First time *fully* meal prepping in over a year.. yeah not too great to admit, but fuck waiting for January/the new year to make a change. After looking into meal prep services and companies over the last week, I decided my “I don’t have time” excuse needed to be evaluated instead of me going poor getting meals delivered to me; turns out I was being lazy with my time on Sunday’s, so ta-da. I’ve been following a low #FODMAP diet for over 3 years now since being diagnosed with #IBS and gerd, yet am going to attempt reintroducing garlic and onion into my diet this week 😬 If you have IBS, you know this will either be very painful or somewhat discomforting, or potentially alriiiiight so 🤞

Maybe one of the most difficult changes for people in shifting to a healthier and more balanced diet is eliminating the idea of the “base” of your meal. A majority of our most common meals in western society are based around a piece of meat or an unhealthy grain, such as pizza, or a sandwich on white bread, or a white rice or pasta. These are not balanced nutritious meals! The healthy part of the meal, aka the veg, legumes, fruit, or whole grain is usually not very diverse, and is not eaten in large quantities. These plant-based foods often get to play the lowly role of “side dish”....this isn’t where they belong! I’m a huge advocate for bowl food because it makes the transition to diverse, nutritious, colourful, plant-based eating a whole lot easier! Whatever you have, you can put in! I have @chickapeapasta in my bowl, but it doesn’t necessarily have to be the main bit; it’s just one of many lovely ingredients I chose tonight, along with kale, sweet potatoes, peppers, onion, garlic, peas, black beans, quinoa, sesame seeds, balsamic, truffle oil and truffle salt, smoked paprika and turmeric. Tonight I made chicken Alfredo lasagna using @palmini_pasta. I love white lasagna and I dare say it’s one of my favorites and this rendition did not disappoint! I used palmini, homemade Alfredo sauce, shredded chicken thighs, and a mixture of cream cheese, chopped spinach and chopped artichoke hearts. I topped with mozzarella, crumbled feta, olives and tomatoes. This has been my thing lately. I make sure I have a variety of pre cooked proteins and then prepare a variety of vegetables. Chilli Lime Protein Salad 🥗 This salad is not only packed with flavour, but it’s packed with loads of protein and perfect for a filling meal.
