Listen to your body. If you’re hungry, eat. If you’re not, don’t. I’ve been all about mindful eating lately and it’s kinda a game changer... • SWEET POTATO NEST | red sweet potato, arrowroot powder, scallions, and sea salt. #Spiralize your red sweet potato and toss in a little arrowroot powder with scallions. Lightly cost sweet potato evenly in powder. Shallow fry in preferred oil on med/med. high heat in a small pan. Flip nest and continue to cook until crispy. May have to flip a couple times to brown evenly. Tip: Turn the fire down to med. low if browning too quickly. No Bake Creamy Chia Chocolate Pudding Pie with roasted pecan crumble crust and warm ganache topping in adorable small glass ramekins. What contrasts! Warm, Cool. Creamy, Crunchy. Sweet, Salty. No processed sugar, vegan and gluten and grain free. Pudding easy to make, pour 3/4 cup almond milk, 1 tsp vanilla, 2 Tbs agave, 4 Tbs chia seeds and 1 Tbs cocoa into mason jar. Stir until well combined and let sit in fridge for six hours or overnight. Then in food processor, grind about 1 cup roasted salted pecans with 1/2 cup coconut flakes, 2 Tbs melted vegan butter and 1 Tbs agave. Add more melted butter or agave if not sticking together enough. Press into bottom of 3 small glass ramekins. Rinse out food processor and add chia pudding along with another 2 Tbs melted vegan butter (or melted coconut butter). Blend until smooth and no more chia lumps. Spoon the chia pudding over top of the crusts. Chill for at least another 2 hours. Before serving, melt about 1/4 cup chocolate chips with 1 Tbs plant milk, 1 Tbs agave, 1/2 tsp vanilla and 1 1/2 Tbs vegan butter. You can heat in microwave for 20 sec. Whisk with fork. Microwave for 10 second bursts, whisking between, until smooth. Pour over pudding layer. Moroccan Lamb Patty • I mixed ground lamb with a paste made of cilantro, garlic, ginger, onion, cumin, coriander, turmeric, cinnamon, cardamom, allspice, chili pepper, black pepper, sea salt, and golden raisins. I portioned the mixture into large patties but you could make sliders or meatballs instead. Want to make a healthy meal? Containing little to no processed ingredients? But don't want to take a lot of time? Many of us can relate for one reason or another. Today I made a meal from scratch that took less than 30 minutes. The ingredients were antibiotic-free chicken breast coconut aminos or soy sauce honey and orange ginger garlic sea salt tomato paste and pepper and red chili peppers (the ones that go on the pizza). Sounds pretty simple right? Take all of those ingredients and put into an instant pot cook for 10 minutes on manual high pressure, then you quick release and if you want to thicken the liquid you can simmer it on the simmer button and adding arrowroot powder mixed with water as a thickener super easy. Then you can top it on rice or in my case cauliflower rice which is shown in the photo. Made this for the first time tonight and other than it being a little spicy and I'd probably back down on the chili pepper seeds it was pretty good. The fact that it had no processed ingredients and was cleaner than what you could get at the store I really liked it now I just have to wait to get the report card back from the husband who took it to work for dinner tonight. So this is to let people know cooking a healthy clean ingredient meal does not have to take ours slaving away in the kitchen. Doesn't take a lot amount of time and for those lazies including myself that go... nevermind I'll just go through the drive-thru and pick something up because I'm in a hurry, I'm too tired, whatever... if you've got the ingredients just toss it in and you have dinner. Honestly it took less than 30 minutes!! ***Recipe*** Our IP turkey from last night is even more delicious today, fyi. If you reheat it IN the gravy it doesn't dry out at all 😍 This is super easy, but huge flavor payoff! Instant Pot Turkey Breasts with Gravy 1 cup water 2-4lb bone-in skin-on organic Turney breasts 1 yellow onion (about medium), chopped 4-6 fresh garlic cloves, peeled 1 palmful of each: *oregano *lemonbalm *dill *ground mustard *paprika *sea salt 1 tsp turmeric 1 bay leaf Gravy: 4 tbsp grass fed butter or ghee 3-4 tbsp tapioca starch (depending on how thick you like your gravy) Reserved turkey drippings. In a bowl, whisk together all the herbs and spices (except for the bay leaf). Sprinkle all sides of your turkey with the spice mix, lifting the skin of you can to season underneath. In the IP, add water and cooking rack. Place in your season turkey and top with onion and garlic cloves. Use the Pressure Cook setting on Normal, and set time for 29 minutes. Allow the pot to naturally release for 15 minutes once timer goes off. *Note: don't leave it on "warm" for 45 minutes ... your bird will get a bit chewy 🙄 but still delicious!! Don't ask me how I know ... To make the gravy: After removing turkey, switch IP to saute. With a potato masher break up any solid bits of onion or garlic that remain. *You could also strain the juice if you want, but I feel there's more flavor this way and I don't mind the occasional lump. In a small sauce pan over medium heat, melt butter (you can let it brown every so slightly, it tastes AMAZING!!) and whisk in tapioca starch. Once the turkey juices have started bubbling, slowly stir in the slurry (butter & tapioca starch). Whisk until it's combined and thickened. Serve warm over turkey, mashed cauliflower or sweet potato, veggies, a spoon, your hand ... I digress. It's really really tasty! 😋 BONUS: Steam up some frozen cauliflower and puree it in the food processor with a ladel full of gravy. OMG, it is so delicious, and the texture is great!!! 😍 If you try this recipe, tag me! I would love to see and how it turns out 😁

