I’m back into enjoying creamy #sugarfree Coconut Panna Cottas! Roy and I ate this one today topped with fermented cherries and figs and it was totally 🤤🤤🤤 (see previous post for the fermented fruit details). The full recipe for this fermented blueberry beauty is below ❄️ — INGREDIENTS ⋆ 1 cup thick coconut cream ⋆ 1 1/4 tsp gelatin ⋆ 2 Tbsp water ⋆ Stevia or your preferred sweetener to taste ⋆ 1/2 cup fermented blueberries & blackberries (recipe link in my Instagram bio) ⋆ 1 vanilla bean ⋆ 1/2 tsp @sunpotion mucana pruriens (optional) — METHOD 1. To a small saucepan add the gelatin and water and stir to combine. Set this aside for a minute to allow the gelatin to bloom/ thicken. 2. Add the vanilla, sweetener, fermented berries and coconut cream to a blender. Blitz on high until combined and lump free. 3. Pour through a sieve to get rid of the berry seeds. 4. Pour roughly 1/4 cup into the gelatin mix and heat on low until the gelatin has completely dissolved. 5. Remove from the heat and stir through the remaining berry/ coconut mix through evenly. 6. Taste the mixture and adjust the sweetness to your own tastebuds. 7. Pour the mixture into 2x mugs or ramekins and place it in the fridge to set. 8. When it's ready, grab a spoon and enjoy every silky smooth mouthful 🤤🤤🤤 #reallifeofpie at Sunshine Coast, Queensland

Hands up who wants a Tamari Salmon Poke Bowl Recipe 🙋🏼 🙋🏼‍♂️ ✖️Ingredients - serves 2 2 fresh fillets of salmon, diced (you can also use sashimi or even smoked salmon) TAMARI DRESSING 🥄 1/4 cup tamari Juice of 1/2 a lime juice 1 teaspoon fresh ginger, grated or minced 2 garlic cloves, crushed or minced THE BOWL 🥣 ½ avocado, quartered and sliced ¼ cup spring/green onions, chopped ¼ cup carrots, julienned or grated 🥕 ½ cup red cabbage, shredded🥬 1/2 cup kale, shredded 1/2 cup beetroot, diced or shredded 1/2 cucumber, thinly sliced 🥒 2 tspn black sesame seeds (optional) ✖️Method Make the marinade by whisking the ingredients together in a bowl and pour ¼ of the dressing over the salmon ensuring each cube is coated evenly. Cover and place in the fridge for 30 min. Divide the ingredients evenly between two bowls. Finding healthy FODMAP friendly snacks can be tricky or expensive. Today we are off on a hike so in preparation I have made these pumpkin and cranberry bites. They are quick and easy to make and taste great. Simply toast pumpkin, sunflower and sesame seeds in a pan. Add chopped cranberries and a syrup to bind. Here I have used a 1 tbsp of rice malt syrup and 3 tbsp of maple syrup. Pour contents into baking dish lined with grease proof paper and press down firmly. Bake for 15 minutes or until lightly browned on 170 C. Supplements - should you take them??🛒💊 There are so many different supplements on the market, they can be expensive and the quality varies massively. Often what you think you are taking isn't at the level it should be, or isn't in the right form be to well absorbed. So the level in the pill matches the label, but that's not the amount your body receives. With my 121 clients I may use supplements as a boost to your dietary changes to speed things along. Meal Prep Sunday + Kitchen Appliances/Equipment 🌿✨ today was ... green smoothies 🥒 choc coconut bliss balls 🥥 coleslaw with homemade mayo 🥚 potato cauliflower turmeric mash 🥔 veggie loaded egg cups, veggie dips 🥑 and choc chip cookies 🍪 my god the scary part is it’ll all be gone in a day or two 😫 that’s what you get when you have a Tom at least he grows it 👨🏼‍🌾 Soo many of you have asked for the brands of my kitchen appliances this last few weeks, if I would recommend them and what they can do 🤷🏽‍♀️ well I guess the best advice I can give is that you don’t have to spend 2k on a thermie to be a whizz in the kitchen 👩🏽‍🍳👨🏼‍🍳 appliances have really stepped up their game since thermies have come out... I did my research and have surely put mine through the test 🤭 my Kenwood Multi Pro food processor has a glass blender jug, a variety of grating blades/slicers, dough whisker, food processor large and small bowl and was approx $300-$400 it is fantastic 😉 my Phillips all in one pressure cooker can steam, sauté, slow cook (high or low), pressure cook, cook rice, stews etc and was $150 I also bought the stainless steel bowl replacement for the cooking to be a little more low tox friendly 😎 I can do pretty well anything I need in my kitchen with those two! Whether it’s 30 second smoothies, pressure cooking bone broth in an hour or two, blending up bliss balls, making pesto, slicing/grating veg for making sauerkraut, cooking soup or stews, making nut butters or nice cream they do it all for approx $550 - you don’t need to have a million kitchen appliances to eat healthy usually it’s quite basic! Just invest in a few good ones that do what you need and can make the amount you need ... a thermie bowl isn’t a great size to meal prep a bolognese in for a Tom but a 6L slow cooker is and that is what works for us 😉 think about how much kitchen space you have for appliances, what appliances would make your kitchen/meal prep life much easier and less of a hassle, how much you want to make as well as what your budget is! Not to mention a low tox option is always ideal for your health ✨ hope this helps ... I have put a photo of the two appliances up x

