Lemon Cod for supper. I was actually half way through it, when I remembered that I hadn’t taken a photo! So here is supper number 3 on Renew Reset Recharge-well what was left of it! The same thing happened last night. I cooked chicken fajita kebabs that were so delicious that I finish them before I remembered the photo. So there is some truth when you change your eating habits (I had been snacking too much on lockdown) you do feel hungry for the first 2 days. It’s just the body adjusting to using the fat stores again between meals. In the first few days it sends hunger messages to our brain every time our blood glucose dip a bit. After a few days the body stops feeling so hungry and it naturally dips into the fat stores to top it up our blood glucose levels between meals. This is how our bodies are designed to work-it’s just that sometimes we forget. So when you change your eating habits, it’s okay to feel a bit more hungry initially, but if you stick with it your body soon gets used to it. It’s not real hunger, as none of us are really going to starve between lunch and dinner, it’s just a perceived hunger. I somehow got back into the habit of snacking in the evenings. It’s just not a good idea to go to bed with a full stomach. We all know this, but still sometimes our stomach overrides our brain. I always feel so much better when I don’t eat between meals. It also means I can have a healthy appetite at mealtimes and I also wake up ready for breakfast. A bit like being a child again!! You have had all night to rest, cleanse and repair that you are ready for your next meal again. Also, the small intestine does an amazing cleanup at night. It has a fluttering dance movement called the migrating motor complex, which flushes all the debris, any unwanted bacteria or fragments of food into the large bowel. It’s like a digestive spring clean ready for the next meal. .

golden coconut curry cauliflower🌞 ✨ 4 cauliflower heads 1 tbsp garam masala powder 1 tbsp turmeric 1/2 cup coconut milk 1 tbsp salt 1 tbsp pepper 1 tbsp coconut oil 3 minced garlic cloves 1 tbsp chopped onion ✨ Boil water and add the cauliflower in until semi cooked. Remove from the water once ready and place in a bowl. Marinate your cauliflower with the spices first, mix well and then add the coconut milk. Let it marinate for at least 15 min. In a pot, heat the oil and add garlic, and onions. Once golden, add the cauliflower in, with its sauce. Chicken Stew with Turmeric Ingredients: 4 or 6 chicken legs 1 cup chopped onion 2 cloves garlic, minced 3 potatoes, peeled and cut into pieces 2 teaspoon turmeric powder 1 cup chicken or vegetable broth salt, pepper, and cumin red pepper slices (optional) mint leaves Preparation: 1. Season the chicken pieces with salt and pepper. In a saucepan, brown the chicken legs on both sides. Reserve. 2. Brown the onion with the garlic for 5 minutes. Season with salt, pepper and cumin. Add turmeric powder. Stir. Add chicken or vegetable stock. 3. When it is boiling add the potatoes, lower the heat, cover and let the potato cook for a few minutes. 4. Add the chicken. Cover. Let it simmer for 10 minutes or until cooked. 5. Add red bell peppers and good herb leaves. Can be served with rice! 😜 Note: If you use potatoes that cook quickly, cook them together with the chicken. I prefer to use ones that take time to cook to prepare stews. Home-made Focaccia for those italian cravings 🤤 this flat bread has been a great introduction for me to the bread making world. This is a great idea for a fun dinner or afternoon activity. Ingredients: Makes 2 middle size Focaccias For the dough ▫️2 and 1/4 cup of all purpose flour (I used @Bobsredmill Gluten Free Flour) ▫️2 and 1/14 teaspoon of yeast ▫️1 cup of warm water (I heated water for 20 seconds on the microwave) ▫️½ teaspoon of honey ▫️½ cup of olive oil ▫️2 minced garlic cloves ▫️2 tbs dried basil or rosemary Toppings: 🍅Sliced mushrooms and cherry tomatoes 🍎🧀Sliced apples, 1 oz of goat cheese and a drizzle of honey on the top How To: The recipe is a little waiting game since you have to give the dough a few minutes here and there to rise and incorporate, however is easier done than said, so take the challenge and make some delicious Focaccia! 1. Pour the olive oil to a pan with the garlic cloves and dried basil on low heat for about 5 minutes until it becomes aromatic. Set aside. 2. On a bowl add the yeast, the warm water and the honey, let it incorporate for 5 minutes. 3. Add 1 cup of flour and half of the mixture of the olive oil to the yeast mix and incorporate. Let it wait 5 minutes and add the rest of the flour and wait 15 minutes. 4. Knead the dough 10 to 15 times. (molding the dough with your hands shaping it like a ball and pressing it softly). 5. Leave the dough in the bowl in a dry/warm place covered with a damp towel for 1 hour. 6. When the dough has rose completely, take it out of the bowl, split it in two and place them into a mold with parchment paper with some drops of olive oil and spread it across the mold pressing with your fingers. 7. Once the dough is thinly spread, add the remaining infused olive oil on top of your two focaccias and have fun adding your favorite toppings. 8. Bake on 460 •F for about 25 minutes or until it looks golden brown. Remove from oven and enjoy!

