✨✨✨ Soy products like tofu and tempeh, have always been controversial. But newer studies are showing that Women consuming moderate amounts of soy products (organic and non GMO of course)-can perhaps help prevent breast cancer. ✨✨✨This makes me really happy, because while I am not vegan, I don’t love meat (or the idea of eating meat) and do eat a mostly plant based diet with eggs and fish. So knowing that tofu can be added a little more frequently than I normally eat it; is good news. ✨✨✨This tofu stir fry dish was out of this world. Even my boys loved it! I sautΓ©ed organic frozen stir fry veggies with organic black beans and garbanzo beans in coconut aminos, coconut oil, onion powder and pink himalayan sea salt. In a separate pan, I sautΓ©ed the organic tofu until brown (added some coconut aminos to that as well). Throw back to yesterday when I had this AMAZING raw vegan pumpkin parfait I found on rawmazing.com (by the way, I can’t find the Instagram account for this page for some reason, so if you know to whom I should give the credit, let me know please!) Anyways! It was awesome and like my husband said... Thanksgiving in a cup! I knew the ingredients didn’t have long to last because of my poor timing (that’s the beauty and downfall of eating living foods for me! Gotta get em in quick!) So I put them in the freezer. Today I took out frozen bananas and the other frozen ingredients used in the parfait, ran them through my omega juicer on the β€œnice cream” setting, and had frozen Thanksgiving in a bowl! Pumpkin Choco-Chip Oat Bars πŸ«πŸŽƒ #pumpkinseason || The deets on how to make these are below ⬇️ Ingredients: πŸŽƒ 2 cups of oats ( @bobsredmill ) πŸŽƒ 1 cup of pumpkin purΓ©e πŸŽƒ 1/2 cup honey/agave πŸŽƒ 1 tbsp pure vanilla extract πŸŽƒ 1 tsp cinnamon πŸŽƒ 1 tsp baking soda πŸŽƒ 2 Tbsp ground flaxseed πŸŽƒ 2 Tbsp almond meal/flour πŸŽƒ 1/4 almond butter (I used crunchy) πŸŽƒ 1/2 cup chocolate chips (I used mini @enjoylifefoods ) Method: 1. Preheat oven to 350 deg. 2. Grease an 8x8 pan (I used coconut oil). 3. Combine all ingredients - start with the wet (honey, pumpkin purΓ©e, almond butter, etc) before combining dry to wet. 4. Add chocolate chips and evenly spread in greased pan. 5. Bake at 350 deg for 30-35 min or until golden brown!

If you don’t go after what you want, you’ll never have it. If you don’t ask, the answer is no. If you don’t step forward, you are always in the same place. I stayed stuck in the same place for a very long time because I couldn’t figure out what it was that I truly wanted to do for work. I majored in Spanish and never used it. I was a nanny on and off since I was 11 years old. I managed all the monies on a casino boat for several years. I became a special education teacher by chance and got a masters in special education because it seemed like the next right thing to do. Don’t get me wrong there were times when I thoroughly enjoyed these jobs, like watching my students succeed and overcome obstacles or having a hand in a child’s development but each of these jobs never actually felt like something I would want to do forever. I knew that I didn’t want to just have a job that paid the bills and helped me to get by. I wanted more than that and I knew I deserved more than that. I wanted a career that I was passionate about and didn’t feel like a job. Once I was able to get very clear on what it was that I wanted for myself and my career was when the opportunity presented itself. I never thought in a million years that I would be a Health and wellness coach, especially where I had no background in this field but only a desire to be healthy and help others do the same. Once I focused on improving my digestive system, I reversed my chronic health issues, lost body fat and gained muscle without drugs, diets or deprivation. So how is this whole #plexuspregnancy thing doing anyway? Pretty good. Like best pregnancy ever good. I feel well, I sleep well, I'm gaining weight pretty good. My complaint last time was that my feet hurt and now that we've moved in and unboxed most our stuff, my feet are fine. (Usually by now I have puffy grey feet that have white marks when you poke them. Not cute. ) I had ultrasounds and baby has good measurements, there is plenty of amniotic fluid and he weighs 5lbs, which puts him just on the underside of average for 34 weeks. Like his dot on her graph was below the average line but still overlapping it. My second was smaller then that. I've added Mega X to my routine because in the last trimester a lot of critical brain growth is happening. Mega X is a #plantbased source of omegas 3,5,6,7 & 9 and I love it! In the past I've had fish oil supplements, ate fish once a week (that was when i could find wild salmon for $8 a lb, thats like a unicorn now). With my last two I ate a handfull of nuts and/ or seeds and tried to eat at least half an avocado every day. Well it turns out, some Drs warn against any fish at all, including dha suppliments for fear of mercury poisoning (fantastic). My husband was concerned about me taking fish based suppliments and I wanted a better alternative. When I found Plexus, I honestly never knew about omega 5, 7 &9. I only heard about 3& 6. I still love my oats with seeds but I am excited to expand on the nutrition my baby has access to πŸ’š I look forward to sharing my results as they continue but already after a few short weeks I can tell you I go to sleep easier and my quality of sleep is awesome! Also, I think my hair is shinier and my streach marks are decreasing?!? How in the what?!? Well, it was only supposed to get up to 86, but, like always with Florida, it was much warmer. πŸ˜’ It was 90 and felt like 96 when I walked to the store a little while ago, but cooled off a little when the clouds came in. But it looks like that'll be the last hot day for a while. πŸ˜… Tomorrow & next Saturday are both supposed to get up to 81 and the rest of the next 2 weeks will be highs mostly in the 70's with a couple 69 days in there. I can't wait. 😊 I enjoy walking, and I try to do it every single day, but between this heat and my muscles cramping up so much lately from the MS, I dread doing it. 😟 I still suck it up and do it at least 6 days a week though. I'd walk further if it wasn't so miserable. Even though it sucks, it's one of the few things I can always do to keep my muscles somewhat loosened up. It's important for me to eat healthy and stay active, or else I could end up back in the hospital. But I'm done with that crap. I refuse to let myself get that bad ever again, if there's anything I can do about it. Anyway, I'm done with my rant.
