This is a super quick version of a #chicken #jalfrezi! Fry 1 white #onion with 2 cloves of #garlic in 1 tbsp of #oil. Mix 6 chopped (boneless & skinless) #chickenthighs with 2 tbsp #tumeric and 1 tsp #chillipowder (less if you’re not keen on spice) stir until all the chicken is coated. Turn the pan to a medium heat and add the chicken, cook until browned on the outside. Add 1.5tbsp #cumin, 1 tbsp #groundcoriander and 1 tsp #groundginger with 3/4 a can of #tomatoes, stir well. Cover the pan and cook for 20 minutes checking occasionally to make sure it’s not too dry. Cook the #rice according to packet instructions. Ginger is a welcome addition in the winter months. Not only does it help warm the body, it also aids in thinning thick mucus, soothe upset stomachs, calms morning sickness, and aids in digestion. While fresh ginger is more potent, ground, candied and dried ginger works just as well. Be forewarned that ground ginger can be hot to some, whereas fresh ginger can be warming. To aid upset stomachs, add a pinch of ginger in 7-up or Sprite. Sprinkle it in your favorite teas or add it into your coffee with ground cinnamon. We love to sprinkle it into our favorite dish or soup. It is delicious in stock and can be added to elderberry syrup. You don't need a lot of this wonderful herb to reap its benefits! These benefits can be passed through mother's milk for infants with upset stomachs. It can be given in cookie form to young children. In the kitchen and just whipped this up. And as you can see I’ve had a slice. This is a ginger and coconut loaf. I’ve been trying out ground ginger and it works. In a large pot place 1 cup of #rawcashews - 1 whole chopped #whiteonion - 1 large chopped #organic #carrot - 1 heaping tbls #tumericpowder and 1 tbls #groundginger with #seasalt #blackpepper #thyme #rosemary and any other spice you’d like to use for taste... add 4 small cups water and bring to a boil until hard ingredients go soft. Reduce heat to low, adding already cooked #butternutsquash pieces or #speghettisquash to the mixture. Continue stirring while adding 1 cup organic #cannedcoconutmilk to the soup and let simmer for another 5-10 mins. Remove from heat and transfer ingredients into a high powered blender. This is enough mix to serve many as a small appetizer, or to store for the week ahead. 🙂👌

Sweet Potato Pie with Chocolate Drizzle. Made with 4 sweet potatoes (4 cups) peeled and steamed. 1/4 cup + 1 tbsp of raw crystallized honey (may have contributed to the pie slicing so beautifully🤪),1 tsp of cinnamon, 1 tsp of ground ginger, 1/2 tsp of nutmeg, and 1/4 tsp of cloves...all put into the food processor until smooth. Crust made with 2 cups of almonds, 20 gooey Medjool dates, and 1 tsp of cardamom. Pressed crust into a springform pan and then smoothed sweet potato mixture on top. Chilled overnight before drizzling with melted chocolate and slicing.