El “queso” a base de patata y zanahoria...😏 Se acerca el finde y a todos nos apetece como nunca el picoteo🙊🙌🏼 ¿Y si probamos cosas nuevas? ⠀⠀⠀⠀⠀⠀⠀⠀⠀ El otro día me animé a probar el dip de queso vegano, hecho a base de otros ingredientes ¡y sin queso vaya! Y oye, lo disfruté mucho muchísimo, tanto que allá vamos con la receta🤩 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ DIP DE “QUESO” VEGANO🧀👅 🌿Ingredientes: -300 gr. patata -150 gr. zanahoria -125 gr. agua -40 gr. levadura nutricional (clave) -50 gr. Εύκολες και γεμάτες ενέργεια! 💪 Καταλαβαίνετε ότι γενικά δεν αγοράζω μπάρες και ειδικά από σούπερ μάρκετ, αλλά νιώθω καλύτερα όταν τις φτιάχνω. 😊 ➡️Υλικά: ✔️100γρ. νιφάδες βρώμης ✔️50γρ. φουντούκια ✔️60γρ. ινδοκάρυδο ✔️250γρ. κουβερτούρα (53%-55% περιεκτ. σε κακάο) ✔️2 κσ. ταχίνι ή φιστικοβούτυρο ✔️1κ.γ. εσάνς βανίλιας ✨Στρώνουμε λαδόκολλα σε ένα τετράγωνο ταψάκι 18*18εκ. ή 20*20εκ.(θα βγούνε πιο λεπτές) Στο μούλτι χτυπάμε τις νιφάδες βρώμης, τα φουντούκια και το ινδοκάρυδο να γίνουν σκόνη. Τεμαχίζουμε την κουβερτούρα σε πολύ μικρά κομμάτια και τη λιώνουμε σε μπεν μαρί μαζί με τη 1κ.σ. βούτυρο. Αφού λιώσει, αποσύρουμε από τη φωτιά και ρίχνουμε μέσα το ταχίνι, ανακατεύοντας να αναμειχθεί. Προσθέτουμε τη βανίλια και τη σκόνη των στερεών, ανακατεύουμε με κουτάλι ή μαρίζ και ρίχνουμε το μείγμα στο ταψάκι. Apple Cinnamon Cookie Energy Bites Ingredients * 
2 cups old-fashioned oats * 
¼ cup ground flaxseed * 
¾ teaspoon cinnamon * 
½ cup almond butter * 
¼ cup plus 1 tablespoon honey * 
1 teaspoon vanilla extract * 
pinch of salt * 
1 cup not packed grated apple (about 1 medium) Instructions * In a large bowl, stir together the oats, flaxseed, and cinnamon. In another bowl or a liquid measuring cup, stir together the almond butter, honey, vanilla, and pinch of salt until well combined. Pour over the oat mixture and stir until everything is evenly coated. (I use my hands at the end to make sure everything is well mixed.) Stir in the grated apple. * Scoop the mixture into tablespoon-sized portions (I use my small cookie scoop), and use your hands to squeeze it together into a ball. Slightly wet hands will help to keep the mixture from sticking. * Store the energy bites in an airtight container in the refrigerator. They will keep for 3-4 days. ✨I should start this by saying I impulsively wanted a quinoa porridge-type breakfast with fruit and cinnamon and had this idea that it would come out perfectly in my rice cooker (I did no research)! So I found the first bare bones recipe I could for quinoa with almond milk and added some other things into it then closed the lid + called it good 🤷🏻‍♀️😬 It leaked out EVERYWHERE, the kitchen was a mess, and it didn’t look great when I opened the cooker 😂 (my true reaction) Although it didn’t taste bad, I wouldn’t recommend it and need to try again with lots of alterations because this was a mess! Not every meal turns out perfectly or pretty or delicious haha but I love experimenting with food and this is just part of it✨

