Real talk, my nutrition was whack yesterday. ⠀ Why? Because even keto treats and snackies can and WILL put you over on your total macros for the day if you aren’t careful. ⠀ I ate too many pieces of the walnut crunch plus a full size Quest Pizza 😉 ⠀ I will not fret or starve or be mad at myself. 3 tbsp butter Veggies of your choice. I used can of mixed veggies, cauliflower, broccoli and brussels (only cuz they needed to be used) 1½ pounds boneless, skinless chicken thighs, chopped into ¼-inch pieces Salt and pepper 4 ounces cream cheese ¾ cup chicken bone broth, homemade or store-bought Biscuits 4 large egg whites 1 cup blanched almond flour 1 teaspoon baking powder ¼ teaspoon fine sea salt 3 tablespoons cut into pieces. Add the chicken to the skillet and sauté until it is cooked through.Add the cream cheese to the skillet and the veggies and combine well until no lumps are present. Slowly whisk in the broth. Simmer until thickened and make the biscuits for the topping. To make the biscuits, place the egg whites in a mixing bowl or the bowl of a stand mixer and whip until firm and stiff. Slowly add the almond flour, baking powder, and salt, then cut in the butter. (If the butter must be cold.) Gently fold the flour mixture into the egg whites. Use a large spoon or ice cream scooper to scoop out and form the dough into biscuits, making sure the butter stays in separate clumps and u dont just have a whole scoop of butter. Place the biscuits on top of the chicken and veggies in a baking dish. Perfect caulimash everytime! I dont make this delicious dish often because my family is not a cauliflower fan. (I'm trying to convert them!) Do u know how hard it is to make cauliflower dishes just for one person? Lol. I always cook enough to feed an army and it's hard for me to cook 1 serving. What's great about this dish is the longer it sits the better!! 1 head cauliflower boiled in salty water until very tender. (If u smash it is is soft). In a blender (or food processor is better) add 2 oz cream cheese, 1/4 cup sour cream, 1/4 cup egg white protien powder (u can use regular egg whites just be careful the cauliflower isnt so hot u get scrambled eggs), 1 tsp minced garlic, 2 tbsp butter, 2 tbsp half and half (or hwc) drained cauliflower and get all the water squeezed out with a kitchen towel. Add the cauliflower to the blender. Mix well until creamy! Add salt, pepper, garlic powder, onion powder to taste. I topped it with green onions, more butter, bacon pieces and cheese!! OK! The wait is over! Here is the new recipe for the protein bread\buns I made yesterday. 1 cup plus 2 tbsp 105° water (yes measure the temp) 5 tsp yeast (this is my best results I keep it this way I think this is 1 tbsp plus 2tsp 🤷) 1tsp honey or sugar Add these ingredients into the bread maker (or in a mixing bowl if doing it by hand) let sit for 5-10 minutes. It should look foamy. It should not fall to the bottom. 🍞🍞 Then add 1/3 cup vital wheat gluten 1/4 cup oat fiber 1 3/4 wheat protein isolate 5000 2 tbsp sunflower lecithin powder 2 tbsp golden flax meal 2 tbsp olive oil 5 squirts liquid stevia 1 tsp salt 2 large eggs 5 drops @oooflavors acetyl pyrazine flavor (optional). It honestly doesn't matter what order after the water and yeast mixer has set. Turn bread maker to dough setting and let it knead/mix and rise until it hits 50 seconds. You might have to help it at first and scrape the sides of the pan until it is fully formed into a dough. (If doing it by hand or stand mixer, mix and knead for 30 minutes. Then let rise for 30min-hour.) Take it out of BM and knead for a few minutes. Then shape into buns. Place on a parchment lined pan. Coat with an egg wash and let rise for another 30min-hour. (Longer the better) then bake at 250⁰-260⁰ for 25-30 minutes. Until the tops are nice and golden brown.(oven temp may vary. If I go any higher on mine my tops brown too quickly) let cool completely and enjoy!! If making this into a loaf u can let the dough setting go completely thru and then switch to bake setting. (If doing it by hand shape into loaf and let it rise in a loaf pan. Cooking time may vary since it's a whole loaf and not buns. I haven't tried that yet. Too hot it will kill the yeast) 1 tsp honey (or sugar will work) 5 tsp active dry yeast Add these ingredients into the bread maker (or in a mixing bowl if doing it by hand) let sit for 5-10 minutes. It should not fall to the bottom. 