🤩 Thyme Infused Hasselbacks Potatoes 📷 by @healthylivingjames 🌿🌿 These are a perfect side dish to try this Christmas😍⠀⠀ .⠀⠀ Ingredients:⠀⠀ 1.3 kg maris piper potatoes⠀⠀ Handful fresh thyme⠀⠀ 1 garlic clove crushed⠀⠀ 3 tbsp olive oil⠀⠀ Salt & pepper⠀⠀ .⠀⠀ Instructions:⠀⠀ 1. Pre heat your oven at 200C with your oven dish inside⠀⠀ 2. To a pestle and mortar add the fresh thyme (pull the leaves away from the stalks) crushed garlic clove, 3 tbsp olive oil, pinch of salt and pepper and mix⠀⠀ 3. Slice downwards on the potatoes, I use chopsticks or wooden spoons laid down this helps create and even depth and stops you slicing all the way through the potato⠀⠀ 4. Place the potatoes in the oven dish, then evenly spread the thyme oil over, making sure it gets deep inside the potatoes. Season with a pinch of salt and pepper and place in the oven for 45 minutes at 200C⠀⠀ 5. Still the best day ever!✨✨ . You might be sweatin’ for the wedding as we speak.☝🏼 . I tried crash dieting(eating crackers&frozen dinners)to lose the weight right before our big day. I was down 10 lbs and felt “okay” with my body. . My husband had to run to the store while I was getting ready and get me an ACE bandage and my mom had to wrap my chest down flat in order to fit into my dress. . I wore two sets of spanks that day and was miserably uncomfortable. I had my dress altered because we ordered a SIZE 24. I remember my mom being upset because they charge an extra $200 to size up, then I had to pay even more to get it altered to not fit.😔 . All I could think about was my back fat and not having the perfect back to wear my DREAM dress. It is humbling to be able to put my dress on today and see it not bulging at the seams. . 3 months/90 days/quarter of a year after having my ✌🏼child and being KETO and Im sad to admit that on the left I wasnt even at my biggest(I deleted those photos) but I AM proud of my results thus far! 💯🙌🏼🤜🏻 ————————————————————— The girl on the left made poor food choices and allowed carbs and sugar to demolish the body she once before worked so hard for. She never worked out and she easily ate 2,000 calories a day. Slurpees, pasta, hot Cheetos and score bars were her favorite! 🍝🍦🍪🍫🍟 ————————————————————— Fast forward to today and Im 3 months out from my SECOND child. I am 7️⃣0️⃣lbs ⬇️ since Jan 1st! My body feels fantastic and my energy level is through the roof! Keto has changed my life!!! Brussel Sprouts with Garlic, Bacon, and Chicken. Filling, no fancy ingredients, and so good! Two handfuls of Brussel Sprouts Clove of Garlic 6 Strips of Bacon 1.5 Cups Rotisserie/Cooked Chicken Salt/Pepper/Red Pepper Flakes/Garlic Powder Cook bacon in pan while shredding chicken on the side. When the bacon is done, put aside to cool and use the bacon grease to cook garlic at lower temp. After the garlic is soft, bring med/high heat and add brussel sprouts and spices. Mix well and cover pan (mixing occasionally) until brussel sprouts are soft but have a crunch. You may have to add oil here if it all gets absorbed. Cut up bacon and mix in along with chicken without a lid until brussel sprouts are browned. Lid can come off earlier in the process too. Every weight loss journey is different. My first WLJ , I lost 60 pounds in 9 weeks. My second WLJ, it took me almost 2 years to lose the same amount of weight. • This second time around was definitely much more difficult for me. I remember thinking to myself, “Shit. I know I lost the weight once but I don’t think I’m going to be able to do it this time around.” I legitimately felt hopeless BUT I just kept trying, kept going when I failed, and kept telling myself to work! • Some women have no trouble losing their baby weight and that is amazing! But there are a lot of women who gain a significant amount of weight and never ever lose it. “Baby weight” is still weight and for a lot of us, it never falls off. • My first WLJ I started at 260 pounds and met my final goal weight of 130. This WLJ I started at 220 pounds and am currently 150. I am not done yet and plan on losing another 15-20! • No matter where you’re at in your journey, just know you are capable. Whether that means losing weight, toning up, building muscle, prepping for a show, reaching non scale victories, cutting out bad habits, or even just surviving day one.... you’re capable. And it feels like you’ll never get there but then one day you wake up and you’ve completely changed your life! Cleaning out the deep freezer/fridge meal. . . Lamb chops Parmesan crusted creamed spinach Lonely romaine with Caesar