Our camping food was AMAZING! My daughter made the meal plan and all the meals were quite healthy! I was really impressed at the recipes she chose. Of course, there was some not so healthy snacks, and desserts most nights (I had banana boats twice and, of course, some chocolate). The first night we had some chicken burritos. It was super quick and easy with precooked chicken. We also premade overnight oatmeal for the first morning which was amazing because we were not organized, and we were all excited to explore! Lunch was chicken Caesar salad wraps for everyone else and I just stuck with a chicken salad with a delicious vegan cucumber dill dressing. Supper was a little more time consuming- as our “one pot miracle” recipe turned out to be risotto. It took about 30 minutes of frequent stirring to cook BUT I had the leftovers every morning for breakfast with a couple of eggs and some precooked bacon added in and it was quick and yummy! We had smokies for lunch (gluten free of course and my bun was also gluten free. We had lots of raw veggies as well. On day 2 the kids had not yet fed all the carrots to the animals 😂🙄. Supper was actually a super delicious lime and cilantro dish with zucchini and corn - and all the kids actually ate and liked the zucchini cooked this way! Our last supper was chicken kabobs that we had marinated. These were so amazing they were gone in no time and I didn’t even take a picture! I made a low cost & healthy meal for dinner just now. This cooks two servings (for me anyways) and cost under $10 to make. I call it Rheana’s Healthy Stuffed Bell Peppers ❤️ Each stuffed pepper has about 225 calories!! * 4 Bell Peppers (2 red & 2 green) * 1 Sweet Onion * 1 Zucchini * 1 Pound of Ground Chicken * Salt * Pepper * Paprika * Garlic Powder I cooked the zucchini & onion in a pan with Pam Spray, Garlic Powder, Salt & Pepper. I cooked the ground chicken in a pan with salt, pepper & paprika. I then mixed the cooked veggies and meat together in a bowl. Then I cut the tops off of the bell peppers and a little sliver off the bottoms so they would sit well in the pan. I then filled peppers with my veggie & meat mixture. Pesto chicken pasta and arugula salad with melon. That was our dinner last night. I love pesto sauce and I like to add it to pasta, veggie bowls or sandwiches. For my pasta dish I used Ancient Harvest quinoa corn pasta but any pasta you like will work in this recipe. Add handful of pine nuts and walnuts(or either one) to a food processor, pulse it a few times. Then add 2 garlic gloves, bunch of fresh basil leaves and pulse it again. After that mix in half a cup of good quality extra virgin olive oil, grated parmigiano reggiano(parmesan) cheese, pepper and 1 tbs lemon juice. Blend it until it’s a fine pasty sauce. Cook your pasta according to package instructions. Heat some olive oil on a pan, then add shredded chicken( I used a store bought rotisserie chicken),cooked pasta and a pesto sauce. Give it a good mix. Add some more olive oil and parmesan cheese if needed. Cauliflower hash brown 😍 Makes 2 hash browns: 1. Add 1 cup grated cauliflower, 2 tbsp grated onion, 1/2 a beaten egg, 1/4 cup mozzarella cheese & season to your liking. 2. Combine all ingredients in a bowl, add half of the mixture to a buttered pan on medium heat. Make into a rectangle shape like a hash brown. Cook until done, mine only took about 1-2 minutes each side. 🥪 Hoy vengo a compartirles mi merienda de hoy 🥪 • • Para esta tarde tan helada 🥶 que hace hoy solo provoca acostarse a ver netflix y comer algo bien rico y que nos alimente sanamente 😏😏 hoy me preparé este sándwich de queso con frutos rojos, para aquellos que son amantes de la combinación dulce/salado es un súper recomendado!! • • Utilice solamente unas torrejas del pan liviano de @comapan_co que tiene una tabla nutricional excelente, torrejas de queso finesse de @alpinacol y frutos rojos, en esta ocasión usé fresas, moras y frambuesas, las pueden usar congeladas o frescas. 🍓🍒🍇 • • La preparación es lo más sencillo qué hay 🤪 solo es armar el sándwich de queso y llevarlo a la plancha o sanduchera que usen hasta que el queso se les derrita ( 🤤 ) una vez ya lo tengan listo preparan la mermelada metiendo los frutos rojos en el microondas, yo las dejé por un minuto y medio y luego las machaqué con ayuda de un tenedor. 👌🏼👌🏼 • • - es una receta súper sencilla y lo mejor es que puede ser una buena merienda o un buen desayuno listo en 5 minutos ⏰ - #healthymeals

