Plan to swing by Bangsar on Fri to get some keto/low carb goodies but not able to do so as it was already late night by the time we reached KL. Mini pancakes for breakfast today!! I used @low.carb.love recipe for coconut flour pancakes and modified it slightly by not adding baking powder and using different extracts. In a blender, put: 4oz cream cheese, softened 4 eggs 4 tbsp coconut flour Dash of cinnamon Vanilla extract Almond extract Monkfruit extract Blend everything up and can fry immediately. I used a tbsp ladle to make them small pancakes. This recipee makes about 14 small pancakes and I'll add macros Tuesday when I'm back at work. I topped the pancakes with about 1.5tbsp @choczero chocolate syrup, a hearty sprinkling of their chocolate chips as well and a cut up strawberry. 😋 This tasted amazing and no one else in my family was allowed to touch it 😁. I'm feeling pretty sick today so just wanted a treat for breakfast. I'm the near future I'll try almond flour pancakes and add hazelnut extract.
