A little bit about my story.. Im 37 years old. I have 4 kids ages 8,7,4, and 2. I have polycystic ovary syndrome which gives me higher testosterone levels and weight gain is a common side effect. I struggled with infertility and we adopted our oldest son. I started learning a bit about healthy eating bc of my PCOS and got pregnant 6 months after our adoption! After I stopped nursing my daughter 6 years ago, I started looking for a way to lose all the baby weight and get back in shape. I was so intimidated to start at a new gym and I thought everyone would be a meathead or unfriendly😂 I found a small CrossFit gym with a female coach and started going two times a week. I started learning about paleo eating. I saw results immediately and it really changed my life, mentally and physically! I enjoyed eating healthy but I felt like super healthy people would eat such bland food, or eat the same thing every day. I also kept hearing how “abs are made in the kitchen” and how what you put in your body is the key to health- but I didn’t totally believe that. I was the person who ate mostly healthy during the week, but if I was honest just didn’t want to change that Ben & Jerry’s, Chick-fil-a #1 meal with ice cream, chips for snacks, frozen yogurt bc it’s “healthier”, donuts on the weekends, cheese and crackers for snacks, too much bread/processed starches, using bad food as a reward or just for fun etc. (I’m all about moderation and treats are ok- I’m just more choosy now!) I was getting stronger and healthier, BUT when I truly changed my diet and started eating clean- truly clean and finding delicious replacements for a lot of those old habits-everything CHANGED. But I don’t eat boring food! And I have a passion for healthy eating- but making it taste good. I’m not concerned about the number on the scale, but today my body fat is the lowest it’s ever been, and I feel the best I’ve ever felt. This is what 4 months of consistent exercise, dense and clean nutrition, enough sleep, cutting toxicity out of my life, self development and taking care of myself look like. At this beginning of this process I hid these before photos from my husband (as if he didn’t know how out of shape I was because he didn’t see the pics 😂😂), I was so embarrassed. Owner: @thevegansclub ➕ ➕ ➕ ➕ ➕ 🥟 Vegan Pierogi stuffed with potato and vegan cheddar! 📷 by plantifullybased 🚨🚨Recipe: Makes 15 big pierogi or 25-30 smaller ones. Dough 3 cups all purpose flour 1 cup warm water 3 tbsp olive oil 1/4 tsp salt Filling 3 russet potatoes 1/3 cup almond milk (or any non-dairy milk) 1/4 cup vegan sour cream 3 tbsp vegan butter 1/8 tsp black pepper 1/4-1/2 tsp salt (or to taste) 2 oz vegan cheddar cheese, grated 1/2 vidalia onion 1 cup water 3-5 tbsp vegan butter for pan-frying Vegan sour cream for serving METHOD Peel and chop the potatoes. Thinly slice the onions. In a pot with boiling water add the potatoes and cook for 20-30 minutes until fork tender. To caramelize the onions add 1 cup of water into a pan. Add the onions and continuously stir and check on them. Do this at a very low heat. Prepare dough by adding all ingredients into a bowl and using a fork to lightly combine dough together. Once a shaggy dough has formed, spill it out onto a clean surface and begin to knead with hands. This will take about 10 minutes and work until a smooth dough is formed. If the dough feels a little dry add in 1 tbsp of water. Once you can form it into a ball let it rest for 15-20 minutes. Cover it while it rests so it doesn’t dry out. The potatoes should now be done and you can add drain them. Add in the rest of the filling ingredients except the vegan cheese and mash the potatoes. Get it as fluffy and mashed as possible. Once the potatoes are cooled down you can then add in the vegan cheese. Mix to distribute it evenly . En un plato hondo ponemos el huevo, agregamos pimienta, sal y yo puse un poco de paprika, revolví muy bien eh introduje la empanadita que hice, puse un sartén a calentar con un disparo de aceite de coco y cocine por ambos lados, hasta dorar. #PracticeWhatYouPreach I’m constantly reminding you of the importance of incorporating fruits 🍉 and veggies 🍅 in your children’s meals. I thought it was important to share what’s in my fridge/kitchen. I eat a lot of “garbage”(that’s what keeps me gordita), meaning foods that have no nutritional value, but I eat the healthy, nutritious staff first thing in the morning, at lunch and dinner (that’s what keeps me healthy). I also force myself to exercise at least 1 hour every day. The minimum recommend exercise time for children is 1 hour. Going for a walk with your children connects you at a different level. The conversations are very interesting. At home there is always a distracting things that prevent you from having those super rich chats with your kids. My kids are grown now, and I miss those “walk&talk” moments. If you still can, don’t waist another minute reading this, take them for a walk! When you come back, share the funniest thing your child said.
