Watalappam pudding with cashew nuts in Sri Lanka style 🍮Watalappam was first introduced by Malays. This pudding is a truly popular dessert and an extraordinary example of Sri Lankan culinary art. 🍮Originally this pudding is made with “jaggery”. Jaggery is a crystalline sugar still enveloped in the cooked juice from which it is formed. Its flavor ranges from mild caramel to strong molasses. Keto adaptation could use xylit or other granulated sweetener. INGREDIENTS •5 large eggs •150ml coconut milk •125g granulated sweetener( keep in mind that all sweeteners have different levels of sweet) •1 tsp ground cardamon •1/2 ground cinnamon •4 tbls cashew nuts PREPARATION •Separate the egg whites from the egg yolks. In a bowl combine the egg yolks, coconut milk, sweetener, cardamon and cinnamon. •Heat the oven to 150 Celsius(300F) and place roasting pan or another large dish filled with water in the oven. This will serve as a water bath in which to cook the watalappam. •Lightly beat the egg whites until slightly foamy, then gently fold them into the coconut mixture with a spatula. •Pour the mixture into an ovenproof dish or portion-sized small dishes and bake in the water bath for about 15 minutes. Then sprinkle with cashew nuts and bake for another 15minutes. •Serve warm or cold. (250g) cream cheese⁠⠀ 1/2 cup (1 dl) heavy cream⁠⠀ 2 tbsp erythritol⁠⠀ 1 tbsp lemon juice⁠⠀ TOPPING:⁠⠀ Lemon slices⁠⠀ Lemon zest⁠⠀ Fresh lemon balm⁠⠀ ⁠⠀ 👨🏽‍🍳 INSTRUCTIONS: ⁠⠀ 1. Set oven on 300°F/150°C⁠⠀ 2. Mix almond flour, baking soda, lemon zest, chopped lemon balm and salt in a bowl.⁠⠀ 3. Mix eggs and erythritol with an electrical mixer in a separate bowl until they become white and fluffy. I do 12 minutes. This is the most important step because the fluffier eggs the more moist the bread gets.⁠⠀ 4. Add lemon juice to the eggs and mix for another minute.⁠⠀ 5. Fold in the dry ingredients in the eggs. Very important to fold and not mix because you want to keep as much air as possible in the eggs.⁠⠀ 6. Pour the mix in a bread pan covered in a baking sheet. Bake for 35-40 min.⁠⠀ 7. Put in the fridge or freezer to let it cool before adding frosting.⁠⠀ 8. Add the ingredients for the frosting in a bowl. Mix with an electrical mixer until it becomes a thick cream. Put in the fridge while waiting for the cake to cool. Then cover the top of the cake with a thick layer of frosting and decorate with the toppings. Store in the fridge until it’s time to serve!⁠⠀ ⁠⠀ Net Carbs: 2.5g Per Serve⁠⠀

I was craving pizza badly but didnt want to have a flour based pizza so I made no flour cauliflower keto pizza with tomato chicken schnitzel salad! Cauliflower pizza was so amazing and It tasted x100 times better than normal flour dough based pizza. Recipe was inspired by @asimplepalate 's recipe which was so easy and simple. It's Monday today, isn't it ? I decided to recreate my favorite cake, in a keto style; Some weeks ago I discovered the marvelous Chayote squash that you can flavor as you want, last time I made some apple, this time I transformed it in a pear. So here it is, enjoy the Bourdaloue mock pear and chocolate pie! Ingredients : For the ketogenic shortcrust pastry: 100gr almond powder 60gr of coconut flour 100gr monk fruit 100gr softened butter 1 egg 15 gr unsweetened cocoa powder For the cream 100 g softened butter 100g monk fruit 100 g almond powder 25 g unsweetened cocoa powder 100 g of eggs weighed without the shell (2 eggs and 1 white) For the mock pears 2 chayotes a few drops of pear aroma (oooflavors) 1 tbsp of lemon juice 1.5 tsp cremor tartar ¼ cup monk fruit. 1 cup of water 30gr of unsalted butter 1. Peel and cut the chayotes. In a big pot, blend together everything but the chayotes. Add the Chayotes and let boil until the liquid is gone. Set aside 2. Put all the ingredients of the dough in a blender and blend for 30 seconds. Make a small ball and flatten it. Wrap it in a plastic bag and put in the fridge for 30 minutes 3. Prepare the cream: put all the ingredients in a blender and mix for 30 seconds. Set aside 4. Roll out the sweet chocolate dough between two sheets of parchment paper, 3mm thick. Put it in a 22cm pie dish and set aside 30 minutes in the refrigerator. 5. Preheat the oven to 170C, fan heat 6. Pour the chocolate almond cream on the bottom of the pie and arrange the slices of chayote/pears, tilting them slightly towards the edge of the circle. 7. Fried Cauliflower rice with fish sauce in Mauritius style 🌾Originally this recipe uses rice , but making it keto adapted it was swapped with cauliflower. INGREDIENTS •4 tbls ghee •4 tbls chopped onion •2 tbls chopped garlic •2 tsp chopped red chili •400g grated cauliflower •100g sliced cherry tomatoes •1 tsp fresh thyme leaves •Fish sauce to taste •Soy sauce to taste •Salt&Pepper •4 tbls sliced spring onion PREPARATION •Heat the ghee in a big pan or wok. Add onion and garlic, roast gently.
