🍲Kefir Borscht – This Time Cold Hot borscht soup, is a soup of Russian origin that is popular in many European countries. Usually it contains beets as well as hearty chunks of beef and beef bone broth. It is often served topped with sour cream and dill. 📌You will need: 4 cups of goats or cows plain kefir 1½ pounds of beets 1 large cucumber 4 eggs – hard-boiled 5 small scallions ¼ cup chopped dill salt to taste 4 medium potatoes, boiled or baked until tender water (optional) 1-2 tablespoons sour cream(optional) Instructions: 1⃣Roast beets at 375°F until fork-tender. Remove from oven and cool it down. Peel beets; chop into tinny pieces. 2⃣Finely peal and chop cucumber, chop eggs, and scallions and add to beets. Also add chopped dill. 3⃣Add milk kefir to the vegetables and if you like – season with salt and pepper to taste. 4⃣For a thinner soup, add water, up to one quart, and adjust seasoning as necessary. For a thicker soup, add 1-2 tablespoons sour cream. Remember to mix it well. 5⃣Cool down at least 20 minutes before serving. Magnesium plays an important role in carbohydrate and glucose metabolism, so magnesium status can also impact the risk of diabetes. Several studies have associated a higher intake of magnesium with a lower risk of diabetes. For every 100 mg per day increase in magnesium intake, up to a point, the risk of developing type 2 diabetes decreases by approximately 15 percent. Low magnesium levels were linked to impaired insulinsecretion and lower insulin sensitivity. In most of these studies, the magnesium intake was from dietary sources. However, other studies have shown improvement in insulin sensitivity with a magnesium supplement intake of between 300 and 365 mg per day.
