one that was full of nothing but rest. We even made an executive decision that the kids would not do their jobs and I would not clean up the front garden as was was my intention. Vegan Grilled Cheese! 📷 @lucy_and_lentils Ingredients: 2 slices seeded sourdough 3 tbsp kimchi 2 tbsp homemade pesto 50g vegan Pizza Cheese pinch salt Method you can use a toastie grill to get the deep lines however you could do this with a skillet, a simply frying pan with a little oil, or under the grill Add the slices of sourdough to the grill to toast on the inside first. Once toasted, load it up with the kimchi, followed by the slices of 'cheese' then layer the other slice with homemade pesto and pop on top (pinch of salt & pepper optional) Place the loaded sandwich into a toastie grill, pan or under the oven grill to toast the outside and melt the cheese. Yummy Spinach Wraps With Crispy Oven Baked Potato Fries . Recipe by @elavegan . Spinach Wraps Recipe: 1 cup chickpea flour also called garbanzo bean flour (120 g) 1/2 cup tapioca flour/starch (60 g) 2 oz fresh baby spinach leaves (60 g) 1 - 1 1/8 cup water (240-270 ml) 1/3 tsp salt Instructions Process all ingredients in your food processor or blender until the batter is smooth. Use 1 cup of water if you plan to make thicker/smaller tortillas for tacos. Add about 1 1/8 cup of water if you want to make thinner/bigger tortillas for e.g. burritos. Pour about 1/3 cup of the batter into a non-stick skillet. You can add a few drops of oil to the skillet but I made the experience that the tortillas turn out great without oil. Make sure to use a non-stick skillet. Cook for two minutes on low-medium heat, flip the tortilla and cook on the other side for about one minute. Baked Fries Recipe: 1 large baking potato 1 tablespoon olive oil 1/2 teaspoon paprika 1/2 teaspoon garlic powder 1/2 teaspoon chili powder 1/2 teaspoon onion powder Directions Preheat oven to 450 degrees F (230 degrees C). Cut potato into wedges. Mix olive oil, paprika, garlic powder, chili powder and onion powder together. Coat potatoes with oil/spice mixture and place on a baking sheet. Peanut Butter stuffed Brownie Balls?.... Brownie Base Berry Cheesecakes?.... Brownie Tarts with a Coconut Cream and Berry or Peanut Butter filling?.... Caramel Mocha Bites 3/4 cup Dried Dates, soaked in just-boiled water for 15 minutes, drain before using 2/3 cup Almonds 3 tbs Raw Cacao Powder 1 tsp Instant Coffee mixed with 1 Tsp Water Pinch of Pink Salt 18 squares @loving_earth Caramel Chocolate 2 tbs Raw Cacao Butter . *ingredients from @thesourcewollongong @thesourcebulkfoods ♻️💚 . Process almonds to a meal consistency, pulse in cacao powder and salt, then dates and coffee mixture. Process until combined Roll mixture into balls and pop into the freezer to firm up for a few hours Once firm, melt caramel chocolate with cacao butter and stir until smooth. Stab a toothpick into a ball, dip in and out of the chocolate, allowing the excess chocolate to drip off, use a fork to push ball off toothpick onto a lined tray, and repeat with remaining balls.
