- 🔥 KETO QUESADILLAS❤️ 🎥 by @delish ————— ⏱Prep. time: 10 minutes Total time: 35 minutes ————— 👥Yields: 4 ————— 🛒 📝INGREDIENTS 1 tbsp. extra-virgin olive oil 1 bell pepper, sliced 1/2 yellow onion, sliced 1/2 tsp. chili powder Kosher salt Freshly ground black pepper 3 c. shredded Monterey Jack 3 c. shredded cheddar **4 c. shredded chicken 1 avocado, thinly sliced 1 green onion, thinly sliced Sour cream, for serving ————— 👨‍🍳INSTRUCTIONS 1️⃣Preheat oven to 400º and line two medium baking sheets with parchment paper. 2️⃣In a medium skillet over medium-high heat, heat oil. Add pepper and onion and season with chili powder, salt, and pepper. Cook until soft, 5 minutes. Transfer to a plate. 3️⃣In a medium bowl, stir together cheeses. Add 1 1/2 cups of cheese mixture into the center of both prepared baking sheets. Spread into an even layer and shape into a circle, the size of a flour tortilla. 4️⃣Bake cheeses until melty and slightly golden around the edge, 8 to 10 minutes. Add onion-pepper mixture, shredded chicken, and avocado slices to one half of each. Let cool slightly, then use the parchment paper and a small spatula to gently lift and fold one side of the cheese "tortilla" over the side with the fillings. It's no secret I've let my workouts and nutrition suffer A LOT over the last 2-3 months. I've gone through bouts of not eating anything for days, lost a considerable amount of weight, and haven't worked out at all since September 6. Junk food has made it's way back into my daily life. I made this dinner last night in my stories and it definitely hit the spot 🙌 it required zero meal prep and was ready in just under 25 min. (Don’t worry, I’m going to tell you how you can get it done in under 20 min too 👍) . 🐟 We get our fish from @fish.fixe so it’s frozen into 6oz portions. I had placed a bag (each bag has two 6oz filets) in my fridge the day before so it was defrosted and ready to be cooked. Rinse the filets off and dip them in an egg wash (just two eggs whisked up in a bowl) and then dip it in crumbled up crackers of your choice (I used @simplemills rosemary almond flour crackers). You can then bake it or do it in the air fryer. (Bake on 400 for 12-15 min or air fry on 400 for 8-10 min) . 🥦 To get this meal prepped as fast as possible, cook your broccoli at the same time as the fish either together in the oven or in the air fryer if the fish is in the oven. (Most air fryers probably wouldn’t be able to fit everything all at once. I did both our fish and the broccoli in the air fryer but waited until after the fish was done to cook the broccoli... hence why it took about 5 min instead of under 20min) . 🍞 Toast a slice of bread right before serving. . This was so simple and SO delicious. To quote my husband... “Best you’ve done in a while!” 😏🙄🤦🏻‍♀️😆 . CREAMY HUMMUS PASTA 🍝 ⠀⠀⠀⠀ Not sure why it took me this long to use hummus as a pasta sauce... kind of upset I’m just now discovering this. Here is yet another super simple, healthy AND flavorful pasta dish that is loaded with protein. The hummus sauce is so creamy it’s almost like an Alfredo... but healthy 😫 ⠀⠀⠀⠀ For my pasta I used my favorite @eatbanza chickpea pasta which is packed with protein and still tastes like pasta it’s honestly scary. I never measure out anything so just sort of eyeball the sauce. I took about 5 spoonfuls of hummus and added water and fresh lemon and stirred it until it got creamy. I had to keep adding in hummus and more water ... etc. to make it just right. For my toppings I decided to keep it simple and just cook some cherry tomatoes and greens (you can use whatever, I used spinach). And lastly, just top with salt & pepper! ⠀⠀⠀⠀ I was about half way done with my pasta when I realized I wanted to also top it with avocado so that’s where you see me in the middle of these photos adding in the avo lol. Can’t forget about the avocado, ever. Honestly, surprised I did 😅

