paleo PUMPKIN pancake party!! 🥞🎃(say that 10 X fast 😂) to start off this Monday! recipe is from the wonderful @bitesbymi! all i did was add a splash of vanilla extract and a splash of almond milk to the batter to make them a little thinner 👌 who else can’t believe it’s already the last week of September?! 🙀🙈 . paleo pumpkin pancakes 👉 it’s linked in my stories! but here’s what i used: 1/2 c pure organic pumpkin 2 pasture raised eggs 1 tbs ground flax 1 tsp cinnamon 1/2 tsp vanilla extract splash of unsweetened almond milk *blend all ingredients together and cook over medium heat! I topped mine with some butter and maple syrup (since this recipe is not sweetened!)

This Monday morning I’m feeling fresher than I can remember ever feeling at the start of a week. Yesterday was the perfect lazy man Sunday filled with an extremely much needed social media detox. As much as I love Instagram and all that’s on here, every once and awhile I find my thumb opening the app on my phone when I don’t even mean or want to (hello muscle memory). When I catch myself doing this, even at times where I just closed the app a minute ago (anyone else?!), I take that as a reality check, move the app to the back page of my phone, and say adios for the day. I find it to be such a nice refreshing reset. Do you guys take digital breaks? If so, what’re your tips? This Monday’s meal prep: ground turkey taco bowls, fall roasted veggie salad, raspberry chia pudding, salmon and roasted vegetables, and spiced apple overnight oats at New York, New York

Chocolate Peanut Butter Coconut Cookie Dough Balls Ingredients: * 2/3 cup creamy peanut butter * 1/4 cup + 1 tbsp honey * 1/2 cup coconut flour * 1/3 cup chocolate chips (I used @enjoylifefoods) * 1/3 cup unsweetened shredded coconut Directions: In a large bowl whisk together the peanut butter and honey. Mix in the coconut flour until combined, then the chocolate chips and coconut. Roll into 1-2 inch balls and place on parchment-lined plate or baking sheet. Refrigerate for at least 30 minutes. Can be stored in fridge for about a week days or in the freezer for longer. Makes 12-16 balls. at New York, New York

Orzo with prawns, tomato and marinated feta 🦐🍅🧀 Yesterday I made another recipe from @ottolenghi's new Simple cookbook - and it was delicious! I've copied the ingredients and directions from the book itself. I simply left out the salt so Teddy could have a bowl for his dinner as well 😀. ~ 200g feta, broken into 1-2cm pieces ½ tsp chilli flakes 4 tsp fennel seeds, toasted and lightly crushed 75ml olive oil 250g orzo Black pepper 3 garlic cloves, peeled and crushed 3 strips finely shaved orange peel 1 x 400g tin chopped tomatoes 500ml vegetable stock 400g raw shelled prawns 30g basil leaves, roughly shredded ~ 🌿 In a medium bowl, mix the feta with a quarter-teaspoon of the chilli flakes, two teaspoons of the fennel seeds and a tablespoon of oil. Set aside while you cook the orzo. 🌿 Put a large saute pan for which you have a lid on a medium-high heat. Add two tablespoons of oil, the orzo, an eighth of a teaspoon of salt and a good grind of pepper. Fry for three to four minutes, stirring frequently, until golden brown, then remove from the pan and set aside. 🌿 Return the pan to the same heat and add the remaining two tablespoons of oil, a quarter-teaspoon of chilli flakes, two teaspoons of fennel seeds, the garlic and the orange peel. Fry for a minute, until the garlic starts to brown lightly, then add the tomatoes, stock, 200ml water, three-quarters of a teaspoon of salt and plenty of pepper. Cook for two to three minutes, or until boiling, then stir in the fried orzo. Cover, then lower the heat to medium low and leave to simmer for 15 minutes, stirring once or twice, until the orzo is cooked. Remove the lid and cook for one to two minutes more, until the consistency is like a risotto. Stir in the prawns for two to three minutes, until they turn pink and are cooked. Yikes! 🙈Celebrated 29 years of living on this planet 🌎 this past Saturday and I gotta be honest…. It feels a little weird being only a year away from 30! 〰️ While I’m excited to take on the last year in my 20’s its a little scary… and sad☹️. This is it. Only one more year and this decade of my life is over… ill never get it back. 〰️ Im one of those people that holds onto things and memories so tightly… pretty much with a death grip. Its so hard for me to let it go. But so many say their 30s are the best years of their life… so there’s that to look forward to! 〰️ Looking back… SO much has happened this past decade.. including a tremendous amount of personal growth. I have a much deeper and more grounded sense of self💫.. and that my friends is the greatest birthday gift of all. Im able to weed through and confidently say “no” to opportunities, friendships, or anything that doesn’t align with my values and goals. If it’s not gonna make me better or help me grow... Heat 2 tbsp sesame oil (or neutral flavored oil) in medium saucepan and sauté 1/2 yellow onion (finely diced) until golden brown. Add 4 minced garlic cloves and sauté another 30 seconds. Add 1/2 tsp dried oregano, 1/2 tsp smoked paprika, 1/4-1/2 tsp chili powder, salt to taste. Sauté a few seconds before adding 4 tbsp tomato paste. Mix together and add 1.5 tbsp reduced-sodium tamari/soy sauce, about 2 tsp sriracha, 2 tsp maple syrup and mix. HELADO DE FRUTAS 🍨 Muy buenos días gentecilla, ya empezamos de nuevo la rutina de nuestra semana y que mejor que hacerlo con un buen helado saludable y casero. INGREDIENTES ▶️50g mango congelado🍑 ▶️50g piña congelada 🍍 ▶️50g melocotón congelado 🍑 ▶️1 vaso leche vegetal 🥛 ▶️Canela molida en polvo 🌾 Para empezar cortaremos la fruta en pequeños trozos y la congeleramos durante 12 horas aproximadamente. Después sólo necesitaremos verter los alimentos en un vaso apto para el termomix y batiremos, recordad que podéis añadir canela al finalizar para darle un toque diferente y servir al momento. No hay nada mejor que disfrutar de un buen helado sin cargo de consciéncia, ponte manos a la obra y cuéntame que tal te ha salido. 💚 at Valencia

