It pretty much covers everything!⁣ ⁣ #Repost @functional.foods with @get_repost⁣ ・・・⁣ Know your oils/fats and their smoke points (swipe).⁣ 🥥⁣ Great visual by @meowmeix 🙌🏼⁣ 🥥⁣ When it comes to cooking with fats, it’s important to consider the level of saturation, the smoke point, and how processed it is.⁣ 🥥⁣ In general, saturated fats (coconut/ghee), are better to cook with since they are more stable and less likely to rancify when heated. This is due to their chemical structure which is solid at room temp and contains no double bonds.⁣ 🥥⁣ Unsaturated fats on the other hand are broken up into 2 subgroups: monounsaturated (MUFAS) & polyunsaturated (PUFAS) fats.⁣ 🥥⁣ MUFAS have less double bonds than PUFAS and are found in avocados, macadamia, and olives. PUFAS are found in various seeds and nuts, and oily cold-water fish such as salmon.⁣ 🥥⁣ Unsaturated fats such as nut/seed oils and vegetable oils are less chemically stable, and more prone to lipidperoxidation (ie. generation of ROS, free radicals, and inflammation = tissue damage).⁣ 🥥⁣ These “oxidized oils” can also impair insulin sensitivity 🙅🏻‍♂️⁣ 🥥⁣ The temperature an oil starts to undergo lipidperoxidation and become rancid is known as the “smoke point.”⁣ 🥥⁣ When choosing a fat to cook with, choosing one that has a HIGHER smoke point or simply cook at LOWER TEMPERATURES.⁣ 🥥⁣ Avocado (although unsaturated) is great to cook with because of its high smoke point. Ghee (clarified butter) is arguably the best saturated fat (smoke point = 450 F) where grass-fed butter is about 350 F.⁣ 🥥⁣ I generally like to save cold-pressed olive oil for salads and dressings. Posted @withregram@primatekitchen Let's start with peas. Collydean (not its real name, but a real farm) is a 2700ha mixed farm in northern Tasmania. They grow beef cattle, some sheep, do agroforestry, have barley and some years grow peas. A lot of peas: about 400 tonnes a season. And to protect the peas, they have some wildlife fences, but also have to shoot a lot of ­animals. When I was there, they had a licence to kill about 150 deer. They routinely kill about 800-1000 ­possums and 500 wallabies every year, along with a few ducks. (To its credit, Collydean only invites hunters onto its farm who will use the animals they kill — for human food, or for pet food — and not leave them in the paddock, as most ­animals killed for crop protection are.) So, more than 1500 animals die each year to grow about 75ha of peas for our freezers. That's not 1500 rodents, which also die, and which some may see as collateral damage. That's mostly warm-blooded animals of the cute kind, with a few birds thrown in. Collydean's owners assure me it wouldn't be financially viable for them to grow peas without killing animals. Which means that every time we eat peas, farmers have controlled the "pest" species on our behalf, and animals have died in our name. The number of animals that die to produce vegan food is astonishing. Consider wheat, a common crop in Australia. And let's look at the nutrient density of the food in question, because not all foods are created equal. According to an article by Mike Archer, Professor in the Faculty of Science at the University of NSW, roughly 25 times more sentient beings die to produce a kilo of protein from wheat than a kilo of protein from beef. Thanks to monocultures, mice plagues and our modern farming systems, a hell of a lot of small animals die to produce wheat. Yes, most of them are rodents, but surely in the vegan world all warm-blooded life should be honoured equally? On average, 1 billion mice are poisoned every year in Western Australia alone. According to a 2005 Senate report, if we didn't kill mice the cost of food would rise drastically; even with heavy baiting programs, mice cost the Australian economy about a $36 million a yea

Did you know sunburns can cause insulin resistance for a few days after the initial injury? . . depending on the severity, burns cause a stress response that can last much longer than you think . I read the following from a study on severe burns (not first degree burns/sunburns): ‘Sustained hypermetabolic alterations post-burn, indicated by persistent elevations of total urine cortisol levels, serum cytokines, catecholamines and basal energy requirements, were accompanied by impaired glucose metabolism and insulin sensitivity that persisted for up to three years after the initial burn injury’ 😳 . Now this is NOT the case for a sunburn, but I believe if a sunburn is bad enough, you'll have unexplained highs for a few days to a week . While on vacation I used to get burned quite a bit, and I wouldn't understand why my BG wouldn't stay down for the remainder of the week . I feel like I just clued in a couple days ago lol. So I went outside to get some sun and my neighbour started talking to me. It turned into 2 hours of talking in direct sunlight with only a tank on. The burn wasn't even THAT bad, but my BG wouldn’t stay in the range I was accustomed to . This lasted ~2 days, but once I realized what was causing this, I incr my basal dose by 2 units and it looks like the problem is now solved . . Few takeaways: A little sunburn doesn't mean you should stay out of the sun. All it means is you have to be mindful of when you're sunbathing and for how long. I was outside from Noon-2pm. I only required about 20-30 min to get enough Vit D for my skin type on that day. You also need to increase your exposure slowly as summer approaches, and you need the AM sun to prime/protect your skin from midday exposure. I've been doing this, which is why the burn wasn't too bad A slight increase in your basal rate/dose will usually fix this immediately A good level of insulin sensitivity is very important because it will limit the impact a sunburn will have on your BG (my BG was higher than normal FOR ME..but in the grand scheme of things, it wasn't terrible...that’s why it also took just a small increase in basal insulin to fix the hyperglycemia)

