On Saturdays I take the day off from intermittent fasting so I was able to make a proper breakfast. I used @highkeysnacks pancake/waffle mix. This is by far the best keto friendly pancake/waffle mix I have tried. Next time I’m going to make a bigger batch and freeze them and then just throw them in the toaster when I want one. Covers a pizza pan with Parchment Paper (NOT wax paper). Mix the Cheeses together, then evenly spread them over the parchment paper (in a circle shape). Bake the cheese shell for 5 minutes. Pour off any extra oil as soon as it comes out of the oven. Place the chicken over half of the cheese shell. Then add the sliced peppers, diced tomato, and the chopped green onion. Fold the Cheese shell in half over the chicken and veggies. Press it firmly, then return it to the oven for another 4- 5 minutes. Serve with sour cream, salsa, and guacamole. By: cafedelites⁠ .⁠ Serves 4 in 25 mins⁠ ⁠ Ingredients-⁠ ⁠ New York Steak⁠ 4 New York Steak strip steaks(Porterhouse steaks)⁠ Salt and pepper to season⁠ 1-2 tablespoons olive oil⁠ .⁠ Creamy Garlic Shrimp⁠ 3 tablespoons unsalted butter, divided⁠ 8 ounces (250 g) shrimp deveined, tails on or off⁠ 4 cloves garlic (or 1 tablespoons minced garlic)⁠ 1/4 cup dry white wine or low-sodium chicken broth⁠ 3/4 cup heavy cream* (thickened cream)⁠ 1/4 cup fresh shredded parmesan cheese⁠ Salt and pepper to taste⁠ 1 tablespoon fresh parsley chopped⁠ .⁠ .⁠ Instructions-⁠ .⁠ Pat steaks dry with paper towel. Season with salt and pepper.⁠ Heat a large cast iron skillet or grill over medium-high heat. Taco Seasoning shredded lettuce, for serving Chopped tomatoes, for serving Hot sauce, for serving . DIRECTIONS Preheat oven to 350F. On a baking sheet lined with parchment paper or a silicone mat place 1/4 cup piles of cheese 2 inches apart. Press the cheese down lightly so it makes one layer. Place baking sheet in the oven and bake for 5-7 minutes or until the edges of the cheese are brown. Let the cheese cool for 2-3 minutes then lift it up and place it over the handle of a spoon or other utensil that is balanced on two cups. Let cheese cool completely then remove. While you continue to bake your cheese taco shells place the ground beef in a skillet over medium high heat cooking until it is completely cooked through. Drain the grease from the meat and then add the cumin, chili powder, onion, powder, garlic powder, and salt. Pour water into skillet and stir everything around mixing it together. Simmer for 5 minutes or until liquid has cooked away. Motivation story today🥰 . Been a minute.....just stopped by to encourage that person who really thinks they cant do this...the person losing slower then others....or the person not seeing drastic results yet....Well I have been there....I started my journey...with March 1st marking 20 months....Slow and steady....Weight coming off alot faster at first...but then hitting plateaus for weeks at a time...One plateau lasted almost 8 weeks...but then...boom 10 lbs gone....So please...whatever you do...Dont scale obsess and get back on track after falling off...Consistency is the only way to have longevity in this new lifestyle change...It isn't a diet...but learning healthy eating habits and regular exercise if you can...But you cant out train a bad diet either...So what you put in your mouth is the most important..... 75lbs gone for my husband who started 2 months before me and lost all his weight in 7 months....While I am at 20 months & almost 100 lbs lost starting from 278lbs... I just girdled and hid my rolls as good as I could...lol... Just enjoy the journey and go at your pace....Left Pic is Summer of 2018... 1 month before I started Keto/low carb... AND right pic was last weekend's date.... I pray this encourages someone...You got this.... Mini Keto Raspberry Vanilla Cheesecake!! 😍 WEEKEND BAKING SORTED 💥🍰🍓 - Follow @keto.recipes.66 for more daily recipes, information and tips ✔️ - 📷 RECIPE: Shout out to @deliciously.keto 🙌🏼 Makes 14 mini cheesecakes! - 📋 INGREDIENTS: Cheesecake base: 180g almond flour 55g Erythritol 140g butter, melted Vanilla and Raspberry Cheesecake: 500g cream cheese 280g heavy whipping cream 1/4 cup water 10g gelatine 70g Erythritol 1 tsp vanilla essence 125g fresh raspberries Mixed berry compote: 2 cups mixed berries (fresh or frozen) 1/4 cup water 1 tsp Erythritol Squeeze lemon juice - 👨🏽‍🍳 INSTRUCTIONS: 1. Mix almond flour and Erythritol in a mixing bowl. 2. Add melted butter and mix until combined. 3. Using a 6 hole silicone muffin tray, fill each hole with a tablespoon sized amount of base mixture and spread evenly. 4. Place trays into fridge to set. Prepare cheesecake mixture. 5. In a small glass bowl add gelatine and top with the water. Stir and allow to sit for 5mins. 6. Add Erythritol and vanilla essence to the gelatine and melt in the microwave. Stir and repeat until completely melted. 7. In a large bowl add the cream cheese and cream. Using a hand mixer beat together until smooth and fluffy. Pour in the gelatine mixture and continue to mix until well combined. 8. In a small bowl mash the raspberries to desired texture, fold this through the cheesecake. 9. Remove trays from fridge and fill with cheesecake mixture. Place trays back in the fridge to set for minimum 4hrs. (I like to put my cheesecake trays into the freezer until just set, this makes it much easier to pop out of the silicone moulds) 10. Once set remove from moulds and store in an airtight container in the fridge or freezer (less time). 11. Before serving top with berry compote. 12. Place all ingredients into a medium sized pot over a medium heat. Allow sauce to come to the boil and stir to start to breakdown some of the berries. Cook sauce for 5-10mins. 13. Another delicious way to eat #asparagus is to wash and cut off the bottoms, then drizzle in avocado oil, sprinkle with kosher salt and cracked black pepper, then wrap two at a time with a slab of #bacon. I sprinkle the bacon w/ spicy slap because I like the extra kick. I threw these on the @traegergrills at 450 degrees for 20-25 min, but next time I’ll probably put some foil underneath them because I think the bacon grease might have contributed to my flame out. 🥴 During the last 5 min, brush the bacon and asparagus w/ this #lowcarb #bbqsauce to keep it #keto.
