Baked sweet potato with crunchy chickpeas and chard. Cut one medium sizes sweet potato in half (longways) and place on baking tray with 2 tblspoons avocado oil. Bake for 50 mins on 380F and turn over halfway through. As you turn it over after 25 mins or so, add 1 cup cooked chickpeas to the same baking tray and season chickpeas with tspoon paprika. Add more avocado oil if needed for the chickpeas. Stir chickpeas once or twice during the remaining 25 mins in oven. They will get a slight crunch to them. Roughly cut 3 chard leaves (including stems). Add to pan with tblspoon avocado oil and 1/2 tspoon coriander seeds. Stir continuously for approx 3 minutes until soft. Season with Himalayan salt and pepper. Place chickpeas on top of baked sweet potato and season with tspoon of @zestyz_official Zataar spread.

Which would you rather? 1,2,3 or 4🤷‍♀️ so much deliciousness 😋😍 Deets: Shrimp seasoned with chili powder and salt and seared in a little coconut oil and bone broth. Greens, tomatoes, avocado and this Mac and cheese Sauce: 4 cups of water (or broth), 1 large potato peeled and diced, 2 large carrots peeled and chopped, 1/2 chopped onion, 1/2 cup raw cashews 1/4 cup whole fat coconut milk, Juice from half of a lemon, 2 tablespoons nutritional yeast, 1/2 teaspoon salt (or more to taste), 1/2 tsp black pepper, 1/2 teaspoon garlic powder. In a large pot boil about 4 cups of water (or broth if you prefer). Boil the veggies And cashews in the water for about 10-15 mins until soft. Save 3/4 cup of the water from veggies once they are done. Remove veggies and cashews from water and place in a blender with the rest of ingredients and the saved water. Blend until smooth. ***SWIPE LEFT*** . . There was a time where I would turn my nose up at a dish like this!! So it still amazes me that I can get so excited over a bowl full of veggies 😍😍 . . During the week I’m working full time so smoothies have been a lifesaver @thehealthymummy smoothies are my choice. So on the weekends I like to relax and have a bit of fun in the kitchen! . . . This meal was so simple: carrot, capsicum, zucchini and broccoli roasted with plenty of seasoning. Pan fry the chicken partly then add to your roasting dish until cooked, you will be amazed at the flavour!! GARLIC BUTTER MEATBALLS WITH LEMON ZUCCHINI NOODLES By @eatwell101 ~ 1/2 lb ground turkey meat 1/2 lb ground pork meat or substitute chicken 1/2 cup shredded cheese of your choice 4 cloves garlic, grated + 2 cloves garlic, minced 1 teaspoon Italian seasoning 1/2 teaspoon red crushed chili pepper flakes, optional 1 crumbled bouillon cube, optional Salt and fresh cracked black pepper, to taste 1 cup fresh chopped cilantro (or parsley), divided 3 tablespoons butter 4 medium zucchini, spiralized Juice of 1/2 lemon 1 tablespoon hot sauce 1. In a large bowl, combine ground turkey and ground pork, cheese, grated garlic, Italian seasoning, bouillon cube, red chili pepper flakes, chopped cilantro and black pepper. Mix well with your hands or fork and form medium balls. Arrange on a plate and set aside. 2. Melt 2 tablespoons butter in a large skillet over medium-low heat. Cook the meatballs for 8 – 10 minutes on all sides, until browned and cooked through. While cooking, baste the meatballs with the mix of butter and juices. Remove to a clean plate and set aside. 