Put a little spice in your life with RED LENTIL DAL (plus tips to introduce kids to spicy foods) . . This recipe is a winner for the following reasons: 🌶 Cheap cheap cheap! $0.89 per serving 🌶 Meatless! All you folks trying to eat meat more sparingly, this one's for you 🌶 So filling! Fiber and protein packed into those lentils and extra protein in the icelandic yogurt! 🌶 Quick! 25 min on stove or 10 min in the IP 🌶 Kid friendly! Yep, even spicy food can be kid friendly- in fact, exposure to many different cuisines and spices at a young age will make them more adventurous eaters! . . How to make "spicy" or "strong" foods more palatable for kids: 🥑add a creamy fat such as sour cream, coconut milk, avocado, or my personal favorite: high fat (2% and up) plain greek yogurt or skyr 🥑serve with mild starches like rice, corn, bread, or potatoes to help tone down the spice 🥑serve small portions alongside foods that your kid already knows and likes 🥑season the dish with half of the spices the recipe calls for then place spices on the table so adults or older kids can add an extra dose to their own serving . . RED LENTIL DAL Serves: 3 1/2 cup red onion, chopped 2 garlic cloves, minced 1 Tbsp coconut oil 2/3 cup red lentils, rinsed 1 15oz can diced tomatoes 2 cups chicken broth 1 tsp ground coriander 1 tsp curry powder (or use 1/2 tsp each of ginger, turmeric, and cumin) Garlic salt and red pepper to taste Garnish with fresh parsley and 2-3 Tbsp Siggis 4% plain skyr Instructions: In a saucepan over medium heat, cook oil, onions, and garlic for 3-4 minutes. Add lentils, tomatoes, broth, and spices. Simmer for 15-18 minutes or until lentils are soft. Season with garlic salt and serve over rice. Garnish with siggis and parsley (and an extra hit of red pepper flakes if you like spice!) . . IP users: reduce stock to 1 1/2 cups and cook on high pressure for 7 min. ⚡️ENSALADA DE QUINOA, pomelo, palta, queso de cabra y tomate ⚡️ #micocinacolorinche 🙌🏼 nada más lindo que un plato lleno de color 🌈!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Parece complicado pero si tenés la quinoa lista ( #mealprep ) ya estás!! En 10 mins la tenés lista y disfrutando 😉⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍊cortá medio pomelo a vivo (en gajos pero aprovecho y tiro términos así todos aprendemos) y los ponés en una sartén a dorar vuelta y vuelta por 2/3 mins de cada lado. 🔪mientras cortá el resto de los ingredients - tomates cherry, palta, queso de cabra y tené cilantro o perejil a mano-. 🍶 Mezclá la vinagreta - 2 cdas el de aceite de oliva / jugó de medio limón / sal y pimienta y chorrito de reducción de aceto (a mi me copa la mezcla agridulce con el pomelo pero te lo dejo a tu criterio. 🥗Ahora armá la ensalada con todos los ingredientes, arriba el aderezo, sacá foto y sentí q SOS 🔝😎. Meal preppin’ Wednesday - The beginning of the week I make a list of all the meals for the week (breakfast, lunch and dinner). Then I’ll make a grocery list. Unlike my boyfriend I need a list when I go to the grocery store or I’ll just buy everything😂 - The day before I start my work week, I’ll make all my meals. The last thing I want to do after working 12 hours is trying to figure out what to take the next day for lunch. I’ll usually make a breakfast snack and my lunch🍴 - This week includes oatmeal and tuna salad. I’ll probably make a pb&j to take as a snack. I ALWAYS try to make sure I have chips or something crunchy for chip-thirty. And then a few other snacks like trail mix, dried edamame, fruit. Something to help me get through the day. Source: @vegan_official ********** VEGAN NACHO CHEESE 😻 foodwithfeeling 1 15 ounce can of white beans (used cannellini beans), drained and rinsed 2 cups of vegetable broth 1 large jalapeno, roughly chopped 1 teaspoon of garlic powder 1 teaspoon of cumin 1/3 cup of nutritional yeast 2 tablespoons of dijon mustard 2 heaping tablespoons of flour 1/2 cup of red bell pepper, chopped salt and pepper to taste (but it doesn’t need much!) To make it: 1) In a medium pot, stir together the beans, broth, jalapeno, and spices. Bring to a boil 2) Reduce heat to a simmer. Stir in the nutritional yeast, dijon. Whisk in the flour and continue to whisk until the sauce begins to thicken. Add the chopped chocolate and mix well. Put the mixture in a mold of 9x20cm approx. with parchment paper (butter paper) and bake for 20-25 minutes or until it is dry on the outside and just moist on the inside. I try not to eat before 10am, I work late, and if I eat too early, I end up eating WAY more than I really need in a day. So my first meal isn’t always breakfast-y, but it is always the biggest. I loaded this quesadilla with veggies (tomatoes, green peppers, mushrooms, roasted garlic, black olives, and onions), chopped up some @morningstarfarms buffalo wings, and just enough @daiyafoods cheddar shreds to hold it all together. 