After one month spent in Japan 🇯🇵, people ask me which food I missed the most. As Italian 🇮🇹, they expect me to answer something like pasta 🍝 or pizza 🍕... Well, they are quite surprised when I answer "a good big bowl of salad" 🥗😍 (made in my way of course 😉) I eat salad as a full meal. Usually people think about salad just as bland green leaves 🥬, but there are lots of ways to make a salad great and not boring. 👍 Here, I used lamb lettuce, lettuce, orange peppers, prawns, radish, plum tomatoes, red onions, cucumber, salt, pepper, red wine vinegar and extra virgin olive oil. Also, the condiment: I don't use any salad sauce such as Caesar sauce or similar. The reason is that the sauce covers the flavour of the vegetables (which is quite delicate) and also adds too many calories to the dish. Fruity colourful toast this morning ♥️. I definitely eat with my eyes 😍. Even if I dropped off my kids super early this morning and am eating breakfast by myself, I take 3 minutes extra to make my food look good. It just makes me happy and it somehow even tastes better like that 😉. This is my regular buckwheat toast topped with hazelnut almond butter, fresh blackberries, blueberries, raspberries, and bee pollen. Happy Thursday ❄️❄️* * Un petit déjeuner coloré pour moi ce matin parce que je mange réellement avec mes yeux 😍. Même si je suis seule pour manger parce que je suis allée reconduire mes deux enfants vraiment très tôt, je prends le 3 minutes de plus qui est requis pour rendre mon assiette jolie. C’est comme si ça goûte meilleur comme ça 🤔. Ce déjeuner est composé de mes craquelins au sarrasin (que j’affectionne ces jours-ci) réchauffés et tartinés de beurre d’amandes et noisettes. HOT COCOA COOKIES 🍫✨ All the chocolatey goodness with a melt-in-your-mouth marshmallow center 🥳 These just may be the only cookie you need this holiday season 😉💯 bold statement, but I’m sayin it 💃🏻⁣ *⁣ 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:⁣ 1 1/2 cups almond flour⁣ 2 eggs⁣ 1/3 cup coconut sugar ⁣ 1/3 cup cacao powder⁣ 1/4 cup coconut oil, melted⁣ 1 tsp vanilla⁣ 3/4 tsp baking powder⁣ 1/2 cup mini chocolate chips⁣ ~ 1/4 cup mini marshmallows ⁣ *could add peppermint extract if desired⁣ (1-2 tsp) ⁣ 𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬:⁣ 1. Whisk eggs and sugar together, then add in coconut oil & vanilla⁣ 2. In a separate bowl, mix flour, cacao powder and baking powder. Combine wet and dry ingredients, then mix in chocolate chips⁣ 3. Refrigerate for 30 minutes. ⁣ 4. Preheat oven to 350 degrees & line a baking sheet with parchment paper. Use an ice cream scoop to make 12 cookies. Place 2 marshmallows in the center of each cookie, then roll into a ball so the marshmallow is hidden in the center (could try 3 marshmallows for an extra gooey center) ⁣ 5. Bake for 13-15 minutes .
