[PIZZA DI FARRO] L’unico vero segreto per fare una pizza come si deve, morbida e digeribile, è farla lievitare bene e tanto! Ecco come l’ho fatta: #Ingredienti (per 3 teglie Ø 30 cm) 1 kg di farina di farro integrale 550 ml di acqua tiepida 30 g di miele 3 g di lievito di birra biologico 30 g di sale 40 g di olio extra vergine di oliva #Procedimento Metti in una ciotola l’acqua tiepida, il miele, il lievito e fai sciogliere bene. Versa metà della farina e inizia a mescolare. Aggiungi il sale, il resto della farina e impasta. Versa anche l’olio, forma un panetto e trasferisci sul piano di lavoro. Se necessario aggiungi altra farina e impasta per 5 minuti fino ad avere un panetto omogeneo. #Lievitazione Metti il panetto in una ciotola, copri con un canovaccio e lascia lievitare in forno per 12 ore 😲. Poi rimpasta, dividi in 3 panetti e fai lievitare ancora per 2 ore. #Farcitura Ungi la teglia, aggiungi un panetto e stendilo aiutandoti con le mani fino ad allargarlo bene nella teglia. A questo punto puoi condire la pizza con gli ingredienti che preferisci. Ecco qualche 💡 ✅ gli ingredienti sono per 1 teglia e vanno distribuiti uniformemente ✅ il condimento è sempre sale, pepe e olio evo. 1️⃣ 300 g di pomodori pelati, tagliati e conditi, 100 g di primosale di capra, basilico. 2️⃣ 150 g di patate con buccia tagliate sottilissime, 100 g di funghi, 100 g di cipolla rossa affettata, tutto condito e poi spolvera con 80 g di caciotta di capra grattugiata. 3️⃣ 300 g di scarola sbollentata, 50 g di olive nere denocciolate, 1 cucchiaino di capperi dissalati, 1 cucchiaio di uvetta, condisci tutto. 4️⃣ 250 g di radicchio tagliato fine (a crudo), 50 g di noci, 100 g di caprino, condisci tutto. In uscita versa 1 cucchiaino di miele fuso. 5️⃣ 300 g di catalogna sbollentata, 4 pomodori secchi tagliati sottili, 60 g di ricotta salata di pecora grattugiata e condisci tutto. #Cottura Preriscalda il forno al massimo della temperatura. Inforna la teglia nella parte più bassa e cuoci per 10 minuti. C A R B O N A R A ********************************************************* Ingredients: 200g dried spaghetti 8 smoked bacon medallions, diced 250g chestnut mushrooms, sliced 100g quark 4 large egg yolks 30g parmesan cheese, finely grated @frylighthq olive oil spray 1 tbsp fresh chives, finely chopped 1/2 tsp ground black pepper 1 tbsp salt ********************************************************* Serves 2 (syn free using 1/2 HEA or 3 syns per person for the parmesan cheese) ********************************************************* Method: Put a large pan of water on to boil. In a bowl mix the egg yolks with the quark and parmesan. Add the pasta to the water with the salt. Reduce to a simmer and cook for 8-10 mins. In a large pan fry the bacon for 2 mins on a high heat. Add the mushrooms and fry for a further 4-5 mins until browned. Drain the pasta, add back to the large pan leaving a splash of the water and away from any direct heat add the egg mixture and mix thoroughly. Add the bacon and mushrooms, mix and serve immediately adding extra bacon and mushrooms seasoning with ground black pepper and garnishing with the fresh chives. ********************************************************* Tips: For a more traditional carbonara I add parmesan cheese to the mixture. Not all smoked bacon medallions are syn free so check before use. Genuinely enjoyed my tea tonight. I was at work from 6 this morning and have just had to be out and about to stay awake 😂😂 so I went shopping and then over to visit my nan. Gleich zur Arbeit😊 & weiter aufräumen🗑, denn wir haben Schließzeit bei uns!😍 Also schnell frühstücken 🍽 und dann loslaufen! 🏃 Heute gibt es ein Eiweißbrot 🍞mit getächertem Lachs🐟, Salatgurke & ein Vollkornbrot 🍞mit Lachsschinken & Tomate🍅!😊 Dazu eine Aprikose🍑& eine Pflaume, sowie Heidelbeeren & Himbeeren! Nachher wieder mit dem Fahrrad unterwegs! 🚲 Schönen Dienstag euch allen! 🤘😄🎉