🥒PART 5 - FIBRE: JUICING VS SMOOTHIES?🥒 . Before delving into fibre, it would be good to understand the differences between juices and smoothies. . 1️⃣ Juices - there are varying different processes (e.g. cold press, spinning) whereby the liquid from fruits and vegetables are extracted leaving the pulp (insoluble fibre - the fibre that bulks out your stools and helps you feel full) behind. Soluble fibre survives in the juice and it is the type of fibre that your gut bacteria feast on, it also absorbs water. But without the insoluble fibre, the juice can break down into sugar more quickly than a smoothie, which may cause a blood sugar surge. But this very much depends what you have with your juice and it’s component parts. . 2️⃣ Smoothies - a blender pulverises the ingredients to liquid, without getting rid of the pulp so the insoluble fibre remains in the drink. It will keep you fuller for longer and retains the benefits of both types of fibre. . 🤷🏻‍♀️Verdict? Both have their benefits but for extra fibre, opt for a smoothie (this isn’t to say juices don’t have their uses either). Juices can also be useful if you need to get extra nutrients in your diet and have difficulties with digesting fibre. If you are having a juice, have it with food and choose one with more veg than fruit. For both, try not to down in one but savour each mouthful like a soup and enjoy 😊 . I posted this in my stories after an epic workout (2 hours of cardio, phew!) and was inundated with questions about what I use on my skin. Thank you! I’m flattered, especially because this photo has no filter and I turn 40 this year. 😱 First up, yes, I do get a shot of Botox between my brows a couple of times a year. 🤷🏻‍♀️ I also use the @isagenixanz range of vitamins twice a day. This year I have been super consistent, and even though I’ve always been blessed with pretty good skin, even I am blown away at what I’m seeing in the last few weeks of stepping it up. MEAL TWO Frozen Organic Berries + Chia Seed Pudding + My Spiced Coco-Crunch Granola + @coyo_organic Natural Coconut Yoghurt . . After eating a few of the chicken skin chips I made today (see my stories) I really wasn’t hungry for dinner... they’re really filling! 😳 . . So this was perfect!!! . . . Ellenie’s Spiced Coco-Crunch Granola 2 cups Coconut Chips/Flakes 1/4 cup Sunflower Seeds 1/4 cup Pumpkin Seeds 1/4 cup Flax Seeds 1/4 cup Shave Almonds 2 tbsp Chia Seeds 2 tbsp Hemp Hearts 2 tsp ground Cinnamon 1 tsp ground Ginger 1 tsp Allspice 3 tbsp @melrose Coconut Oil and Ghee . . Preheat oven to 120c / 250f and line a baking tray with baking paper. . . Combine all the dry ingredients together and then stir through Coconut Oil and Ghee. . . For a sweet treat I split the batch and added 1 tablespoon of Cacao and 1 x 90g sachet of @nuvia sweetener. . . Spread evenly on the pre-lined baking trays and cook for 30-45 minutes until golden and crunchy, turning every 15 minutes. The darker the coco-crunch, the crunchier it will be. . . Remove from the oven and allow to cool completely before transferring into a large glass container or jar. . . It will keep for 2-weeks in an airtight container in the pantry or fridge (during summer I keep mine in the fridge) and you can freeze for even longer. . . . . Why Can’t I Lose Weight? It isn’t always as easy as eating well and exercising. If it was easy, we wouldn’t be a country of overweight people. Have you ever thought about why your body weight doesn’t really change, it seems to make an allowance if you do overeat or if you do more exercise over a week? You may notice an initial short change, but then after a week, your body weight is the same again. Who has noticed? Your body weight tends to stay relatively stable, whatever it is, due to what is known as your metabolic set point. It is under your subconscious control just like it controls body temperature, pH and blood pressure. If your temperature goes up the body produces a response to get it back to temperature set point, your body weight does the same thing. Not everyone will have this problem when losing weight but it is a factor for some people. Despite their best effort, they can’t get there because they are fighting their set point. My weight loss protocols address this factor so you can lose and maintain your weight long term. If weight loss is on your radar and you know you really need to do something about it, get in touch for a treatment plan.

Herbed free range pork chops with a simple salad of mixed greens dressed in lemon and mustard, my first ever time I tried pork chops I really never enjoyed then, the fat was to thick and the meat dry. However, giving the cut another chance playing around with different ways of cooking it I have come to find my perfect way. Today for lunch I had something a little different - vegetarian bowl!
