Made Lemongrass Chicken with cabbage from the #aipsheetpanrecipes ebook tonight. I had an abundance of regular cabbage so I used that instead of going to the store for Napa cabbage. So I haven’t posted anything about food recently so here is this. And this is way more than a weird looking caprese salad. These homegrown cherry tomatoes(and green beans/snowpeas for that matter) are lacto-fermented (hands down THE best way to pickle something AND get your good gut bacteria!) with garlic and fresh herbs. Look it up, it’ll change your life. (Hint: it’s the traditional way of making sauerkraut, using salt and time to ferment your vegetables). Cabbage creates its own brine once you massage it long enough, but these are made by making a salt brine of 2 Tbl of sea salt to 1 quart of water. ALSO: once you make one jar that may take a week or two of any fermented veggie, you can add a tablespoon or two of that brine to your next batch to speed up the fermentation process! In just a few days they will be ready if you use this starter method. Made this delicious and super easy dinner last week when I was visiting my grandparents in Florida!!! Let’s talk Zucchini Cheese! I got a million comments and questions about it - where I got the recipe, how it tasted, etc. So here is!! I’ve made it twice in 2 weeks and it fills such a cheese void. A friend described it as nutritional yeast velveeta in taste and texture. I agree with this. I did add nutritional yeast to mine, a bit, but will omit next time and the recipe doesn’t even call for it. . Recipe is from ieatrealfood.recipes. They aren’t on IG that I could find. Lay collard green flat, and use a knife to slice off the stem horizontally.  2. Add chickpeas to a medium bowl. Smash with a fork. Add avocado, and mix in with smashed chickpeas. Chop up green onion and mix in along with lemon juice. 3. Add chickpea mixture to the top part of the collar green. Add cherry tomatoes, and begin rolling wrap from the top down, tucking in the sides. Secure loose ends and cut in half. . I took this photo the day after I arrived in Bali (two wks ago). I woke up feeling grateful, hopeful... and skinny. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ skinny. that word carries so much weight. #puns I was a skinny child & late bloomer, but it wasn't until age 14 that I started to see my skinniness as a problem when a girlfriend casually said: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ "he told me that you might get a boyfriend if you had curves like the rest of us." ⠀⠀⠀⠀⠀⠀⠀⠀⠀ well, sh*t. I’d been so focused on trying to tame my frizzy hair & apply mascara without stabbing myself in the eye that I hadn’t really noticed everyone else’s curves... or that I needed to get a boyfriend ! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ but just like that I became painfully aware of my skinniness ⠀⠀⠀⠀⠀⠀⠀⠀⠀ of my not enough-ness ⠀⠀⠀⠀⠀⠀⠀⠀⠀ comparing myself to friends ⠀⠀⠀⠀⠀⠀⠀⠀⠀ feeling envious ⠀⠀⠀⠀⠀⠀⠀⠀⠀ shaming my body ⠀⠀⠀⠀⠀⠀⠀⠀⠀ literally praying for curves ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I started wearing a padded bra & 2 pairs of leggings under my jeans ⠀⠀⠀⠀⠀⠀⠀⠀⠀ which was just the beginning of what would become many years trying to prove my worth through my physical appearance... and the need to have a man ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ at 16 I ate powdered donuts, bagel & cream cheese, ham & cheddar croissant, potato chips & a Dr. Pepper — all by noon ! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ couldn’t gain a pound... ⠀⠀⠀⠀⠀⠀⠀⠀⠀ at 19, I gained weight for the first time (university drinking 5 nights / week eating pizza & burritos at 2am !) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ the guy I was dating told me I should drop at least 5lbs before spring break 👙 #cantwin ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I started obsessively working out ⠀⠀⠀⠀⠀⠀⠀⠀⠀ at 24, after the painful rejection of a breakup, I started restricting food as a way to feel in control ⠀⠀⠀⠀⠀⠀⠀⠀⠀ for months I subsisted on 2 cups of black coffee for breakfast, an apple for lunch, 3oz of deli turkey & 18 pretzel sticks for dinner ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ at 5'8" and 104 pounds, I was fielding contrasting comments of skinny-praise & heartfelt concern (continued in comments ⬇️) at Ubud

This summer has been crazy busy but I’ve set aside the month of August to get my garden harvested and put up for winter. Lacto-fermenting green beans are one of our annual “must haves”. Done right, they are deliciously tangy, crisp, salty and slightly spicy. The beautiful thing about these gut healthy beans is that they keep well for 6-8 months refrigerated... no canning needed. Make these while green beans are in season! They are devoured by the whole family from toddlers to adults. Lemon, fresh ginger root and honey tea 😍 I am obsessed with making this! . . Generally speaking, ginger has AMAZING properties associated with it. Not only is it a fantastic anti-inflammatory agent, but it’s a very useful digestive aid. You’ll notice many authentic Asian restaurants serve ginger tea as a dessert for this reason - to help digest the meal. For my pregnant mama’s out there, ginger helps relieve nausea. Now, ginger AND lemon together is everything! . . I find many of my clients begin incorporating anti-inflammatory foods and digestive aids and find huge benefit when done consistently. The key is consistency, just like achieving a desired result in anything else. It never hurts to add in powerful foods like these daily to be preventative. GREEN DETOX SOUP // If you're looking for a light meal or the weather isn't quite warm enough yet for you to stomach a green smoothie, this soup is for you! ⠀ ⠀ I love soups and smoothies because they're a great way to get a bucket load of vitamins, minerals, fibre and antioxidants into your body in a 'pre-digested' form, meaning the body can easily absorb and use those nutrients. ⠀ ⠀ This soup has all the goods for supporting the liver, alkalising the body and feeding your healthy gut flora with pre-biotics (and resting the digestive organs- also good for detoxification). ⠀ ⠀ Ingredients⠀ ◦ 1 brown onion finely diced ◦ 2 cloves garlic, minced⠀ ◦ 2 zucchinis chopped ◦ 1 cup frozen peas ◦ 1 cup broccoli ◦ 2 cups of spinach leaves ◦ 2 sticks of celery ◦ 1 large potato ◦ 6 asparagus spears ◦ 4 cups organic vegetable stock or bone broth +1 cup water⠀ ⠀ Method ⠀ In a pot add 1 tblspoon coconut oil and add garlic and onion, stirring until onion is softened ◦ Add everything else except spinach and parsley and bring to boil ⠀ ◦ Reduce the heat and simmer for 10 minutes ◦ Add spinach and parsley and remove from heat ◦ Let cool before blending until smooth (or can leave chunky if you prefer) ◦ Serve with 1/2 and avocado on top and (optional) drizzle with Tahini Dressing. ⠀
