Today I am most grateful for the knowledge I have gained and the people I have met over the last 4 years throughout my studies. I can’t believe how much better I feel after implementing some changes and really giving my body a chance to heal. I’ve gone from feeling anxious, extremely exhausted, dizzy almost all day every day, emotionally all over the place and not being able to have a conversation without feeling frustrated because my brain couldn’t absorb any of it... To now feeling more vibrant, energised, focused and stable with no dizziness and not needing a day nap every day. I still need to be careful and really be mindful not to push myself in any regard, but I am feeling incredible grateful to have made it to this point. And I may add this is all only in the last 3 weeks since I’ve strictly adhered to my routine. It’s not a walk in the park. It’s not easy. It’s taken me 3 months of attempting it and having setbacks. I didn’t realise how much those setbacks were actually affecting everything, until I stopped giving into those temptations. This isn’t a fad, or a diet, or a phase. This is a lifestyle change that is always going to require monitoring and amending. I know I’ll never be able to eat whatever I want, although nowadays it no longer bothers me. I’m actually grateful that my body only demands real, wholesome and healthy foods, because that’s all we were designed to eat in the first place. Initially this felt like a “why me” moment, but now I feel blessed that I am able to go on this journey and truly understand the power of food and it’s role in our health, from a completely new perspective ❤️

Game of Fridges: + In honor of the series ending( Game of Thrones), I was playing games with myself but instead of allowing myself to reign over my food choices I was letting food control me. Just like the show, I am fighting for control over my own iron throne but the battles is me vs my food.+ + I found myself over these past few days wandering to the fridge and opening it (mainly at my parents) to see what kind of food there was. I even opened a few styrofoam boxes of food to see what kind of treasures they contained. It’s strange because I don’t really have the urge to devour the food anymore. I know I am only eating meal replacements. It was like I was drawn to it by some irresistible magic. But I’ve resisted and chosen water every time. I think the key has been mainly keeping only healthy items in the fridge, to get rid of items that are tempting. This will allow me to seize back my right to the throne and become in control. I am obsessed with nutrition! I always have been & here is why! ⠀ .⠀ .⠀ I grew up with a mom who spent much of her life fighting cancer, Hodgkin’s disease. And WAY back in the early 80s, she believed that animal products were harmful to our health! She was very passionate about whole food nutrition and believed in the power of food to heal our bodies. ⠀ .⠀ .⠀ Although I was the kid who definitely resisted the Adams Peanut butter she would buy and I longed to be the kid with Wonder Bread and Jiffy, I now understand why she did what she did. ⠀ .⠀ .⠀ I two weeks I am starting a 21 day food based cleanse and I know if she was here she would be doing this with me. She would love every part of what I do as a health coach because she was a woman so ahead of her time when it came to the power of food plays in our health and wellness. ⠀ .⠀ .⠀ Today I saw these carrots in Sprouts and I had to buy them, because I immediately thought of her. My mom had a bone marrow transplant in 1992 due to myelodysplasia (all the years of radiation and chemo had killed her bone marrow, so a transplant was her only option to live). While in the hospital she developed complications when she got pneumonia and in the end she was intubated. One day she wrote me a note and asked me to walk to Pike Place Market to get her carrot juice. She was really into juicing during her transplant, she would have 25 pound bags of carrots delivered so she could drink her carrot apple juice daily. With a tube down her throat, she was not able to drink the juice, but she wanted drops on her mouth because she believed so much in the power of those nutrients, even just a few drops.⠀ .⠀ .⠀ I will never forget that day because although I knew she was a health nut and most of her family thought she was crazy, she was RIGHT ON! You know how I like to try new healthy food combos! This Sunday evening was no different. I typically experiment on my boys and husband. They are good sports. I will let you know there was no complaints coming from the kitchen tonight! 😉 The crunch on the cheese shells were so very "satisfying!" #leanandgreen #healthycooking #healthmatters #winner #healthcoachlife #ilikeit . Cheese Shell Beef Enchiladas . 1 Serving: 1 lean, 3 greens, 3 condiments . Cheese shells: 2 shells per serving 1/2 cup low fat mozzarella cheese (split to make 2 shells) . Preheat oven to 400. Spray non stick spray on parchment paper that is on a baking sheet. Make 2 cheese piles and bake for approximately 10-15 minutes. Needs to start browning around the edges but not over cooked. . Meat Filling: 1/2 cup cauliflower rice 2.5 oz cooked lean hamburger (I used ground turkey) 1 Tbl enchilada sauce 1 Tbl light cream cheese . Microwave your cauliflower rice according to package instructions. Mix all meat filling ingredients together with the cauliflower rice. Warm and mix up. . As soon as your cheese shells are cooked; divide your meat filling between the 2 shells and roll tightly. Do it fairly soon after the shells are cooked so that it stays pliable. We are a full time rving family. So when I say we travel quite a bit that might be an understatement. One of our favorite places to be is anywhere with mountains. With that being said the curves can sometimes be a problem for tummies. That is why I clapped my hands with glee when doterra came out with this new product: ginger/lemon drops. They soothe stomachs but I was not sure they would pass the kid test. I am happy to report they test like root beer candies and even my 6 year old will use them. Post beach eats 🏖🥗☀️ I love eating some variation of this meal daily - it always includes a quality source of protein, lots of veg, healthy fats, and a few handfuls of leafy greens. Today’s plate is fresh spinach, organic ground chicken patties made with S&P, onion powder and parsley flakes, roasted carrots, creamer potatoes and zucchini, cherry tomatoes, and hemp hearts. Seasonal allergies? Try this combo! Dan rolls his eyes at all my essential oil stuff buuut tonight he experienced them actually working! I made a little roller ball with these 4 oils (10 drops each) topped with jojoba oil and applied to temples and back of ears because his eyes were super swollen and itchy. A couple mins later Dan said he felt better and that the swelling went down. I thought he was joking and making fun of these oils 😂 but he wasn’t! So happy these worked for him 🥰🌿 at Bowmanville, Ontario