Some of the #healthymeals we’ve been eating over the past few months. I’m learning how to incorporate vegetables into nearly every meal but as the main ingredient instead of as a side dish. Always thinking of the next meal! Salmon cakes, soup, Asian chicken burgers, omelet, cooked peaches with biscuit for dessert, banana dessert, frozen yogurt, chicken tenders with sweet potato fries, oatmeal, and salads. Eating this baked oatmeal on repeat! Blueberry Banana Baked Oatmeal🍌🍯 . Ingredients: Dry: 2/3 cup chopped pecans (or nut of preference) 2 cups oats 2 tsps cinnamon 1 tsp baking powder 1/2 tsp salt 1/4 tsp nutmeg Wet: 1 and 3/4 cups of almond milk (or milk of preference) 1/3 cup maple syrup (or sweetener of preference) 2 eggs 1 and 1/2 tbsps of melted coconut oil 2 tsps vanilla extract Base & Toppings: 2 cups blueberries 1 banana Instructions: 1) Preheat oven to 375°F 2) In a bowl combine all dry ingredients 3) In another bowl combine all wet ingredients 4) Arrange half of the berries and banana over the bottom of the baking dish 5) Cover the fruit with the dry ingredients mixture first, then pour the wet ingredients mixture over it 6) Add the remaining fruit over the top 7) Bake for approx. 45 minutes or until the top is golden brown It is like eating dessert for breakfast, try it out! Three Mini Zuccini Sliders!!! (1 Complete Lean & Green w/3 condiments) Ingredients: 12oz zucchini sliced into 1/2 inch rounds 6.5oz 90% lean ground beef divided into 3 portions 2 Kerrygold cheddar cheese wedges divided into 3 portions Preheat oven to 425 Season zucchini with salt/pepper and spray with cooking oil spray Bake for 5 mins Turn oven to broil, place pan near the top and broil 3-5 minutes or until zucchini is tender crisp. For each slider take portion of beef and divide - add cheese to middle and seal beef around. Do this for remaining 2 burgers. Cook in skillet for 6 minutes over medium high heat and flipping after 3 minutes. To plate: Zucchini slice on bottom, burger, dollop of mustard, and top with zucchini. The night I delivered and 8 days post partum. I was 221 lbs at my last appt the day I got admitted for preeclampsia and 187lbs this morning. I’m 5’11 but never imagined I would gain 50lbs during pregnancy or ever weigh above 200! I started at 169 btw per the dr’s scale. ⠀ ⠀ I’m so amazed at what the female body can do! I can’t believe I had a 9lb baby in my tummy just 8 days ago! Like what?! ⠀ ⠀ I’m feeling super confident in my skin and although of course I have a lot of loose skin in my mid section still (let’s remember high waisted leggings make everyone appear much leaner too btw), I know it’ll change with time and hard work ;) I am so glad I was able to be super active my entire pregnancy because I already know its paying off! 🤰🏻 ⠀ ⠀ Don’t compare how much weight you gain during your pregnancy to someone else’s. ⠀ Don’t compare how quickly someone else appears to “bounce back” compared to you. ⠀ ⠀ Rest assured, we’re all still basically wearing diapers and have breast milk🍼 or formula spilled all over us. Trying to keep up with showering, feeding ourselves and a tiny human every 2-3 hours all while adjusting to this new life! If nobody has told you today, you’re doing a great job ❤️⠀ ⠀

Today our baby girl is 7 days old! 🍰 It’s been such a wild ride already but we’re so thankful to have this perfect angel! ❤️ I had a really rough few days with breast feeding and baby blues... you never really understand how hard it is until you’re going through it. Hormones hit me all at once and all of a sudden my normal level headed self became an emotional wreck for no good reason (I know why, but still). Happy to say things are on the up swing now and I love my little family so much! 🥰👨‍👩‍👧
