Today is 4️⃣ years since I went public with my journey...I was only 3 months into my transformation and down 39 pounds. I was no longer hiding in the shadows afraid of failure but still hoping “this time would be different”. I felt better than I had felt in years and couldn’t (and didn’t need to) keep it a secret anymore. I knew the path that I was on would lead me to a healthier life. I knew I was surrounded with the most incredible friends & community that would hold me accountable & cheer me on along the way. I knew I had a top notch nutrition plan that was simple, safe, and effective. I knew I’d been immersed in the best health education that would help me change my habits and strengthen my mindset. But what I didn’t know was how becoming a health coach was the BEST decision of all. Here I am 4 years later, still in love with the choice I made in 2015 to pay it forward as a coach. Not only have I been able to help hundreds of people with their overall health but I’ve become a business coach as well and love mentoring & growing alongside other clients who have become coaches. I get to assist people in dreaming BIG. I get to be a part of mom’s paying cash for their family vacations. I get to watch the unfulfilled find purpose. I get to witness people leaving full-time jobs to be stay at home parents. I got to personally step away from my full-time teaching job for six months to care for my mom in her final months. I get to be inspired by families creating a legacy. Bruchetta Eggplant with Tofu 🙌 Ingredients 30 oz Mori-Nu® Silken extra-firm tofu*, cut into ½” cubes 1-½ cups raw, unpeeled eggplant, cut into 1” cubes 1 cup (1-2 medium 2-3/5”) plum tomatoes, seeded and chopped ½ cup scallions (3-4 scallions), chopped 2 Tbsp fresh basil leaves, chopped 2 tsp olive oil ¼ tsp garlic powder 1 clove garlic, minced Non-stick cooking spray Dash of salt and/or pepper (optional) *Tofu can vary significantly in its nutritional content, depending on the type and brand. Direction Preheat oven to 400° F. Lightly mist a large (or two medium) non-stick baking sheet with non-stick cooking spray until lightly covered. Place eggplant and tofu, well-spaced, in a single layer on baking sheet. Lightly drizzle olive oil over eggplant and tofu. Sprinkle on garlic powder. Bake 7-10 minutes. Flip and bake an additional 7-10 minutes, or until eggplant is tender when tested with fork. In large serving bowl, combine tomatoes, scallions, garlic, and basil. Add eggplant and tofu. This might seem like an inflammatory 🔥 quote to share but my aim is to have people that are not in the medical world understand the limitations of their doctor, nurse or particular medical practitioner… modality irrelevant. ⁣ ⁣ ⁣ BASIS OF DISEASE ☢⁣ •••⁣ For the most part disease is not inherited nor struck upon you for no reason. All information that we allow in to our body, irrelevant of form is treated in 2 ways, that of nutrition or that of toxin, and YES… I am including input from all bodily senses. Of course poor food nutrition is one of the biggest prognostic factors for wearing your body down to the point it has developed a disease.⁣ ⁣ ⁣ SCOPE 🔀⁣ •••⁣ For this reason, I’ve made it a bit of a habit over the last 5 or so years to ask the medical doctors that I have worked with about their nutrition education, to which the most impressive answer I have received was “I think maybe 3 lectures” as he reflected on university 30 years beforehand. ⁣ ⁣ In fact, I recently asked a good friend of mine whom graduated the month before from medical school, “As one of Australia’s newest medical doctors, what is the latest nutrition education being taught”... Working on learning a new empty hand style of martial arts. I’m currently traveling and have a nasty cold, so I can’t do my normal rigorous workouts. Decided to work on katas instead. This kata is FaRang Mu Sul Dan Hyung #1 (Short Form). I think I’m doing pretty well with this. I was only shown how to do it once and had a much faster version on a video to reference. Some of my movements are a little awkward. Especially my kick I keep reverting back to a different style, so it turns into a weird hybrid of two types of kicks. With more practice I will get this kata tightened up and looking good. I really enjoy the meditative mindset katas help me settle into. With my cold I can’t do anything super aerobic, but there is always a way to study and perfect martial arts. It’s all about sticking with it and keeping up with good habits. Do you want to lose weight? Then it’s time to get smart. 1st - Since you really want this, don’t be in a rush. Don’t fall into trying to see how quickly you can lose the weight. Now, I get it. You wanted those extra pounds gone yesterday, but the goal is to keep the weight off for good. Don’t choose a restrictive diet that’s going to leave you frustrated and ready to quit. That leads to the second point. 