It was rainy and dreary today so filling the house with the smell of beef shortribs cooking low and slow seemed like the best course of action. ⁣ .⁣ I fried 2 strips of bacon cut into pieces in a Dutch oven, browned the ribs on each side and removed. Deglazed the Pan with some good dry red wine, a can of Swanson beef stock and a cup of water. I added a cornstarch slurry to thicken. Three large garlic cloves chopped, 1tbls butter, a pinch of red pepper flake, a pinch of chile powder, 1 sweet red pepper (I used a Marconi red), salt and cracked black pepper. I also added 1 beef bullion cube. ⁣ .⁣ Cooked on 325 for one hour then lowered the temp to 300 for 4 hours. This cooked 8 large ribs. Looking for inspiration - reading my mom’s Bengali cookbook. . I grew up watching my mom pore over this cookbook occasionally. Cookbooks were rarely used in Indian household back then. But once in a while even experienced cooks needed to break out and experiment. I even remember buying this book at the annual Calcutta Book Fair held in January (I believe it’s still a very big deal). The book is simply titled “Cook Book”. It is a compilation of traditional entail recipes, Anglo Indian recipes and some Western recipes that were within reach of Indian cooks at the time. Simply written, no photos, this book is a far cry from our modern day stylized Instagram posts. Yet, it remains one of my favorite places to look for answers and inspirations. I hope it is still in print. A few fam faves for you this evening - specifically comfort food family favorites. Tonight - The BEST pumpkin chili. I LOVE a good chili and this is so perfectly balanced; the pumpkin makes it creamy and the spices (including cayenne and cinnamon) make it the right amount of spicy and sweet. Last night - Cowboy Spaghetti. My husband has been asking for this for a weeks (months maybe?) Imagine spaghetti but smoky and spicy with bacon and fire-roasted tomatoes and topped with sharp cheddar and chopped scallions. So. Good. And finally for my girl’s lunches this week - Peas and Carrots Soup with Dumplings. Easily my daughter’s favorite meal that I make. I’ve described this before as “A pot pie and chicken and dumplings had a vegetarian baby.” We are lucky enough to live close to school - she can take a quick drive home, heat one up and that’s lunch. 🥣 Message me for any of the recipes you see here - it’s that time of year, get comfy.

I have always wondered if I could go vegan...meat isn’t my problem it’s fish! I love sushi 🍣 so much so that would be really hard to give up..I feel like I could probably be pescatarian though. As long as I can have my sushi I’d be good 😋. I just love all the veggies and am not afraid to try meat alternatives. Made this bowl with my fav veggies and tofu. Curry Chicken Ramen Noodle Soup. Boil @lotusfoods wheat ramen noodles according to package directions, in salt water, with olive oil, to prevent sticking. When done, drain water out and put cooked noodles in a bowl. In a medium heated pan, add olive oil and season the oil with curry powder, salt, and white pepper. Mix seasonings then add chopped garlic. When garlic is fragrant, add in thinly sliced chicken breast. Cook chicken slices for 5 mins on each side. Next add chopped baby bokchoy to pan and cook for another 5 mins. Pour chicken and bokchoy over noodles in a bowl. In the curry pan, add chicken broth to pan, to pick up seasoning, add extra seasoning to taste. Pour liquid in noodle bowl. Add a boiled egg to the noodle bowl and top soup with sliced scallions and jalapenos. Sprinkle a little smoked paprika on top. Meatless Monday bowls!!! Wild rice and lentils with roasted sweet potatoes, asparagus, cauliflower... topped with a quick vinaigrette made with lemon juice, avocado oil, fresh chopped basil and parsley, salt and pepper! I added raw onions in once I mixed it up because I like the crunch of them but you can certainly roast them with the other veggies if that’s your preference!!! I couldn’t decide which picture looks better, plated or the mixed up one so please let me know in the comments as that will be the picture attached to the recipe on my site! Been out running errands all day so when I got home I rushed to get dinner together before I lost all the good natural light....yep, I’m that person now. My kids fondly call this GREEN SPAGHETTI! . . . This is one of our favorite dinners, a healthy spin off of my favorite Cheesecake Factory dish Chicken Bellagio. I use Trader Joe’s quinoa and brown rice spaghetti, Trader Joe’s vegan kale pesto, baked chicken, prosciutto, arugula and cream sauce made from cauliflower and cashews! So good! And easily 1/3 the calories of the Cheesecake Factory version. . . . What is your favorite restaurant dish? I absolutely love coming up with healthier versions so lay them on me!