🍞🍞🍞🍞 Then add 1/3 cup oat fiber 2/3 cup vital wheat gluten 1/2 cup lupin flour 1 cup wheat protien isolate 5000 (not sure if the 5000 really matters 🤷‍♀️) 1 tsp sunflower lecithin 1 tsp white vinegar 1 tsp salt 2 tbsp light olive oil or melted butter 2 large eggs 5 squirts liquid stevia (optional) 5 drops @oooflavors acetyl pyrazine flavor (optional) Turn bread maker to dough setting and let it knead/mix and rise until it hits 50 seconds. Keto fried chicken. I used a wet tempera batter for the chicken. Fried it in lard. Marinated 6 chicken thighs in pickle juice for 6 hours. Batter recipe: 2/3 cup almond flour 1/2 lupin flour 1 tsp garlic powder 1 tsp smoked paprika 1 tsp onion powder 1 tsp salt & pepper 2 tsp baking powder 2 large eggs About 3/4 cup cold seltzer water (or beer) Let batter sit for 10 minutes after all ingredients are added and mixed thoroughly. Add chicken thighs 1 at a time and fry in the lard. Cook until chicken is 190⁰ . Low carb chicken verde enchiladas and cilantro lime caulirice. Step by steps in photos. Serves 2 Ingredients: 1 lb chicken 1 I used 7 oz for whole recipe jar guacamole salsa 1/2 (4oz) small bag 6 queso tip mexicano shredded cheese (any kind will work too) 2 tbsp knors chicken bouillon 6 oz cream cheese 4 oz queso fresco Egg thin cauliflower wraps (found at walmart in egg section. Zero carbs!) Avocado (optional) Cilantro lime caulirice: 5 oz Caulirice 1 tbsp olive oil 1 tbsp chopped cilantro 1/4 small white onion chopped 1 tbsp lime juice 1 tbsp chicken bouillon Add oil. Saute onions until translucent. Add all other ingredients to the pan and fry up until no liquid is left Instructions: Pressure cook chicken tenders for 10min. (breast and thighs will work just fine) Remove and drain juice. Add cream cheese, half guacamole salsa, 1 tbsp chicken bouillon & queso fresco. Mix with a hand mixer to shred chicken. Be careful with the egg thin wraps they are very thin but hold up great! Place it on counter and add chicken mixture to the middle like in the picture. Add cheese and roll. Spread some guacamole salsa on the bottom of the pan. (I lined mine with parchment to prevent sticking) keep rolling and lining up the enchiladas. Add some of the chicken mixture on top of rolled enchiladas. Add remaining guacamole salsa and then cheese to the top. Bake at 350⁰ uncovered for 30 minutes. Take out of oven and let it sit for 10 minutes before cutting into it. This will help it stay together. Lamb burger patties with baked italian tomatoes Lamb burgers I added salt& pepper. And a little bit of the pesto sauce from lastnight into the meat. Mixed and formed burger patties. Cooked in pan until desired temp. Cut tomatoes into thick slices. Drizzle olive oil and sprinkle salt and Italian seasoning on top. Add crushed porkrinds and parm to the tops. Spray with avocado oil. Broil for about 5-8 minutes on 350⁰ or until nice a crispy. Peanut butter no bake brownies! Taste like fudge to me. Super easy! I used @fooddreamer recipe. I used regular butter instead of almond butter and I added peanut butter into the layers. Delish 1/4 cup coconut oil 1/4 cup butter 1/2 tsp vanilla extract 6 tbsp powdered Swerve Sweetener 1/4 cup cocoa powder 1/4 tsp salt 3 to 5 tbsp coconut flour 2 ounces sugar-free dark chocolate chopped Line a 9×5 inch loaf pan with parchment or waxed paper. In a bowl melt the coconut oil and almond butter together, whisking until smooth in microwave for 45 seconds Whisk in the vanilla extract. whisk in the powdered sweetener, cocoa powder, and salt. The mixture will thicken up quite a bit. Using a rubber spatula, work in the coconut flour a tablespoon or two at a time, until the mixture resembles thick cookie dough. I had to add about a tbsp more coconut flour to get a better consistency (It may be very greasy feeling… don't worry, this will reabsorb as it chills). Press into the prepared baking pan as evenly as possible and chill until firm, about one hour. Add peanut butter to the top of this. (Optional) In another bowl melt the chopped chocolate until smooth. Use an offset spatula to spread over the chilled mixture. Homemade Queso