#humpday needed some extra somethin somethin to push us all through. I made myself a rare midday cup of creamy grassfed butter coffee and these grain free, sugar free, chewy, melt in your mouth Peanut Butter Cookies. I ate at least 5...and didn't feel too guilty. Recipe ⬇️ recipe adapted from @suburban_simplicity Ingredients 1 Tablespoon coconut flour 1/2 teaspoon baking soda 1/4 cup almond flour 1 cup salted peanut butter 1/2 teaspoon vanilla 1/4 cup honey - 1/4 coconut sugar 1 large egg Extra coconut sugar for sprinkling Instructions Preheat oven to 350 degrees. Line cookie sheet with parchment paper or Silpat mat. In a medium bowl, combine coconut flour, baking soda, and almond flour and mix well. Create a well in the dry ingredients. Add peanut butter, honey, coconut sugar, vanilla and the egg to the dry ingredients and mix together until all ingredients are incorporated. Roll into small balls, roll in extra coconut sugar and crisscross the ball with a fork. Cook 8-10 minutes and then cool on wire racks.

Far from improving health outcomes for women, low fat diets have seen our risk of cardiovascular disease increase. Currently white women are experiencing the greatest declines in life expectancy, and much of this is due to us being told to eat low fat and increase ‘healthy’ whole grains. . I have just listened to an excellent podcast The Adventures of Keto Woman with Daisy Brackanhall, where she interviewed Nina Teicholz. It’s really beginning to hit home with me that the health outcomes for women from the standard American (or Australian) diet have been largely ignored. Studies since the 1970’s have shown that women who have higher cholesterol are MORE likely to live LONGER. Many funded studies done on women that have shown zero or adverse outcomes for women on a low fat diet have been ignored and buried. . As I woman it makes me angry. You would think that the health outcomes of the gender that carries our next generation (and the eggs of the one after!) should be of vital importance. It may be possible that a man could do fine on a low fat diet, as long as they also didn’t eat too much crap and lifted weights. But for women, and for our growing children, we need fat. . Nina’s book The Big Fat Surprise is a must read. But also google her name and watch the many lectures she has given on this subject. Or find this podcast and listen to it in the car when you’re driving around. But be careful, it will make you angry too. But we need to get angry if we want to see this all change for us. . Challenge everything. Ask, where is the evidence? I love making healthy, whole, plant foods that are filling, natural, organic and nourishing. You feel so different after eating a plantbased meal than you do a conventional meal. You feel lighter and digestion is easy. Just don’t forget to load up the volume on your plate much more than you normally would.... make sure to get enough calories because plant foods are less calorie dense than conventional foods. This is why most people complain they are always “hungry” when they try to eat plantbased. The fam wanted fajitas tonight so I opted to make a fajita salad and skipped the tortilla. Eating keto/healthy doesn’t not need to cost you an arm and a leg. Spent 51.19 and saved 43.89 at #publix tonight. I got some treats, some good fats, some yummy meat, salad, veggies, keto friendly pasta, almond milk , and pickles (gotta love that pickle juice when you’re cramping). There are multiple meals that can be made with these things alone and with just a couple added veggies there aren’t even more possibilities for only a few more dollars. So don’t talk yourself outa doing keto or eating healthy because you think it’s too expensive. Join couponing groups and review your flyers for great deals, I love publix when they have their bogo sales. My biggest advice would be start simple, make easy meals and don’t start with keto alternatives of all the baked goods you use to have. Also don’t make the food you use to have be your reward system i.e. planned cheat meals. I’m still learning myself so always looking for new recipes, news advice, and motivation 😊👊 Feel free to share any tips you may have as well. 🥗🍗🥚🧀🥦🥑🥒📝

A bit of a late post but here is our Mother’s Day treat! 🌸 We made this triple layer “Peanut-butter Cup Torte” to spoil our mama bears 🐻 with a #glutenfree almond butter #brownie base + a peanut butter #mousse centre + a #chocolate #ganache mousse for the top! We used @organicmeadow #grassfed #organic whipping cream for both of the mousse layers! For the brownie base we used the SAME recipe from our previous brownie post! (Brownie recipe in highlighted story)... We had to leave this cake in the freezer overnight to set, so the mousse layers turn to ice cream 🍦 which makes the cake creamy and refreshing! Unfortunately we didn’t get the chance to video all the steps for this post but stay tuned for the full details coming soon! Hope you all had a fabulous weekend with your mama’s! 💕