dressing. . . Kid approved, can’t ask for much else ☺️ . . . Edited to add: Creamed spinach recipe: Frozen box of spinach ~tablespoon butter ~3T cream cheese Onion powder Garlic powder Salt Pepper Heavy cream (I only had light cream and it worked fine and tasted great 👍🏻). Defrost and drain the spinach, toss into a pan with butter, add seasoning, add cream, don’t let it boil, add cream cheese, break it up, mix it up, stir it up. Pour into a baking dish, top with Parmesan cheese and broil for 3-5 minutes. Nothing fancy about this at all. Would I have loved to use fresh spinach and real onions/garlic, sure! Losing 100lbs has completely changed my life. I can't believe I used to wear size UK 22 jeans and even then they were tight. Now I'm rocking somewhere between a UK 12 & 14 jeans. Asparagus Stuffed Chicken Breast!⁠ -⁠ Ingredients 🍱:⠀⁠ 4 Skinless boneless chicken breasts about 1 1/2 lb.⠀⁠ 1 Tsp Italian seasoning mix⠀⁠ 1 Tsp Garlic Powder⠀⁠ 1 Tsp Smoked Paprika⠀⁠ Sea salt and pepper⠀⁠ 12 Asparagus stalks end trimmed⠀⁠ 1 oz Sun-dried Tomatoes chopped⠀⁠ 4 slices Mozzarella Cheese⠀⁠ 1 Tbsp Olive Oil⠀⁠ -⠀⁠ DIRECTIONS:⠀⁠ Preheat your oven to 400 F.⠀⁠ Place the chicken on a clean chopping board and sprinkle with Italian seasoning, garlic powder, paprika, salt, and pepper.⠀⁠ Start cutting each one lengthwise to create the pockets. Be careful not to cut all the way through.⠀⁠ Add 3 sprigs of asparagus and a couple of pieces of sun-dried tomatoes to a mozzarella slice, then roll it to hold them inside. Stuff the chicken breasts with it.⠀⁠ Close the pocket with a toothpick. Heat oil in a large and cast-iron skillet over medium-high heat.⠀⁠ Add in the chicken and sear it until nicely golden brown, about 3-5 minutes per side.⠀⁠ Bake the chicken for 15-20 minutes, or until it is cooked through and no longer pink in the inside. Broccoli + Mushroom Beef Stir-fry 🌱 by @cleanfoodcrush --- 📝 Ingredients: 2 Tbsps avocado oil, or olive oil divided 1 pound flank steak, sliced into thin pieces 1 large head of broccoli, broken into smaller florets 3 fresh garlic cloves, minced or pressed 1.5 lbs. button mushrooms, cut into quarters 2-3 green onions, sliced 1 Tbsp sesame seeds Stir fry sauce: 1/4 cup coconut aminos, Bragg's liquid aminos, OR low sodium soy sauce 2 Tbsps fresh squeezed lemon juice 1 Tbsp grated fresh ginger 1 Tbsp sesame oil --- Instructions: Heat HALF of a Tablespoon of oil in a large skillet or wok over high heat. Add broccoli and stir fry for 1-2 minutes, then reduce the heat, and add in 2-3 Tablespoons of water. Cover the skillet/wok, cooking for about 1-2 minutes more, or until your broccoli is crisp tender and bright green. Set aside on a plate. Meanwhile, in a small bowl whisk all stir fry sauce ingredients and set aside. Heat 1 tbsp oil in the skillet and add in the steak. Stir-fry for 2-3 minutes until cooked to your liking, then set aside. Add in the remaining oil, garlic and mushrooms. Stir fry for 2-4 minutes. Return steak and broccoli to the skillet/wok and pour the stir fry sauce on top. Cook for additional 2 minutes, gently stirring into the pan to get everything nicely coated with your sauce. Sprinkle with green onions and sesame seeds and enjoy! .

Busting out of a US 44L (UK 44HH) to a US 32H/I⠀.⠀I present you with why I argue (and get a bit upset) whenever I see the frequent comment “You’re so lucky you kept your boobs! I’m so jealous!” Ummmm no no, honey! I sure didn’t keep them, and I promise that you would not be jealous if you knew how they looked without a bra!⠀⠀PSA: I STRONGLY advise against saying to someone how “lucky” they are for X, Y, or Z in relation to their body after weight loss because:⠀1️⃣ You never truly know from just seeing a picture, and⠀2️⃣ you’re most likely not comparing apples to apples. It’s all about perspective! ⠀⠀Starting out as an overflowing L cup, of course my chest is still going to be big after weight loss compared to someone who started as a C or DD. That doesn’t mean I didn’t lose a TON of weight there or that they look good or normal still when they’re not covered by clothes. In fact, I’ve lost most of the volume in them and I swear they’re mostly loose skin at this point. They are hands down my biggest insecurity!⠀.⠀With all that being said, I would NEVER trade the good health that I’ve gained through this process to get my “good boobs” back. Just like the rest of the loose skin all over my body, it’s trivial compared to being 28 years old and in constant physical pain from carrying over 350lbs around on my 5’1” frame.