Fresco 😍😍😍😍😍 Only 3 Ingredients needed 🥛🥛🥛🧂🧂🧂👌👌👌 1 gallon whole milk 1 cup distilled vinegar 2-3 tablespoons salt (I used @redmansrealsalt) Pour your gallon of milk in large pot - put on stove on high heat (15-20 mins) stirring every so often so it wont stick to the bottom. It a little sticks its ok. You will not bring to a BOIL just to the point where it starts to foam and it’s about to boil Once you’ve reached that point turn the heat off and add some of the vinegar ( you will add it in 3 parts ) At this point do not stop stirring!! Stir for 1 minute. Add some more of the vinegar after 1 minute and continue stirring. Now add the rest of the vinegar and stir for 2 minutes you will see the cheese part separate. Add half of the salt into the mixture now. Take pan off the stove and cover with a lid and let it sit for an hour. Now it’s time to separate the cheese thru either a cheese cloth or (i used a new kitchen towel) add collider to the sink. Place towel or cheese cloth inside the collider. Drop the milk/cheese liquid mixture into the collider. Press the curds with a rubber spatula until most of the liquid is out. Pick up the towel and squeeze as much of the liquid out as possible. Now add your curds to a mixing bowl and add the rest of your salt. Taste as you go to see if more salt is needed. Now get a bowl or tupperware to firm your cheese. Press down firmly to pack it in. Cover and let set in fridge for at least 4-5 hours. When ready to unmold run your knife around the edges of bowl and flip. Cauliflower Chicken Fried Rice. This was pretty simple. 2 lbs of chicken marinated for a few hours in 2 Tbsp of soy sauce. I browned that up, set it aside and put the following into a pan to heat up before adding the chicken back in. One, 1lb bag of riced cauliflower (microwaved and cooked throughly), 1/2 bag frozen peas and carrots (also microwaved and cooked throughly) and soy sauce, sesame oil, rice vinegar, minced garlic, ground ginger, green onions and salt to taste. LAZAÑA DE REPOLLO (col rizada) Siempre uso un repollo verde y grande, para que en la presentación del plato se distinga el repollo de las capas de relleno de quesos y salsa, pero esta ven no encontré, así que usé repollo morado y queda igual de rico! 😋 - 1 repollo grande - 1/2 k de Carne molida o picada - 2 cebollas moradas - 3 tomates cortados en 8, con cáscara - 1/2 taza salsa de tomates natural (O una baja en carbos) - 170 gr. queso philadelphia - 1 taza crema para batir - 170 grs de queso rallado mozzarella, parmesano u otro, yo rallo del que tenga - 3 dientes de Ajo - sal, pimienta, orégano y otros a gusto - 3 cucharadas Aceite de oliva Separar las hojas del repollo con cuidado sin que se rompan, y ponerlas en una olla con agua hirviendo y sal por 5 min. aprox. Preparar la salsa friendo en aceite de oliva la carne y cebolla, agregar ajo, sal y condimentos, luego los tomates y la salsa de tomates natural y cocinar hasta que tome consistencia de salsa. En una fuente enmantequillada poner una base de salsa de carne y cubrir con una capa de hojas de repollo, luego sobre esta capa de repollo poner la salsa de queso Philadelphia mezclada con la crema y un poco de pimienta y luego otra capa de repollo sobre la que se pone carne, y así seguir alternando sucesivamente, con capas de queso rallado encima, a elección, pero para finalizar y darle ese toque gratinado, siempre terminar la última capa con la salsa de queso crema y queso rallado encima. Recipe 1 can quartered artichokes drained 160 grams spinach (I used fresh but u can use frozen) 8 oz room temp cream cheese 1/4 cup mayo 1 tsp garlic powder 1 tsp salt 1/2 tsp pepper 1/4 cup shredded mild cheddar 🦕🦕🦕🦕🦕🦕🦕🦕🦕🦕🦕🦕🦕 Add to food processor and pulse all ingredients. Keto tempura battered snapper and shrimp!! 🍤🍤🍤🐟🐟 Sooooo delish! Batter: 1 lb shrimp deveined and shelled 2 filets of snapper (cut into 6 pieces or smaller would be better. The batter came off of the bigger ones) 1/2 teaspoon of Salt 2/3 cup of almond flour 1/2 cup lupin flour 2 teaspoons of baking powder 2 large Eggs About 1/2- 3/4 cup of seltzer water (or beer) chilled (add slowly it shouldn't be too thin of a batter. When you hold up the shrimp u should have excess but itthe batter shouldn't all fall off) 🍤🍤🐟🐟 Mix batter. Add shrimp and fish. Fully coat them. I let chill in fridge for 1 hour. Helps the batter thicken up a bit. Fry in avocado oil at 375⁰ for about 3-5 minutes or until golden brown. How many people made ham yesterday for Easter. I have a huge ziplock bag full of leftovers. Sooo... 