3. In the same skillet melt remaining tablespoon butter; then add lemon juice, hot sauce, minced garlic, and red pepper flakes (if you want). Add the zucchini noodles and cook for 3 or 4 minutes, stirring regularly, until zucchini is done but still crisp and juices have reduced a bit. Adjust seasoning with salt and pepper and garnish with more cilantro or parsley if you like. 4. Push zucchini on one side of the skillet and add the meatballs back to the pan and reheat for a minute or two. Serve immediately with a lemon slice on the side. Lower heat to medium low and add in your sun dried tomatoes, spinach, cream, mustard, and dressing. Stir together. Strain pasta and add into the pan. Perfect quick and easy dinner! ~ Red Pepper Garlic Butter 1 cup softened, unsalted butter 3 cloves garlic juice and zest of 1 lemon 3/4 cups fresh herbs 8 ounces jarred roasted red peppers, drained 1 teaspoon chili powder 1/4 teaspoon cayenne pepper for heat 1 teaspoon salt Shrimp and Fettuccine: 16 ounces raw shrimp 8 ounces uncooked fettuccine 1/2 cup heavy whipping cream 3/4 cup reserved pasta water greens, lemons, and salt for serving Red Pepper Butter: Pulse all the butter ingredients in a food process until mostly smooth. Refrigerate or set aside. (You’ll have A LOT of butter and you’ll only need a few tablespoons for this recipe. Keep the extras in the freezer for more of this, or similar recipes, in the future!) Fettuccine: Cook the fettuccine according to package directions. Add pasta back to warm pot and toss with 2-3 tablespoons red pepper garlic butter, cream, and water. Adding reserved water as needed to thin out the sauce. Shrimp: Heat a skillet over medium heat. Add 2 tablespoons of the red pepper garlic butter. Once the butter is melted, add shrimp and saute for a few minutes on each side until cooked through. To make it look creamy, add 1-2 tablespoons of the red pepper butter with a quick splash of cream to the hot pan and toss to combine. Serve: Divide the pasta and shrimp among 3-4 plates. Made Lemon Garlic shrimp 🍤, my very first attempt at cling shrimp yesterday night the recipe is very easy, 1//2 - 1 tbsp. butter with 1 tbsp. extra-virgin olive oil (or any cooking oil, coconut 🥥 oil, avocado 🥑 oil, but you want a type of oil that can be able to handle medium to high heat when cooking, olive oil is okay but I did not have the other type of oil available, but use what you have) 1 lb. medium shrimp, peeled and deveined (I got medium sized shrimp but it’s up to you the type of Shrimp that is commonly used is the white shrimp which at the fish counter would look grey, once cooked it will turn pink), 1 clove garlic, minced (depends on your preference of flavor you can use more if you wish), parsley 🌿, oregano 🌿, lemon 🍋 juice, fresh cut chives, chopped shiitake mushrooms 🍄 (I used about five small pre-sliced shiitake mushrooms from Whole Foods In a large skillet (or cast-iron pan) over medium heat, melt 1/2-1 tablespoon butter and olive oil. Add shrimp, chopped shiitake mushrooms, garlic, and chives, cook until shrimp is pink, 3 minutes. Stir in the, lemon juice, oregano, and parsley. Grilled Mango Cheeks for Dessert. Seriously, tastes just like Summer on a plate 👌🏽☀️ Save this post for the recipe! 1. Cut off the cheeks of a #calypsomango and score diagonally, drizzle over lime juice. 2. Preheat a chargrill pan to medium heat. 3. Place the cut side down of the mango, for 2-3 minutes or until the natural sugars begin to caramelise. Top with lime zest and pumpkin seeds, serve with Greek yoghurt! SIMPLE EGG SALAD🥚🥗 Looking for a tasty protein packed breaky or lunch option. I’ve posted this egg salad recipe before but I used a slightly different mustard today and it was the bomb. Try this out for a snack, in a wrap or to top a salad. - 2 x boiled eggs, smashed - 2 tbsp cottage cheese - 1 tsp honey Dijon mustard - 3-4 Apple cider vinegar pickles, diced Mash all the ingredients together and season with salt and pepper. That’s it, simple, tasty and high protein.