2nd -Your eating habits are going to change. And there are going to be things that permanently change. Again, I am not talking about never eating pizza again or other such foolishness. Staying with the example of pizza, I am saying, you aren’t going to be able to overeat on pizza several times a week or month. Instead, you may have a slice or two and pair it with a salad. That change is going to happen because you are changing your lifestyle and not just “dieting”. 3rd - You are going to make changes you can live with. Can you pack a lunch every day or look up low calorie, delicious options at your favorite restaurants. You aren’t going to just try to eat less. You are going to make better choices. I looove COCONUT YOGHURT as an alternative to milk yoghurt. It also naturally tastes sweeter! Just one problem: It’s SOOOO EXPENSIVE! Solution: MAKE IT YOURSELF! Depending how many people eat from it use 1 or 2 cans of (preferably organic) full fat coconut milk or cream (cheap!!!) Put the coconut milk into a saucepan and heat gently until about body temperature (37 degree). I recommend you use a thermometer to make sure you don’t overheat the milk. Stir in 1 tsp good quality (beef) gelatin and 1/2 tsp probiotic yoghurt starter. Continue to stir at 37 degrees for a few minutes to make sure that the gelatin is fully dissolved. Pour some hot water into a very clean jar to warm the glass before putting the yogurt into it. Pour out the water and put the yogurt into the jar. Leave to set for at least overnight until yogurt is set. When set, put it in the fridge and allow to get cold through.The yogurt will become thicker as it gets cold. The yogurt may separate a little as it gets cold. This is quite normal – just give a little stir or shake to mix through again. If you are in the proud possession of a thermo mix, which is what I used because this makes sure it stays at a steady 37 degrees at all times: Put the butterfly into the Thermomix bowl and make sure it’s locked in place. Heat the coconut milk – 5 minutes, 37 degrees, speed 3 Then stop and add the gelatin and probiotic starter – making sure it is not caught on the butterfly, but is on the milk Mix for 10 minutes, at 37 degrees, speed 3 to ensure that the gelatin is fully dissolved Pour some hot water into the jar to warm the glass before putting the yogurt into it (If using Thermo-server do the same with it) Empty the water out and pour the yogurt into the jar (or Thermo-server) If using the Thermo-server, put the lid on it, wrap it in a towel and set aside) Voila! Gut loving 🥰 coconut yoghurt for CHEAP!

Investing in Your Health is Investing in Yourself! We may take out loans for education, a house, car, new x, y, z. We update our wardrobe or décor according to the latest fashion trends, buy the latest technology item or subscribe to some monthly club. We invest in our material happiness on a daily basis for our entire life to “Keep up with the Jones’s”, but how long will you get to enjoy those things if your are not healthy? We need to learn to invest in our health just as we invest in all these other experiences. The difference? These other items are trendy and are often obsolete before they are even worn out. Our health and our bodies on the other hand are wearing out daily and have a shelf life. How long we operate at optimal levels is up to us and depends on how we invest in ourselves NOW! YOU are the President, CEO and Manager of your health and life. Like these other titles, you SHOULD have experts or someone extremely knowledgeable in the areas of health (nutrition, exercise, sleep, mindfulness, connection and environment), BUT you should also have a baseline of knowledge and practice established in these areas. That way when an issue arises, you can consult your expert in that field. In the end, YOU are the one to make the final decision on what needs to happen based on your lifestyle. In other words, when you consult with your medical doctor, friend, nutritionist or health coach, make sure they heavily know your life’s story, goals and ambitions. If they do not take the time to really get to know you, how can they advise on what is truly best for you. Just like we pick out our significant other and friends based on their qualities and what they bring to the relationship, we need to pick out our healthcare team in the same manner. Your healthcare team should care about your past and what you want for your future and spend the time figuring it out WITH you, not FOR you. Invest in yourself now so that when you retire, you are not to sick, overweight or tired that you spend all your time and money at your doctor’s office and hospital.
