simple dinner trio of my DREAMS 😎❤️ baked salmon, sweet potato wedges, and broccoli... this combo goes down at least once a week in my kitchen! I’ve had a long day at work, but I’m home and my cozy clothes now and although I have to get some homework done, I’m looking forward to laying on the couch with my dessert in hand + watching @queereye later on! 💃 Q: what is one small thing you look forward to every day? I think it’s so important to have things that make you happy and that help fuel you and your mood through the day! 💕 . #whatsonmyplate: salmon sprinkled with @primalpalate adobo seasoning and baked at 450F for 14 minutes, then broiled on high for 2 minutes to finish, paired with some sweet potato wedges (baked at 425F for about 27 min, flipping halfway) and some steamed broccoli (drizzled in olive oil + a sprinkle of sea salt!)

🥗Coach Recipe of the Day.🥗 Bon appetíte! Grilled Salmon Tzatziki Bowl 👇🏼 Makes 4 servings Per serving ½ Lean protein... ¾ Green 3 condiments • 10 ounces salmon • non-stick pan spray – no fats added with salmon • ¼ tsp salt • 1/2 tsp pepper • one lemon- sliced in half – use 4 teaspoons juice Tzatziki( serves 6-8) • 3/4 cup low fat plain Greek yogurt • 1/4 cup sour cream • 1 garlic clove- finely minced • 2 teaspoons lemon juice • 1/4 teaspoon kosher salt • ¼ teaspoon white pepper (or regular) • ⅛ cup fresh chopped dill (or mint, cilantro or Italian parsley – or a mix) • 1 ½ cups finely sliced or diced cucumber Grilled salmon served over optional cauliflower rice Instructions: Preheat heat grill to medium high. Spray salmon with spray and season salmon with salt and pepper. Set aside. Make the the Tzatziki. Place the first 7 ingredients in a medium bowl- all but dill and cucumber. Whisk until smooth. Add cucumber and dill and gently fold in. Taste, and add more lemon if you want. Place salmon on the grill, along with any other veggies you choose to grill (brush with olive oil, salt and pepper). Grill salmon on both sides for 3-4 minutes, shorter or longer depending on thickness of the cut. Grill the lemon, open side down, until good grill marks appear. (You will use the grilled lemon to squeeze over the salmon be fore serving.) When veggies and salmon are done, assemble the 2 bowls. Divide into two bowls. Top with a handful of greens. Add any fresh veggies you like and sprinkle with salt. Arrange the grilled vegetables and salmon over top. Squeeze the grilled lemon over the whole bowl. Spoon a few generous spoonfuls of tzatziki over top the salmon. TACOS 🌮 🌟 Had these for lunch today and they were so frickin good!!! I’m a pretty picky eater and I have never been able to a really good mexican restaurant (other than taco bell but does that even count??) so when I’m craving mexican, this is what I make! Ingredients: - black beans drained - tortillas (i used mission gf tortillas) - shredded mexican cheese - chopped onions + green bell pepper - red onions sliced - brown spicy mustard - banana peppers (optional) - organic greens mix - taco seasoning, salt and pepper to taste Method - sauté beans, onions and bell pepper in olive oil - add taco seasoning and salt - meanwhile, mix sliced onions and mustard (just a little to coat) in a bowl - toast tortillas and add beans mix and top with cheese (omit cheese to be vegan) - cover with lid to melt cheese - add greens, banana peppers, and coated onions - top with salsa and enjoy! 🥳 let me know if you do make this! have a great weekend 💓 . . . . . . #goodfood #glutenfree #tacos #mexicanfood #healthy #vegetarian #foodismedicine #healthyrecipes #healthyeating #healthylunch #madebymorrea