FRIDAY FAVORITES! • I have been on a forever hunt for a really yummy ranch dressing that doesn’t have any yucky ingredients. I finally found something: Organic Girl White Cheddar Ranch Vinaigrette. No, it isn’t a true ranch, but it is THE most delicious organic option I’ve found. I actually look forward to salads again. . • I’m not super into documentaries. But this one I can’t recommend enough. I seriously want ALL of my friends to watch this! After watching my mom, the healthiest woman I knew, a non-smoker, die from a sarcoma in the lungs, plus at least 2 (maybe 3) other types of cancer...THIS is where we are making the biggest change as a family. It’s about artificial fragrances and what they’re doing to our country. Watch it. For real. . • We ordered these BentGo lunchboxes when I discovered that my kids weren’t actually eating school lunch. They’d eat the dessert and leave the rest. 🤣 These bows have been a huge lifesaver! They save time when fixing lunches, they help me make healthier options, they keep me from packing them WAY too much food, and we no longer need near as many plastic baggies. We have 3 extra inserts so I have a day to wash them. . • This charcoal bar soap has become a new favorite for me!! Especially around that time when my skin is inclined to break out. It helps to clear my face without drying it out too much. Ingredients: 1 can chickpeas, rinsed & drained 2 ripe tomatoes, cubed 1 small cucumber, cubed 2 tbsp chives, ciseled 3 tbsp soy yoghurt 1/4 tsp salt 1 tsp dijon mustard 1 tsp paprika 1 tbsp nutritional yeast pepper 👉🏼Method : 1. rinse & drained the chickpeas (if you want a better digestion, you can peel off the skin but that’s an extra 10 minutes!) 2. flake them with a fork (or clean hands) 3. add veggies and mix. 4. add spices and yoghurt and mix again 5. set in fridge about 15 minutes so flavour gets together ✨ WRAP RECIPE 🌯 1 cup all purpose flour 1 tbsp olive oil 1/4 tsp salt 1/4 cup water Method : simply mix & kneed with one hand until a dough super elastic forms. Adjust flour/water. Set 10 minutes. Then divide in 2 and roll out in very thin wrap (use flour to prevent sticking). Cook 2 minutes each side on hot pan. Keep in clean dishtowel. Use right away or damp the towel with water and microwave 20 sec to make soft again! ~LOW CARB LUNCH~ (Low calorie, low fat, gluten free & dairy free) Today for lunch: A SABICH SALAD (instead of the Israeli pita sandwich) with slices of baked eggplant, 2 soft hard boiled eggs, slices of 1/3 baked potato, my homemade Tahini sauce (with parsley), cherry tomatoes, cucumber, onion, parsley, 4 pickled chili peppers, 1 teaspoon of olive oil, lemon juice and salt. So filling, I couldn't finish it all. 🇺🇸Sweet potatoes are a must in a kitchen. 😍🤤 . These are full of goods for your body and are simply DELICIOUS 😍🤤 . And guess what goes with that like perfection? AVOCADOOOOO OF COURSE 😍🤤🥑💚 . #whatsonmyplate : a cooked sweet potato (45 mins in the airfryer, you check when it's cooked, if not keep cooking for some minutes), you cut it in the middle but not to the bottom, you add smashed avo( with lemon juice, pepper, pink himalayan salt), zucchini and cucumber pieces, and a ton of feta cheese. Pink himalayan salt, pepper. . Absolutely AMAZING. For real. . What do you think about it guys? :) . 🇫🇷Les patates douces c'est un must dans la cuisine. . C'est pleins de bienfaits pour votre corps et c'est juste délicieux 😍 . Et vous savez quoi c'est juste délicieux avec de l'avocat 😍😍😍🥑🥑🥑💚💚💚 . Dans mon assiette : une patate douce cuite à l'airfryer pendant 45mins ou plus selon la grosseur de la patate, couper la au milieu sans toucher le fond de la patate. Ajouter l'avocat écrasé avec jus de citron, poivre et sel rose d'himalaya, courgette et concombre, et feta, beaucoup de feta. 😍😍 . C'est juste UN DÉLICE 🤤🤤 . Belle journée ✨✨✨