Pan Grilled Chicken! Recipe: I used two pieces of chicken breasts here. Wash them and make sure you drain out as much water as possible. Add salt + lots of ground black pepper + 1/2 teaspoon mlemon juice. You can cook them after 30-40 mins or refrigerate overnight. You can even freeze them for a few days! I marinated them then left them in the freezer for 2-3 days 😂 just make sure you use an air tight container. . . Heat a pan on medium flame, add 1/2 teaspoon of butter or ghee. I used butter. Place the chicken breasts. Cook each side for 3 mins straight at medium heat to get that gorgeous browning. Then cook over low-medium heat for 5-10 mins till an inserted knife/fork goes through smoothly and you know it's cooked. . . I sliced mine before serving. You can cut them into bite sized chunks and enjoy them with some dip or make a dip with 3tbsp thick dahi + chopped onions + chopped mint/coriander (pudina/dhania), chopped green chillies, and salt. HEAVEN! . . My lunch: pan grilled chicken with a small portion of rice and some cucumber with a squeeze of lemon. Who said healthy food cannot induce envy? 😉 The chicken was perfectly cooked and so juicy! . . . Beef Broccoli🥦 by @healthyfitnessmeals. . INGREDIENTS (Servings 2): _ 1 pound beef steak. _ 1 tablespoon + 1 teaspoon vegetable oil. _ 2 cups broccoli florets. small. _ 1 cup mushrooms sliced. _ 1 teaspoon fresh ginger minced. _ 1 teaspoon garlic minced. _ ¼ cup oyster sauce. _ ¼ cup chicken broth or water. _ 1 teaspoon honey. _ 2 teaspoons sesame oil. _ 1 teaspoon soy sauce. _ 1 teaspoon cornstarch. _ salt and pepper to taste. _ Optional garnishes: 2 tablespoons sliced green onions 1 tablespoon sesame seeds. . INSTRUCTIONS: 1. Heat 1 teaspoon of oil in a large pan over medium heat. Add the broccoli and mushrooms and cook for approximately 4 minutes or until vegetables are tender. 2. Add the ginger and garlic to the pan and cook for 30 seconds more. 3. Remove the vegetables from the pan; place them on a plate and cover. 4. Wipe the pan clean with a paper towel and turn the heat to high. Add the remaining tablespoon of oil. 5. Season the meat slices with salt and pepper and add them to the pan in a single layer - you may need to do this step in batches. Cook for 3-4 minutes on each side until browned and cooked through. 6. Add the vegetables back to the pan and cook for 2 more minutes or until the vegetables are warmed through. 7. In a bowl whisk together the oyster sauce, chicken broth, honey, sesame oil and soy sauce. In a small bowl mix the cornstarch with a tablespoon of cold water. 8. Pour the oyster sauce mixture over the beef and vegetables; cook for 30 seconds. Add the cornstarch and bring to a boil; cook for 1 more minute or until sauce has just started to thicken. 9. Keto friendly and Herb Cauli Rice with half fried egg on top. Recipe: Wash and thoroughly dry cauliflower, then remove all greens. If using a box grater, cut the cauliflower into large chunks and use the medium-sized holes, to grate into size similar to rice. If using a food processor, cut into small pieces and use the grater attachment to grate the cauliflower into "rice." then Transfer to a clean towel or paper towel and press to remove any excess moisture, which can make your dish soggy. Once you have your cauliflower rice, it's easy to cook (or enjoy raw)! Simply sauté in an deep cooking-pot over medium heat in 2-3 Tbsp of Olive oil. Cover with a lid so the cauliflower steams and becomes more tender. Cook for a total of 10-15 minutes. In a separate pan add 1 tsp of olive oil and add mustard seeds and Onion and saute for 5 minutes. Add 1 tsp of Oregano, 1 tsp Black pepper, 2 tsp of Soy sauce and 4 tsp of Apple sider vinegar. 1 tsp of Stevia is optional. I LOVE cereal. Cinnamon chex these days 🤷🏼‍♀️ But eating cereal for breakfast every day isn’t the intuitive choice for me! Why? Well no matter how much cereal & almond milk I eat, I know I’ll be hungry again an hour later. So on busy days, something more filling like a yogurt bowl, eggs and toast, smoothie, etc are the more intuitive choice for my overall nutrition and day. But yesterday I really needed a break. No such luck. Kids took over the kitchen making vegan cinnamon rolls and white bean ziti. And so I was called upon many times. So much for a break😴. 💚Anyway, about this delicious meal...Romesco sauce is the perfect condiment for roasted veggies and ‘meatballs’! I usually make my own, but recently discovered @havenskitchen prepared sauces and they’re great when I don’t have a lot of time. Very flavorful😋. 🌱Recipe lentil pecan bites: Make flax egg by combining 1 tbsp ground flaxseed with 2-1/2 tbsp water. Let sit a few minutes. Heat 1 tbsp olive oil in small saucepan. Sauté 1/2 diced red onion + 3 minced garlic cloves until just fragrant. Add 1 tbsp tomato paste, 2 tsp oregano, 1 tsp basil, 1/2 tsp thyme. Sauté another minute. Transfer to food processor: 1-1/2 cups cooked green lentils (cooked in vegetable broth and drained), onion/garlic/herb mixture, flax egg, 1/4 cup toasted and chopped pecans/walnuts, 1 tsp olive oil and pulse until just combined but still with texture. Mix in 1/4 cup oat flour and salt/pepper to taste. (Use more oat flour or olive oil to adjust texture so dough-like.) Use scoop to form equal sized balls and spread evenly onto parchment-lined baking sheet. We need: -1 slice of bread -1/4 avocado -1 egg -vegetable oil . Cacao almond butter buckwheat bars, what’s not to love🤩 ✨ Quick and easy snack bars when in need of something yummy, with a healthy, sweet twist. Made of only 🖐🏼 simple ingredients!! 🍫 On a low heat add some coconut oil to a pan and stir until melted. Next add some honey, @meridianfoods smooth almond butter and some @gochocchick cacao powder. Adjust the quantities to suit your taste. 🍯 Once a nice, runny, sticky consistency, stir in the buckwheat puffs. 🥜 Once the buckwheat puffs are fully coated, lay the mixture onto a tray and freeze for at least 1 hour. Then cut into bars and serve. The bars can be stored in the fridge for up to a week for a healthy, nutritious pick me up. 🍰 Would also work well as rice crispy cakes in fairy cake cases. at Manchester, United Kingdom