Italy. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Known for it's delicious pizza, pasta, fresh ingredients... And it's gluten free food? Yes. You heard me right. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I recently took my first international trip to Italy - we visited Tuscany - Florence, Siena, and so many small towns - Venice, and Lake Como. And much to my complete SURPRISE, gluten free is a diet they can easily accommodate. Not just in stores but restaurants too! I did Google restaurants that offered the option beforehand, but still! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I ate out *every single day* for two weeks and DID NOT HAVE A REACTION o n c e. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ For someone with celiac disease, I'm not sure I ever expected that to be possible. I'd ask for the gluten free option and reiterate it was a severe medical need and they would just nod, "yes okay, gluten free." Which, I'll admit, made me nervous (no one likes a yeah OK whatever attitude from your waiter). ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Apparently, gluten free is *not* a fad diet. It is only done for medical reasons such as celiac disease or gluten intolerance or true allergy. Which is amazing! ✨ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I'll admit it was pretty disheartening to come back to the US and come back to apathetic/annoyed waitstaff and a gluten reaction to an American restaurant within two weeks. 😭😩 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ SO. My shadow and silouette used to be my enemy, and I'm finally starting to see the beauty 😍 Gorgeous Hawaii sunsets are also helpful 😆 . But on a more real/less insta-perfect note: I'm longinggggg to return back to my fitness routine after a month and a half of being restricted to light activity and "resting" on and off. Trying to heal a couple injuries, but every day that I rest I can feel my muscles tightening, my flexibility and strength lessening, and my energy dropping so I try to move a little here and there, only to feel a tinge or pull in some muscles telling me I'm not ready yet. My mental health has taken a dive and I am struggling daily to find a balance between rest/healing and the activity and movement I crave. . It's time to get back to the basic principle that got me through my first year: nutrition first. I have gained several pounds back because I didn't readjust my higher carb eating (necessary during my intensive semesters) when I got injured and it's only adding more internal pressure to workout, which is useless. Gotta accept the reality, honor my body through nutrition and rest at this point, and find a new temporary normal 👍 . Lots of struggle happening but that's life right? Gettin’ back into the groove ✌🏽 🌱 🏃🏽‍♀️ . . Who here struggles with setting a structure, whether in diet or exercise, and sticking with it? It is so easy to fall off course by allowing one “minor” cheat after another. . . Sure, life should be about balance and also enjoyment, but I am one who wholeheartedly believes those things can be found and attained completely through a healthy diet and lifestyle. . . Leafy veggies, fruits, seeds, oily fish—these are just a few of the food items that have always served my body and health well. I allow myself healthy treats like coconut or yacon sweetened cacao regularly, and walk when I don’t feel like running or intensive exercise. . . But oversleeping, having one two many glasses of wine, skipping workouts, binging on TV, neglecting my spiritual practice 📖 🙏🏽 —these things don’t serve me and never will. . . So here’s to getting back on track, not to attain a number on the scale, fit into a bikini, or look good in a dress. Here’s to healthy eating, redefining balance, moving often, and living well. 👌🏽 ✨ . . What are some of your life enhancing practices? 🙃

I've been doing it for many years and I love it. =============================== I usually do it on Sundays. Although since I started my meatless Monday I also cook on Mondays. Llevo muchooos años haciéndolo (más de 7) y me encanta. Normalmente lo hago los domingos. Aunque desde que inicié mis lunes sin carne también cocino los lunes. ========================================== Organizar mis comidas con tiempo es una excelente idea de ahorrar tiempo, dinero y desperdicios en la cocina. Antes de tener a Sofi planeaba más lo que quería comer durante mi semana pero mi vida es un poco ajetreada así q ahora preparo cosas más sencillas que “maquillo” al servir, ósea que la imaginación llega cuando veo lo que ya tengo listo en la nevera.