Dinner Recipe: 🎉 1 cup (100g) of Jasmine Rice, mixed in with about 1 cup of mixed vegetables- cauliflower, broccoli, carrots, string peas- overall a great way to use leftover rice, and also get in about 2-3 servings of vegetables!! I would recommend adding some chicken, or if vegan, mushrooms for some added protein! Last week I started the #nosugarchallenge so I’m will start posting some of the recipes and things I have been eating from that! I’m eating about the recommended 20g of sugar a day- only from plant based sources like fruit! No Refined sugar for me anymore!!! Definitely have had to be creative when it comes to recipes, and I’ve up with some interesting yet yummy options!! Stay tuned 😋

Vital Proteins Wild Rice Soup ‍ Yields 6-8 Wild Rice Soup servings ‍ Ingredients: 1 white onion, chopped 2 carrots, peeled and chopped 2 celery stalks, chopped 2 sweet potatoes, peeled and chopped 2 C mushrooms, chopped 1 C kale, chopped 1 T minced garlic 1½ C wild rice 1 can coconut milk 4 C water 4 scoops Vital Proteins Chicken Bone Broth Collagen 2 T olive oil 2 t onion salt 2 T rosemary Salt and pepper for flavor ‍ Directions: 1. Heat up half of the olive oil in a large pot over medium heat. Once oil is heated, add in the onions and celery and cook for 5 minutes or until soft. Once cooked, add in the garlic, carrots, sweet potatoes, and mushroom until soft. 2. Once the vegetables are cooked through, add in rosemary, onion salt and the other half of the oil. Mix together until evenly combined. 3. Add in the Bone Broth Collagen to the water and mix separately. 4. Next, add in the coconut milk and bone broth and bring to a boil. Once boiled, add in the wild rice and chopped kale and reduce the heat. 5. Cook for about 40 minutes or until the rice is completely cooked. How to incorporate more veggies into your diet: 1. Make them the base! Create a layer of greens or mixed veggies as the foundation of your plate. Steam or sauté with evoo or avo oil. 🥑 2. Shop, then prep. When you get home from the grocery store or market, immediately wash and store in baggies with moisture-catching paper towels, so your veggies are ready for action. 3. Replace pasta with spiralized zucchini, squash, sweet potato or carrot noodles! 🥕 5. Stock the freezer with frozen organic veggies 🌶 6. Eat the rainbow! Use produce to add more color to your bowl: try purple cabbage, carrots, radish, peppers, etc. This way you are intaking a wide variety of nutrients. 🥬 7. Make a soup! Mixing in nut butter and chia seeds allows for a slower digestive release and it is much creamier and more delicious! . . Sun dried tomato pasta 🍝 Ingredients: Pasta Zucchini Spinach Onions Chilli flakes Oregano Sun dried tomatoes Salt and pepper Garlic Almond milk Olive oil Nutritional yeast (replacement for cheese or you can put cheese) 1. Cook pasta 2. Cut up zucchini, spinach and onions and sauté them and set aside 3. Add 1 tbsp olive oil into a large frying pan over! When hot, add garlic and cook for 2 minutes or until lightly browned. Add 1/2 tsp of salt and 1 cup of almond milk! When it has thickened slightly (it will thicken further when blended), pour this into a blender. 4. Add 1/2 cup sun dried tomatoes, nutritional yeast and 1/3 cup water to the blender and blend 5. heat up 1/2 tsp of oil. Cut the remaining sun dried tomatoes Add this along with the onion to the pan and sauté for 3 minutes. Add chilli flakes and dried oregano and cook for a further minute. If it sticks to the frying pan, add a splash of water. 6. Pour the sauce into the pan 7. When the sauce is heated through, add in the pasta and veggies! Frozen Pb & Blueberry Yogurt Cups💙... In silicon molds, small paper cups or a lined muffin tin, place a layer of yogurt of choice (I used @twogoodyogurt Blueberry Greek yogurt). Then mix 2 servings of @flavoredpbco Pb powder with water to create a spread (pic here is Blueberry Cobbler, but any flavor will work), layer Pb spread on top of yogurt layer.
