I love the creak of the hinges as I open the first door when I walk up to my smoker. I love the smell of smoke that has soaked into every single shirt I own, I love to watch the fire roll for hours and I love the 46 hours of work that it takes to host one of these pop ups. I think the true passion behind something like this is hardly ever about the food itself, and it’s definitely not about the money. It’s about the process and the love for that process. Eastbound and Down. As in East of Texas and then South of that, Eastbound and Down is a South Carolina style Barbeque sauce modeled after the sauces I saw in a few of the restaurants when I was working at Fort Jackson in Columbia, SC. Mustard based sauces came in the 1800s from the German settlers to the area. The sauces tend to have a sweet savory flavor followed by the distinct mustard and vinegar bite but I prefer mine to have just a bit of heat, so I grind up Pasilla Peppers to add to the mix at the end for a heat that leaves you needing more. #HollidaysBBQ #UndergroundBBQ #SanDiego #OakSmoke #MeatMarket #Family

So the debate is down to pulled pork or brisket, and I have to say you will find no bigger believer in brisket before anything else (the real bae) all day every day than me. A few weeks ago, my daughter Briella and I were sanding down a new countertop so that we could scale up the size of the slicing counter. She was so excited to get to be apart of it, she sees all the work Sandee, and our friends and I put into the pop-ups and wanted to be included. One day she asked Sandee, “Why do you and daddy sell Barbeque?,” and Sandee said, “We do it so that we can save money for adventures and put into the house and buy stuff for our family.” A few days later, Briella asked Sandee if she could have a lemonade stand when we do the next pop-up so that she could help save money for the house, and adventures with us. Besides melting our hearts, Briella got an invite to come to the pop-up with us and will now be right there next to us for service on Saturdays, in case you’re feeling a little thirsty. Anything she makes will go towards her plane ticket on our next trip. When I was 15, I met Gerard after I started playing baseball at my new school in San Antonio, Texas. He was always happy, super optimistic, and without a doubt the most outgoing person I knew and I admired that. Over the next 3 years we became best friends and basically just considered ourselves family. After we graduated we ended up joining the Navy together and from then on we went on our own paths for awhile. I’m happy to say that part of what made us friends in the first place has brought us back together, Barbeque of course! This past weekend was some hard work but it’s always better having some extra hands, I couldn’t have asked for a better person to jump in for some help with Holliday’s Barbeque. The history, the traditions and most of all the experience of Texas Barbeque is centered around family and I’m extremely happy that our Barbeque family is growing. A little of this, a little of that, and some damn good cold brew for good measure. After a few taste tests I think we have something pretty good here, “Damn #2” took a little while to get to but the deep earthy flavor of the chicory root in this New Orleans style coffee is perfectly balanced with a soft touch of sweetness from molasses and brown sugar and evened out with a savory flavor of onion and garlic and given a slightly smoky flavor with just a touch of Smoked Paprika. I didn’t save this recipe, unfortunately, it was mostly just trial and error so once it’s gone, it’s gone! A few burns from the fire. A few scrapes from the pit. I’ve almost lost a finger trimming briskets once or twice and I have on occasion, ended up eating leftover brisket for a week because I didn’t sell out at the last cook, but damn do I love doing this. It’s one of those things that just makes your heart happy and that’s really all you can ask for in my opinion. . . . . . Sausage 101: Sausage Making and Recipes @theheartandtrotter This class was awesome! Sausage has been one of those things that was super tough for me to catch onto, I’d say I’ve tried maybe 10-12 times to “re-learn” sausage making from a couple cookbooks and various YouTube videos. Still couldn’t quite get the hang of it. I showed up here and finally worked through all the parts I was getting stuck on, from grind gauge of the meat to seasoning and even learned a more efficient way to separate the sausage in the casing. I couldn’t recommend the class more, I’ll finally be able to use everything I buy and eliminate all that waste so I’m stoked! I heard there’s a chili cook-off at work today. Fresh ground spices in the molcajete tend to give it an extra touch of home. Smoked Ancho Parillo peppers, Mexican Oregano, Coriander, Whole Cumin, Hungarian Paprika, Peppercorn and a touch of Cayenne. . . . . . Chili con Carne is hardly what people imagine when they hear “Chili” but San Antonio is where chili originated, eventually developing into the warm, spicy, bowl of goodness we know today. Created by the Canary Islanders or Isleños as they were known that migrated to San Antonio with aspirations to become Hidalgos.