I didn’t get like this easily or overnight. This is years of self loathing and abusing my body. This will be my second time losing over 100 lbs❗️(and I’ll be damned if there’s a second time gaining it back.) I’ve also lost and gained 50+ lbs a couple times. And I’ve completely lost count how many times I’ve lost and gained 25+ lbs. I’ve lost weight rapidly and I have a tendency to gain rapidly too. I’ve been on several diets since childhood - I’ve always been a big girl. I’ve over exercised in the past trying to lose weight and I’ve also had cycles of being completely sedentary. I’ve been vegetarian and vegan. I am 28 years old and I feel more like 80. I am 6’2 (yeah, the weather is fine up here) and I weigh over 360 lbs. I have a whole list of health problems I’ve developed over my young life that I completely believe is directly tied to my weight and lifestyle. I am considered morbidly obese. I am insulin resistant, I have PCOS, hirsutism, acanthosis nigricans, hidradenitis suppurativa, rashes, chronic inflammation, asthma, restless leg syndrome, fibromyalgia, arthritis, binge eating disorder, gastroparesis, depression, and anxiety. FAT DOESN’T MAKE YOU FAT, SUGAR DOES When I say fat, I mean healthy fats from natural sources like avocados, olives, olive oil, nuts, fatty fish. Foods like these keep you satiated and help you burn more fat. Fats created in a lab (trans fats) should never be eaten (partially hydrogenated oils - margarine, processed packaged bakes goods and sweets) When I say sugar, I mean refined sugar. (Table sugar, white flour, bread, pasta, cakes, evaporated cane juice, high fructose corn syrup) These sugars are void of nutrients, crowding out good nutrients that your body needs to thrive. Refined sugars trigger a temporary spike in serotonin (the same high that cocaine gives) that then leads to a sugar crash (a serotonin drop). Additionally, they cause your body to produce the hormone Ghrelin, which is the hunger hormone, not only making you hungrier in general, but hungrier for more sugar. What about sugar from fruit? When you eat a piece of fruit that contains 20 grams of sugar, it’s combined with fiber and other nutrients that slow the absorption and don’t cause a spike in blood sugar. Your body also efficiently burns these sugars. Very different from eating a cookie with 20 grams of sugar, that causes an immediate blood sugar spike and is void of fiber and nutrients. How does your body metabolize sugar? Our bodies are meant to process foods by breaking proteins down into amino acids, fats into fatty acids, and carbohydrates into simple sugars, glucose. When we ingest too many of those carbohydrates and especially refined ones, our blood sugar levels go on a roller coaster ride. When our body has excess glucose that it can’t use for energy, it sends it straight to your fat cells for storage. Here's a super easy way to start your day! 🍠 🍠 🍠 Replace your conventional toast with one of the healthiest foods on the planet - sweet potatoes! You won't believe how well these food combos work with a sweet potato. . 🍠 Cut 1 large sweet potato lengthwise into 1/4 to 1/3-inch thick slices. . ♨️ Place sweet potato slices in toaster or toaster oven until fork tender but not fully cooked. SZYBKA FIT PIZZA NA TWAROGOWYM SPODZIE! 🍕 Spód - 1 porcja (1/2 pizzy): 294kcal ➡️B22 / T8 / W31 Porcja z pomidorkami ma w sumie ok 440kcal Czy pizza może być pełnowartościowym posiłkiem? Otóż jak najbardziej! Od kilku dni się poświęcam dla tego profilu i jem codziennie twarogową pizzę tłumacząc to szukaniem idealnej receptury 🤪 Skleciłam dla Was wersję dobrze zbilansowaną, bo tak zagłosowaliście w ankiecie (od razu bardzo dziękuję za zaangażowanie) ❤️ Spód (na 2 porcje): - 125g chudego twarogu - 2 jajka - ok 90g mąki pszennej pełnoziarnistej (ale można próbować inne, ta jest dobra dla IO) - niecała łyżeczka (ok 4g) proszku do pieczenia - troszkę soli - troszkę oliwy – ja mam w spreju Dodatki (dowolne), ale u mnie: - mozzarella - sos pomidorowy + przyprawy - czerwona cebulka - pieczarki - szynka - pomidorki koktajlowe - ananas Składniki na ciasto razem dokładnie mieszamy. Uwaga – ciasto będzie lepkie i takie ma być. Możecie lekko podsypać mąką ale nie za dużo, tylko do ugniatania. Tutaj w przeciwieństwie jak do robienia standardowego spodu nie trzeba długo ugniatać. Składniki muszą się połączyć i tyle. Odkładamy ciasto na moment aby proszek zaczął działać (ok 15-20min). Rozgrzewamy piekarnik do 250st, na blaszce z natłuszczonym papierem (ja mam oliwę w spreju) wykładamy nasze ciasto. Wałkowanie takiego ciasta jest ciężkie, więc kładziemy kulkę ciasta na papierze, zwilżamy dłonie wodą i uklepujemy dłońmi płaski placek na pizzę. Na wierzch dodaję również trochę oliwy (kilka psiknięć) Pieczemy ok 5-7 min. Wyciągamy. Nakładamy dodatki i pieczemy kolejne 7-10 min. Czas trzeba też dostosować trochę do własnego piekarnika. Mój zieje ogniem jak smok, więc musicie spoglądać aby Wam się pizza nie spaliła.