🤤🤤 I got out the cookbook and made @mariaemmerich chicken cordon bleu lasagna. Except I used the chopped ham. Mixed it in with the chicken and sauce instead of the layers. I used the palmini @naturalheavenusa lasagna noodles instead of zucchini. Keto Taco Cups INGREDIENTS 2 c. shredded cheddar 1 tbsp. extra-virgin olive oil 1 small onion, chopped 3 cloves garlic, minced 1 lb. ground beef 1 tsp. chili powder 1/2 tsp. ground cumin 1/2 tsp. paprika Kosher salt Freshly ground black pepper Sour cream, for serving Diced avocado, for serving Freshly chopped cilantro, for serving Chopped tomatoes, for serving DIRECTIONS Preheat oven to 375° and line a large baking sheet with parchment paper. Spoon about 2 tablespoons cheddar a few inches apart. Bake until bubbly and edges are beginning to turn golden, about 6 minutes. Let cool on baking sheet for a minute. Meanwhile, grease bottom of a muffin tin with cooking spray, then carefully pick up melted cheese slices and place on bottom of muffin tin. Fit with another inverted muffin tin and let cool 10 minutes. If you don't have a second muffin tin, use your hands to help mold the cheese around the inverted tin. In a large skillet over medium heat, heat oil. Add onion and cook, stirring occasionally, until softened, about 5 minutes. Stir in garlic, then add ground beef, breaking up meat with a wooden spoon. Shredded lettuce Pico de gallo, for serving Hot sauce, for serving Lime wedges, for serving DIRECTIONS Preheat oven to 375° and spray a large baking dish with cooking spray. In a large skillet over medium heat, heat about 1 tablespoon olive oil. Add onion and cook until the onion is tender, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute more. Add ground beef and cook until no longer pink, about 5 minutes. Drain fat. Add chili powder, ground cumin, and paprika to beef mixture, then season with salt and pepper. These biscuits are soooo delicious! 4 egg whites beat until stiff. Gradually add 1 tsp baking powder, 1 cup almond flour, 1 tsp salt, 3 tbsp cold cubed butter. Gently fold into egg whites. Scoop onto parchment paper bake at 350⁰ for about 20 min. I also made "red lobster" garlic @oooflavors and cheddar biscuits. Just added 20 drops garlic flavor and a hand full of cheese. Folded it in and bam! Garlicky and cheesy biscuits! The gravy is simple. 1 lbs sausage browned and taken out of pan. Set aside to make gravy. 2 cups half and half and 2 cups water. I added a little liquid to a mini blender and add 1/2 tsp xanthan gum. Blend up. Add it back to gravy. Let it thicken on medium heat. Add sausage back into gravy. Scoop right onto the biscuits! I got inspired by @mariaemmerich Keto comfort food cookbook tonight. I did a take on the chicken and gravy cobbler. I made mine more like a pot pie with a biscuit top. Omg the biscuits for this recipe are soooo freakin delicious!! And easy!! I'm gonna put this in our menu for other nights ahead. Might just have the biscuits by themselves. Keto Meatballs INGREDIENTS FOR THE MEATBALLS 1 lb. ground beef 1 clove garlic, minced 1/2 c. shredded mozzarella 1/4 c. freshly grated Parmesan, plus more for serving 2 tbsp. freshly chopped parsley 1 large egg, beaten 1 tsp. kosher salt 1/2 tsp. freshly ground black pepper 2 tbsp. extra-virgin olive oil FOR THE SAUCE 1 medium onion, chopped 2 cloves garlic, minced 1 (28-oz.) can crushed tomatoes 1 tsp. dried oregano Kosher salt Freshly ground black pepper DIRECTIONS In a large bowl combine beef, garlic, mozzarella, Parmesan, parsley, egg, salt, and pepper. Form into 16 meatballs. In a large skillet over medium heat, heat oil. Add meatballs and cook, turning occasionally, until golden on all sides, about 10 minutes. Remove from skillet and place on a paper towel-lined plate. To the same skillet, add onion and cook until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute more. Add tomatoes and oregano and season with salt and pepper. Add meatballs back to skillet, cover and simmer until sauce has thickened, 15 minutes.