📍@Ezraandgil has got to be my most visited brunch spot in Manchester’s Northern Quarter. 🌱 This hidden gem is situated inside an old industrial warehouse and without a recommendation you just would not know it existed. The exterior is standard and you would not expect a large, busy, bustling restaurant within. 🐶 The cafe is very welcoming with plenty of large sharing tables for those alone or working, plus they also allow dogs inside so my little pooch comes with me quite a lot. 🥑 The food is spot on every single time and so aesthetically pleasing for that staple instagram pic. They also make the best iced matcha lattes which they serve to take away too. 🍳 The menu is varied with lots of vegetarian, vegan and gluten free options available. Overall this place is delish and somewhere I always recommend. at Ezra & Gil

Feeling very autumnal this morning with spiced apple pie overnight oats🍏 ✨ Overnight oats have got to be my fave go to breakfast. As they’re prepared the night before there’s absolutely no mess or rush in the morning and you have a healthy breakfast waiting for you to eat. 💛 Oats are slow releasing carbs allowing you to maintain your energy levels throughout the morning without that big crash in energy, making you reach for that sugary snack! 💚 They are also full of fibre keeping you feeling fuller for longer, as well as iron, magnesium and other important minerals, B vitamins and antioxidants. 🌱 They can be prepared, flavoured and incorporated in so many different ways which makes them so versatile and never boring! 💰 They are also super super cheap so a perfect student staple! To make my apple pie overnight oats: 🍎 In a bowl add 1/2 cup oats, 1/2 grated apple (no skin), 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1 tbsp chia seeds, 2 tbsp raisins and 1/2 cup almond milk. ⚡️ Mix together with a spoon and transfer the mixture to an airtight container. Store in the fridge overnight. 😍 In the morning, top with apple chunks, hemp hearts, chia seeds and a sprinkling of cinnamon or whatever else you fancy! at Manchester, United Kingdom