🥙 I finally did two things - made homemade falafel - and used my food processor!! It brought me so much joy to make my own falafel with love and care. They were sooo crispy on the outside and soft on the inside. It made me imagine me and my future family making them together for special occasions!! • I used @minimalistbaker recipe but used garbanzo bean flour and I used canned chickpeas instead of dried. If you do this, you’ll have to add a lot more GF flour to get the right consistency. • Do you have a fave falafel recipe?! I am so excited about this I want to try more 😍 at Atlanta, Georgia

If you only have time to prep ONE THING ahead of time, make it rice🍚 One of the cheapest, most versatile, + filling foods IMO… it’s an awesome thing to have on hand👅 My big batch of brown rice this week has been saving me in a pinch for both lunches + dinners. Added plus, it can make up the bulk of your meal + you only have to prep toppings, proteins, + sauces🙌🏼 Throw it into a stir fry, serve with beans + a protein for taco night, or throw over a salad for a little extra somethin ‘🕺🏾 Or when you’re really in the trenches of the week, keep it as simple as can be + serve it with roasted veggies (I’m obsessed with these oven-roasted garlic carrots) + this homemade SUGAR-FREE Teriyaki sauce✨ 〰️ HOW TO: (measurements will vary depending on how much you’re making) In a saucepan, bring 1:1 ratio of low-sodium soy sauce + @bragglivefoodproducts liquid aminos to a light boil. Turn down the heat to a simmer. Add in rice vinegar, a small amount of @misomaster miso paste, + @marionskitchenfood sweet chili sauce (or: Sriracha or Chili paste). Mix well. Add in a dash of garlic powder + sesame seeds. Meanwhile, in a small bowl mix corn starch with a small amount of water to form a paste. Add the paste to the saucepan + turn the heat off. Continuously stir until well combined. The sauce will begin to thicken. Add more corn starch or sauce, depending on desired thickness. Serve warm.

Don't make the mistake of limiting fruit! - As shown in my recent "Plant-based Serving Sizes Explained", we should be getting AT LEAST 4 servings of fruit a day. - Sugar is not the enemy. You're not going to gain weight from eating too much fruit because you're more likely to become full before you overeat. That's the beauty of fruit, and whole plants for that matter. - Did you know that consuming carbohydrates in their whole form is associated with improved blood sugar control? Whole, complex carbohydrates come with the fiber intact. Fiber regulates nutrient absorption and is satiating, so it fills us up. And these complex carbs also have micronutrients that protect against disease and cellular damage. 🙌 - Simple carbs (like the ones on the right) are easier to overeat because they aren't filling, thus leading to excess calories (weight gain) and spikes in the blood sugar (a risk for diabetes). Yes, complex carbs raise blood sugar (this is not a bad thing) but at a slower rate due to fiber regulating the absorption.👏 If you are making dietary changes and have diabetes, both type 1 and type 2, it is recommended to do so in partnership with your doctor as the dietary changes can impact very rapidly. I had the realization that every single day (ideally 3x a day) we have a choice on what/how/where to eat, and this choice not only impacts your personal life & health but also the life & health of the collective. One of the biggest ways YOU can make a positive difference through your daily choices is to reduce/eliminate the amount of meat you consume. Simple as that. I am no saint (aka vegan😆), there are still plenty of ways I can evolve and improve as a daily consumer of calories (local? fair trade? organic? healthy? environmental footprint? cost? All worthy considerations!). If you’re still reading this I challenge you to challenge yourself to reduce the amount of meat you consume - perhaps start with a simple #meatlessmonday (where I started) or eliminate red meat from your diet or only purchase animal products from sources you know & trust (local farmers, humane practices, etc).