PASO A PASO👇🏻 1️⃣Cocinar la espinaca. 2️⃣Mientras eso se cocina... Con un palo de amasar ir golpeando y estirando las pechugas de pollo hasta que queden más o menos finitas. 🍔Pan de hamburguesa 🍔. . ¡Hoy se celebra el día mundial de la hamburguesa! Por eso os traigo ésta receta de pan de hamburguesa casero que espero que os guste!. . Pan hamburguesa Fit Life. . Ingredientes para 3-4 panecillos (según tamaño). . 90gr de leche. 5 gotas de limón. 280gr de harina. 1cp de sal. 1 huevo. 15gr de AOVE. 5gr de levadura fresca prensada. 1 clara de huevo + semillas de chía para decorar. . Preparación. . 1. Mezclar la leche con el limón y dejar reposar unos 5 minutos hasta que se corte. 2. Añadir el azúcar, la sal, la harina y el huevo. Amasar todo el contenido a mano o con ayuda de un robot de cocina o panificadora. 3. Una vez amasado, añadir el aceite de oliva y la levadura prensada y seguir amasando hasta que quede una masa homogénea. Dejar reposar 1h30 cubriendo la masa con un bol para que no pase el oxígeno. 4. Cuando la masa haya doblado su tamaño amasar de nuevo para que salgan las burbujas de aire. Separar la masa en 4 porciones y dar forma de panecillo. Posteriormente, cubrir con un paño húmedo 1h más para que fermente. 5. Pasada la hora, hornear a 190°C durante 15 minutos. . ¡Y ya tenemos nuestros panecillos homemade para celebrar el dia de la hamburguesa! One serving contains 12g of plant-based protein, which means this dinner will keep you satisfied! I snagged mine at @KrogerCo in the Meatless/Meat Alternative section of the freezer aisle but you can also get them via @Instacart in select locations! . INGREDIENTS 24 oz jar pasta sauce 14 oz can diced tomatoes 2 cups vegetable broth 1 cup water 1 tablespoon Italian seasoning 1 (20oz) package of Garden Inspirations by Farm Rich Meatless Meatballs 16oz package of whole wheat spaghetti . INSTRUCTIONS Add the pasta sauce, diced tomatoes, vegetable broth, water, seasoning, and frozen meatballs to a large pot and cook over medium-high heat. Once the sauce mixture is simmering, add the pasta and reduce heat to medium-low. Cover and cook for 10 minutes. Ya desayunaste??? esta es mi opción para chicos y grandes 👨‍👩‍👧 . . Esta opción deliciosa y nutritiva no te tomará más de 20 min y no es necesario ser un experto en la cocina!! 🤩🤩🤩 . . Ingredientes: (para 3 crepes) . 1/2 taza harina de trigo (usé harina de arroz integral) 1 huevo 1 cda de aceite de oliva Pizca de sal 1/2 remolacha cocida . . Preparación: . Lleva al procesador todos los ingredientes y procesa; la mezcla debe quedar un poco líquida, un poco espesa, si está muy espesa agrega por cucharadas del agua donde cocinaste la remolacha hasta encontrar la textura necesaria. . En una sartén plana, y caliente agrega 1/3 taza de la mezcla y cocina hasta que la crepe se despegue por sí sola. . A parte preparo una tortilla batiendo dos huevos y llevándolos a una sartén engrasada con aceite a de oliva y cocinando por ambos lados. . . Acompaño con frutas y almendras. . .
